Homemade Strawberry Vinegar image

Sweet and sour, this easy strawberry vinegar makes a great summer salad dressing. -Mary Hise, Cocoa, Florida

4 cups halved fresh strawberries
4 cups cider vinegar
1 cup sugar

Steps:

  • In a large bowl, combine strawberries and vinegar. Cover and let stand for 1 hour. Transfer to a large saucepan. Stir in sugar. Bring to a boil, stirring occasionally. Reduce heat; cover and simmer 10 minutes. Remove from the heat; cool completely., Strain and discard pulp. Pour liquid into sterilized jars and cover. Store in a cool dark place.

⅓ cup fresh strawberries
1 ½ cups white vinegar

Steps:

  • Slice tops of strawberries off. Place strawberries in a colander and wash off any debris. Pat dry and slice.
  • Pour vinegar into a sealable jar. Add strawberries to the vinegar. Allow the fruit to infuse at room temperature for 2 days.
  • Transfer mixture to a sealable bottle. Strain strawberries from the vinegar if desired.

I first discovered homemade fruit-infused vinegars years ago and have been hooked every since! Strawberry is my favorite, however you can play around with different fruit combinations. Warming the vinegar draws out even more flavor from the fruit and speeds along the infusion process. Store in a cool, dark place for up to 3 months. Refrigeration is highly recommended and can extend the freshness and quality for up to 6 months.

1 ¼ cups rice vinegar
1 teaspoon white sugar
1 ½ cups chopped strawberries
1 pint jar

Steps:

  • Heat vinegar and sugar in a small saucepan to just below boiling. Stir until sugar is dissolved.
  • Place strawberries in a sterilized pint jar and lightly press with a muddler or the back of a spoon to release a bit of juice. Pour in vinegar and wipe the rim with a clean cloth. Seal and let sit in a cool, dark place until flavors develop, about 3 days. Shake jar gently once a day. Infuse longer for a more concentrated flavor.
  • Strain the infused vinegar into a sterile bottle or jar through a cheesecloth or coffee filter. Seal.

Steps:

  • For the berries: In a small bowl, toss the strawberries with the sugar and vinegar. Let the mixture stand at room temperature, stirring occasionally, for 2 hours.
  • For the whipped cream: In a medium bowl, beat the heavy cream until it forms soft peaks. Add the powdered sugar and vanilla. Continue to beat until the cream holds stiff peaks.
  • To serve: Spoon the strawberries and juices into 2 small glasses and add a dollop of whipped cream. Sprinkle with chopped mint and serve.

4 cups white wine vinegar
1 tablespoon grated lemon zest
1 cup loosely packed basil leaves

Steps:

  • Place strawberries in a food processor; cover and process until pureed. Transfer to a large glass bowl; add vinegar and lemon zest. Place 1/4 cup basil in a small bowl. , With a mortar or a wooden spoon, crush some of the basil until aromas are released. Repeat with remaining basil; stir into strawberry mixture. Cover and let stand in a cool, dark place for up to 3 days, stirring once daily., Line a strainer with 4 layers of cheesecloth or 1 coffee filter and place over a large saucepan. Strain vinegar into pan (do not press out solids). Discard solids. , Heat vinegar to 180° over medium heat. Carefully ladle hot mixture into hot half-pint jars, leaving 1/4-in. headspace. Wipe rims.
