For a taste of the frontier, bake Ree Drummond's Blackberry Cobbler from The Pioneer Woman on Food Network; it's perfect served warm with cold ice cream.

1/2 stick butter, melted, plus more for greasing pan
1 1/4 cups plus 2 tablespoons sugar
1 cup self-rising flour
1 cup whole milk
2 cups fresh (or frozen) blackberries
Whipped cream and/or ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
  • In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
  • Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. Bake until golden brown and bubbly, about 1 hour. When 10 minutes of the cooking time remains, sprinkle the remaining 2 tablespoons sugar over the top. Top with whipped cream or ice cream . . . or both!

For pastry stars
2 sheets frozen puff pastry (about 1 pound), thawed
an egg wash made by whisking 1 large egg yolk with 1 tablespoon water
For berry mixture
1/3 cup water
3 tablespoons fresh lemon juice
3 1/2 tablespoons cornstarch
5 cups fresh blackberries (about 5 half-pints)
5 cups fresh raspberries (about 4 half-pints)
2 1/2 to 2 3/4 cups sugar, or to taste
Accompaniment:
lemon buttermilk ice cream
LEMON BUTTERMILK ICE CREAM
6 large egg yolks
1/3 cup fresh lemon juice
3/4 cup sugar
2 cups buttermilk
zest of 1 large lemon

Steps:

  • Make pastry stars:
  • On a lightly floured surface with a lightly floured rolling pin roll out each puff pastry sheet into a 14- by 13-inch-rectangle. With 1 or more star-shaped cutters cut out 24 pastry stars. Divide pastry stars between 2 baking sheets, arranging in one layer, and freeze 5 minutes.
  • Remove baking sheets from freezer. Brush top of each pastry star lightly with some egg wash (be careful not to drip down edges of pastry) and bake in middle and lower thirds of oven about 5 minutes. Alternate baking sheets and bake 5 to 10 minutes more, or until pastry stars are puffed and golden brown. Transfer pastry stars to a rack and cool completely. Pastry stars may be made 2 days ahead and kept in a sealed plastic bag at room temperature. Makes 24 stars.
  • Make berry mixture:
  • In a large bowl whisk together water, lemon juice, and cornstarch until combined well. Add berries and sugar, tossing gently to combine well. Divide berry mixture evenly among eight 1 1/2-cup shallow ramekins or baking dishes and put in 2 shallow baking pans. Bake berries in middle and lower thirds of oven 25 minutes and cool slightly.
  • To assemble cobblers:
  • Top each serving decoratively with pastry stars and a scoop of ice cream. Serve cobblers hot or warm.
  • Make Lemon Buttermilk Ice Cream:
  • In a small heavy saucepan whisk together yolks, lemon juice, and sugar and cook over moderate heat, whisking constantly, about 15 minutes, or until a candy thermometer registers 175°F. (do not boil). Strain mixture through a sieve into a bowl and cool, surface covered with plastic wrap.
  • Whisk buttermilk and zest into cooled lemon curd until combined well and freeze in an ice-cream maker. Makes about 4 cups.

1/2 cup plus 2 tablespoons melted butter, divided
1 cup self-rising flour
1-1/2 cups sugar, divided
1 cup 2% milk
1/2 teaspoon vanilla extract
3 cups fresh blackberries or frozen unsweetened blackberries

Steps:

  • Preheat oven to 350°. Pour 1/2 cup melted butter into an 8-in. square baking dish. In a small bowl, combine flour, 1 cup sugar, milk and vanilla until blended; pour into prepared dish. In another bowl, combine blackberries, remaining 1/2 cup sugar and remaining 2 tablespoons melted butter; toss until combined. Spoon over batter., Bake until topping is golden brown and fruit is tender, 45-50 minutes. Serve warm.

2 cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
½ cup unsalted butter, melted
1 cup heavy cream
6 cups fresh blackberries
¼ teaspoon ground nutmeg
1 teaspoon white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix together the flour, 1 cup of sugar, baking powder, salt, milk, melted butter, and cream to make a batter. Spread the blackberries out into an ungreased 9x13-inch baking dish, and top with the batter. Sprinkle the top of the batter with the nutmeg and 1 teaspoon of sugar.
  • Bake cobbler in the preheated oven until the top is browned, the fruit is bubbling, and a fork inserted into the center of the batter comes out clean, about 1 hour. Allow to cool before serving.

When we were kids we picked wild blackberries for mom to bake cobblers. Those prickly blackberry vines left us looking like we had been in a cat fight. In the end, it was so worth those scratches!...

2 c fresh blackberries (or 16 oz pkg frozen)
1 stick butter
1 c self-rising flour
1 1/4 c sugar
zest of one lemon
1 c buttermilk (or whole milk)
1/2 to 1 tsp lemon extract

Steps:

  • 1. Rinse blackberries and drain; set aside.
  • 2. Preheat oven to 350 degrees. Place stick of butter in 10-inch cast iron skillet (or 10-inch baking pan). Let butter melt as oven preheats. NOTE: watch to ensure that butter does not burn.
  • 3. Combine flour and 1 cup sugar; whisk to combine. Add lemon zest, buttermilk, lemon extract and 1/2 of melted butter; mix well. Pour batter into skillet, sprinkle blackberries evenly over top of batter. Spinkle 1/4 cup sugar over berries. NOTE: I did not measure the melted butter, just eyeball it.
  • 4. Bake for 1 hour. Serve with a scoop of vanilla ice.
  • 5. CROCK POT DIRECTIONS: Grease and flour inside of crock or spray with Bakers Choice. Pour 1/2 melted butter in bottom of crock pot. Mix flour, 1 cup sugar; add 1/2 melted butter, zest, flavoring and buttermilk, mix well; pour batter into crock pot. Cover batter with blackberries. Sprinkle with 1/4 cup sugar. Bake on high for 1 1/2 hours. Check at 1 hour 15 minutes. Remember each crock pot cooks different. I used a 6 1/2 quart oval crock pot for this recipe.

  • Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick! You could also use a food processor, too. While slowly stirring, slowly drizzle in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this– just flatten the dough in sections and cover most of the berries.
  • Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.
