After the resounding success of Kate's Afternoon Wine Cooler, I decided to enter another w/only a slight variation ... but packed w/the rich, tropical flavor of pineapple. This 1 is truly Chef Kate recipe inspired. After having made her Natilla De Pina (Pineapple Custard) Recipe #170308 for the 2nd time at DH's request, I used my excess pineapple juice for this new effort & now I'm really hooked on both of them. CINNAMON APPLE WINE COOLER

Cinnamon Apple Wine Cooler image

Finding this recipe @ Cooks.com was an accident, but I'm convinced it was fated. I orig went looking for Club Soda recipes. I don't buy it, but guests left me a nearly full 2 lt bottle & I do so hate wasting anything. Those who know me well know I'm very fond of wine coolers, already have 2 recipes entered for them & am also esp fond of using red cinnamon candies. I drink only 1 kind of tea - *Apple and Cinnamon Twist Tea* by London Fruit & Herb Co. I add approx 6-8 cinnamon candies for ea cup I brew & did that for this recipe. Altho not a part of the recipe, I liked it & you can choose for yourself whether to try it that way. :-) (Cooking time is the 5 min brew time & cooling time for the tea mixture is not included). *Enjoy* !

  • Make the watermelon juice by cutting a seedless watermelon in half. Remove the rind and discard. Chop the watermelon into 1-inch cubes, place in a food processor fitted with a metal blade, and whirl like crazy until the watermelon is completely liquified. Strain the liquid through a cheesecloth or paper towel to remove the pulp.
  • Stir the sugar and water together in a small pan over medium heat until the sugar completely dissolves. Add the mint leaves and bring to a simmer for five minutes. Remove from the heat and cool. Keep refrigerated until needed. It will keep in the refrigerator for a couple of weeks.
