CHEDDAR-PARMESAN CRACKERS

Cheddar-Parmesan Crackers image

These Cheddar-Parmesan crackers are hard to believe they're homemade given how they're filled with all kinds of cheesy goodness along with some cayenne for a little pop of heat. They're completely irresistible. Consider yourself warned.

Provided by Laura Werlin

Categories     Appetizers

Time 2h40m

Number Of Ingredients 8

4 ounces cheddar cheese (coarsely grated)
2 ounces Parmesan cheese (finely grated)
3/4 cup flour
1/4 teaspoon dry mustard
1/4 teaspoon kosher salt
1/8 teaspoon cayenne pepper
4 tablespoons (2 oz) unsalted butter (softened and cut into small pieces)
2 tablespoons water (plus more if needed)

Steps:

  • In the bowl of a food processor, place all the ingredients except the butter and water. Pulse 5 times. Add the butter and pulse again until the butter pieces are the size of BB's. Add the water, 1 tablespoon at a time, and pulse just until the dough holds together. If the dough is still crumbly, add more water, 1 teaspoon at a time, until it reaches the right consistency.
  • Turn the dough out onto a large piece of wax or parchment paper. Roll the dough into a log 9 or 10 inches long and square off the ends. Wrap well and refrigerate for at least 2 hours and up to 2 days. (You can freeze the dough for up to 1 month. You may want to cut the log in half or in thirds prior to freezing if you think you'll want to defrost a small amount at a time.)
  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Cut the log into 1/4-inch-thick slices. Arrange the slices about 1 inch apart on a baking sheet. Bake for 8 to 10 minutes, or until the crackers are a light golden color. Turn the crackers and bake for 3 to 5 more minutes, until they are golden around the edges.
  • Cool the crackers on a wire rack. Serve at room temperature.

Jalapeno Cheddar Crackers image

Provided by Ina Garten

Time 1h40m

Yield 32 to 34 crackers

Number Of Ingredients 10

2 cups all-purpose flour
1 teaspoon kosher salt
1/8 teaspoon baking powder
14 tablespoons (1 3/4 sticks) cold unsalted butter, 1/2-inch-diced
5 ounces extra-sharp white Cheddar, grated
1 tablespoon minced seeded jalapeno pepper
1/4 teaspoon chipotle chili powder
3 tablespoons ice water
1 egg beaten with 1 tablespoon milk, for egg wash
Fleur de sel or sea salt

Steps:

  • Place the flour, kosher salt and baking powder in a food processor fitted with the steel blade and pulse to mix. Add the butter and pulse until the mixture resembles coarse meal. Add the Cheddar, jalapeno and chipotle chili powder and pulse again. With the food processor running, add the ice water all at once. Continue pulsing until the mixture begins to form a ball. Dump the dough onto a floured board and roll it into a 14-inch log. Wrap in plastic, and refrigerate for at least 1 hour.
  • When ready to bake, preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  • Cut the dough in 3/8-inch-thick slices. Place the crackers on the prepared sheet pan, brush with the egg wash and sprinkle with the fleur de sel. Bake for 12 to 15 minutes, until golden brown. Serve slightly warm or at room temperature.

PARMESAN CREAM CRACKERS

Parmesan Cream Crackers image

Crackers can be made with just flour and water (as in water crackers, or matzo), but like almost everything else, they're better with richer ingredients. These are typically made with butter, oil, and milk or cheese, or both, along with flavorings like seeds, herbs and spices. I like a simple, flakey, buttery cracker, often with cheese. This could stem from my childhood addiction to Cheez-Its. Once you get the hang of it, which will take exactly one try, play around. You might skip the cheese and add freshly chopped rosemary or thyme to the dough. Swapping pepper for salt as a topping makes a difference. Or top with minced garlic or onion, sesame or poppy seeds, or whatever is on your favorite commercial cracker. In every case, you are going to make it better.

Categories     easy, quick, appetizer

Time 20m

Yield About 4 servings

Number Of Ingredients 6

1 cup all-purpose flour, more as needed
1/2 teaspoon salt
1/2 cup finely grated fresh Parmesan cheese
4 tablespoons unsalted butter
1/4 cup cream or half-and-half, more as needed
Coarse salt, pepper, sesame or poppy seeds, minced garlic or whatever you like for sprinkling (optional)

Steps:

  • Heat oven to 400 degrees. Line a baking sheet with parchment paper or lightly dust with flour. Put flour, salt, cheese and butter in bowl of a food processor. Pulse until flour and butter are combined. Add about 1/4 cup cream or half-and-half and let machine run for a bit; continue to add liquid a teaspoon at a time, until mixture holds together but is not sticky.
  • Roll out dough on a lightly floured surface until 1/2-inch thick or even thinner, adding flour as needed. Transfer sheet of dough to prepared baking sheet (drape it over rolling pin to make it easier). Score lightly with a sharp knife, pizza cutter or a pastry wheel if you want to break crackers into squares or rectangles later on. Sprinkle with salt or other topping if you like.
  • Bake until lightly browned, about 10 minutes. Cool on a rack; serve warm or at room temperature or store in a tin for a few days.

CHEDDAR - PARMESAN CRACKERS

Cheddar - Parmesan Crackers image

A recipe by Laura Werlin, and found at Leite's Culinaria. These cheesy, buttery gems will likely become a mainstay in your repertoire. Not only are they crispy, rich, and well, addictive, they can be partially made up to a month in advance. That's because once the dough is made, it can be frozen and simply "cut to order" as you need it. Just be sure to freeze it in small portions so that you don't have to defrost it all at once. Although these crackers are great plain, you can draw on the age-old "apples and cheddar" theme by topping them with a dollop of Apple-Pear Butter.

PARMESAN CHEESE CRACKERS

Parmesan Cheese Crackers image

Categories     dessert

Time 40m

Yield 6 servings

Number Of Ingredients 5

8 tablespoons (1 stick) cool unsalted butter
3/4 cup plus 2 tablespoons all-purpose flour
1 cup freshly grated Parmesan, (grana is okay, but it should be good quality)
1/4 teaspoon freshly ground black pepper
6 fresh figs

Steps:

  • In a mixer fitted with a paddle attachment, cream the butter until smooth and fluffy. Add the flour, cheese, and pepper and mix at low speed until blended. Form the dough into a disk, wrap it in plastic wrap, and refrigerate at least 2 hours. (The recipe can be made up to this point and kept refrigerated up to 2 days in advance.) Remove the dough from the refrigerator about 30 minutes before rolling out.
  • On well-floured parchment paper, roll out the dough into a rough rectangle, a little less than 1/4-inch thick. The dough will be somewhat delicate and may crack in places, but you can just push the edges together with your fingers. Carefully transfer the dough to the cookie sheet and prick evenly all over with a fork. Cut with a pizza cutter or a knife into 1 1/2-inch squares, making a grid.
  • Bake in a preheated 375 degree F oven, just until the crackers turn golden, 15 to 20 minutes. As they come out of the oven, run your pizza cutter or knife again along the grid to separate the crackers (the edges will have baked together a little bit in the oven). Let cool on the pan, then gently separate the crackers with your hands. They will be slightly fragile. Cut the figs in half and serve with the crackers.

CHEDDAR CHEESE CRACKERS

Cheddar Cheese Crackers image

My son may not be convinced these can substitute for the ubiquitous orange crackers sold commercially, but I'll take the homemade version any time.

Provided by Martha Rose Shulman

Categories     easy, appetizer

Time 20m

Yield About five dozen crackers

Number Of Ingredients 9

1 cup whole-wheat or whole-wheat pastry flour
1/3 cup unbleached all-purpose flour (more as needed)
1/2 teaspoon salt
1 teaspoon sugar
2 tablespoons unsalted butter, cut into 1/4-inch pieces
1 cup tightly packed grated sharp Cheddar cheese (4 ounces)
1/4 cup tightly packed grated Parmesan (4 ounces)
2 tablespoons extra virgin olive oil
2 eggs

Steps:

  • Preheat the oven to 375 degrees. Line two baking sheets with parchment. Sift together the flours, salt and sugar, and place in the bowl of a food processor fitted with the steel blade. Add the butter, and pulse until the mixture is crumbly. Add the cheese, and pulse several times to distribute it evenly throughout the flour mixture. Turn on the food processor, and add the olive oil and eggs. Stop the machine when the dough comes together. It will be soft and somewhat sticky. If it seems very moist, add another tablespoon of flour and pulse until incorporated.
  • Lightly flour your hands and your work surface. Scrape out the dough and form two equal pieces. Shape into rounds, wrap in plastic and let rest for 15 minutes.
  • Roll out each piece of dough between pieces of lightly floured parchment. Cut into squares or rectangles, and place on the parchment-lined baking sheets. Bake 15 to 20 minutes, switching the pans after the first 10 minutes from front to back and top to bottom. They will foam in the oven because of the cheese, but that will subside and they will bake crisply. The crackers are done when they are lightly browned. Remove from the oven, and cool on racks. Store in an airtight container.

CHEF JOHN'S CHEESY CRACKERS

Chef John's Cheesy Crackers image

These crunchy, crispy crackers have a big, bold cheese flavor. They're vastly superior to anything you can get at the store. You can change up the cheeses and the spices. It's really a fun thing to play around with.

Time 1h20m

Yield 36

Number Of Ingredients 9

½ teaspoon vegetable oil
2 tablespoons unsalted butter at room temperature

⅓ cup lightly packed freshly shredded Parmesan cheese
½ teaspoon paprika
1 pinch cayenne pepper, or to taste
¼ teaspoon salt
½ cup all-purpose flour
1 tablespoon cold water, or as needed

  • Line a baking sheet with aluminum foil and lightly grease with vegetable oil.
  • Place butter into a mixing bowl; add Cheddar cheese, Parmesan cheese, paprika, cayenne pepper, and salt. Mix together with the back of a spatula until thoroughly combined.

  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll dough out on a floured work surface to about 1/8-inch thick. Use a pizza cutter to cut 1-inch wide strips from the dough. Cut strips crosswise into rectangles about 1 1/2-inches long. Use the back of a bamboo skewer to punch 5 small holes into each cracker. Arrange crackers onto prepared baking sheet.
  • Bake in the preheated oven until crackers are browned and crisp, about 15 minutes. Let stand about 3 minutes for crackers to cool and release from the foil. Let cool completely before serving.
