MANDARIN CHICKEN

Mandarin Chicken image

Prompted by a visit from my husband's orange-loving grandmother (she spends winters in Florida), I planned an orangy dinner. Even the main dish fit the theme, with mandarin oranges and orange juice in this savory chicken and rice bake. -Susan West North Grafton, Massachusetts

MANDARIN CHICKEN

Mandarin Chicken image

This is very similar to the Mandarin chicken served in the malls, except I use white meat chicken. Boneless chicken thighs are what the restaurant uses. It's quick, easy and delicious. Sometimes I'll make this, then a quick trip to the local Chinese take-out for vegetable lo mein and eggrolls for a cheap, tasty Chinese meal that's almost homemade. You'll be amazed at how authentic this tastes! *Note: I have adjusted the amount of sugar to reflect comments written in reviews. If you like it sweet, use the full 2/3 cup.

MANDARIN CHICKEN TOASTER MELT

Mandarin Chicken Toaster Melt image

One of my many improvised sandwiches made from what I have lying around - I figured I'd start posting some of the better ones here for you to enjoy! :-)

Provided by Benni

Categories     Lunch/Snacks

Time 6m

Yield 1 serving(s)

Number Of Ingredients 6

1 slice bread (a wide-slice variety is best)
3 slices roasted deli chicken or 3 slices turkey
2 ounces mandarin oranges, drained (half of a single-serving can)
1 tablespoon vinaigrette dressing
1 slice cheese
3 cherry tomatoes or 3 grape tomatoes

Steps:

  • Place the slices of chicken or turkey on the slice of bread, preferably by folding them and layering them slightly.
  • Put the Mandarin oranges on top of the chicken/turkey- the moisture should make them stay in place.
  • Seat the tomatoes in the oranges so they don't roll off.
  • Place the slice of cheese so it covers the oranges and tomatoes.
  • Toast on meduim-light, or until cheese melts.
  • Top with a vinagrette dressing and enjoy!

  • Drain canned chicken well and transfer to a large mixing bowl, then break it up lightly with a fork.
  • Stir in 3/4 cup mayo or to taste along with Johnny's seasoning to taste (I used a little more than 1/4 tsp seasoning).
  • Add Sriracha hot sauce to taste. The Sriracha hot sauce gives it a nice kick and it's so good, but if you want it to be kid friendly, you can divide the mixture and only put it into half of the spread.
