LOW FAT BAKED ONION RINGS

Number Of Ingredients 7

1 medium onion (sliced into 1/4 inch rings)
2 1/4 cups low fat buttermilk
1/2 cup panko bread crumbs
1/4 cup Italian seasoned whole wheat bread crumbs
1/4 cup crushed corn flake crumbs
salt to taste
olive oil baking spray

Steps:

  • Place slices of onion in a shallow dish.
  • Pour the buttermilk over the top and let them soak for about 1 - 2 hours, refrigerated.
  • Preheat oven to 450 degrees.
  • Line baking sheet with parchment paper or foil.
  • Combine panko, bread crumbs and corn flakes and place half of the crumbs in a large dish, season with salt. Reserve the rest for when the first batch is used up.
  • This should help avoid clumping and they should stick better to the onions.
  • Dip each soaked onion ring into the crumb mixture; coat well.
  • Place rings onto two cookie sheets.
  • Lightly spray with oil.
  • Bake about 12 minutes or until golden brown.
  • Serve immediately.

cooking spray (I use olive flavored)
2 large egg whites
1/2 cup fat free sour cream
2 large onions, sliced 1/4-inch thick and separated into rings
5 packets uncooked quick-cooking oatmeal
2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon dry mustard

Steps:

  • Preheat oven to 400 degrees.
  • Spray two cookie sheets with non-stick spray.
  • Wisk together egg whites and sour cream.
  • Add onion rings and turn to coat.
  • Combine remaining ingredients in small bowl.
  • Sprinkle over onions & toss to coat.
  • Spread onion on baking sheet & coat with cooking spray.
  • Bake until tender & golden, 40-45 minute.

2 tablespoons all-purpose flour
1/4 teaspoon salt
fresh ground pepper
1/3 cup plain dried breadcrumbs
1/4 cup fat free egg substitute
1 large onion, peeled, sliced 1/4 inch thick, and separated into double rings

Steps:

  • Adjust the oven racks to divide the oven in half. Preheat oven to 400°F Spray nonstick baking sheet with nonstick spray.
  • On a sheet of wax paper, combine the flour, salt, and pepper. Place the breadcrumbs on another sheet of wax paper. Place the egg substitute in a shallow dish.
  • Coat each double onion ring on both sides with flour mixture, shaking off the excess; dip the onion in the egg, then coat lightly with the bread crumbs. Arrange the rings on the baking sheet and spray the tops with nonstick spray.
  • Bake on the top oven rack until browned, 10 minutes. Turn carefully and bake until browned, 5 minutes.

2 cups all-purpose flour
2 teaspoons smoked paprika
4 teaspoons kosher salt
2 cups buttermilk
4 eggs
3 cups panko breadcrumbs
4 tablespoons olive oil
2 large yellow sweet onions, such as Maui, sliced 1/4-to-1/2-inch thick

Steps:

  • Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
  • In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
  • In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
  • Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
  • Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.

I saw this is America's Test Kitchen today and they looked so delicious! They used Regular Lay's potato chips and saltine crackers for their breading, but they didn't say how much, I am guessing at least 1/2 cup of each.

4 -5 large yellow onions, enough to make about 24 rings
3/4 cup buttermilk
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne (if you like some heat) (optional)
1 egg
1/4 cup flour
1/2 cup lay's regular potato chips
1/2 cup saltine crackers
3 teaspoons oil

Steps:

  • Heat oven to 450°F When hot, oil two baking sheet with the oil and place into the oven to get hot, about 8 minutes.
  • Cut off the ends of the onions and peel the outer layer off. Slice into 2 Inch thick slices. Remove the inside layers to created the rings.
  • In a food processor, combine the potato chips and the saltine crackers and mix fine into crumbs. Lay them into a medium sized bowl.
  • In another separate bowl, combine the buttermilk, egg, and salt, pepper, and cayenne and stir to combined.
  • In a small bowl add the 1/4 cup of flour.
  • Now to assemble the onion rings. Dip each ring into the flour first to get it dried. Dip them into the buttermilk mixture and then into the crumb mixture.
  • Lay them onto a dish.
  • Remove the baking sheets from the oven and place the rings on the hot pans, allowing enough room to fry. There should be 12 rings on each sheet.
  • Place back in the oven and cook for about 8 minutes. Remove them from the oven and turn each ring to assure both sides get fried. Place back in the oven and continue cooking for about 8-10 minutes and golden brown.
  • Allow to cool for a few minutes and enjoy!

30 saltine crackers
4 cups kettle-cooked potato chips
2 medium onions, cut into 1/2-inch slices
1/2 cup flour, divided
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup buttermilk
1 large egg

Steps:

  • Process crackers and potato chips in a food processor.
  • Whisk the buttermilk, 1/4 cup flour, cayenne pepper, egg, salt and pepper to form batter.
  • Place the remaining flour, batter mixture, and saltine/potato chip crumbs in separate bowls.
  • Preheat oven to 450°F.
  • Take each onion ring and drop into the flour to create a dry surface for the batter to cling to. Tap off excess flour and drop ring into batter.
  • Using a fork, lift the ring out of the batter and allow excess to drip off and then drop into saltine/chip crumbs. Press the coating onto the ring and then transfer to a plate.
  • Pour 3 T. vegetable oil onto a half sheet pan and place into hot oven for 8 minutes.
  • Remove pan and tilt to distribute oil. Place the onion rings on the pan making sure none touch.
  • Put the pan back in the oven for 8 minutes. Flip rings over and bake another 8 minutes.
  • Remove from oven, salt & enjoy.
