GRANDMA'S TWICE BAKED POTATOES
My grandma always made these anytime we were together. Everyone loves these potatoes and I like to serve them with a tossed green salad. I always bake extra so that I can have one for lunch.

Steps:
- 1. Mix sour cream and chives together and set aside.
- 2. Bake potatoes in 400 oven for 1 hour, or until done. Remove from oven and cut open potatoes (do not cut potato shells completely in two) and scoop out insides into large bowl. Place 4 empty shells on baking sheet; discard the 5th shell.
- 3. Add sour cream/chive mixture, butter, onion, salt, and pepper. Mix well. Add 1 cup of the cheese; mix.
- 4. Refill 4 of the potato shells - heaping the potato mixture inside shells. Sprinkle remaining cheese over top of filling.
- 5. Place in oven for 5 to 10 minutes to reheat filling and melt cheese on top.
- 6. NOTE: You can prepare as many twice baked potatoes as you desire - just adjust the other ingredient amounts to suit your taste. Always bake an extra potato so that you have enough filling to fill the shells to heaping. You can also bake several regular sized potatoes in place of an extra baking potato. Choose large, well rounded potatoes. ENJOY!

- Preheat oven to 350°. In a small bowl, combine apple slices, sugar and lemon juice; toss to coat. Set aside. In an 8- or 9-in. cast-iron or other ovenproof skillet, heat butter over medium heat. Add onion; cook and stir until crisp-tender, about 3 minutes. Remove from the heat., Alternately arrange potato and apple slices in a single layer in same skillet. Combine 3/4 cup Parmesan cheese, cream, thyme, salt and pepper; pour over top., Bake, uncovered, 50 minutes. Top with bacon and remaining 2 tablespoons Parmesan cheese. Bake until potatoes are tender and top is lightly browned, 5-10 minutes longer. Let stand 10 minutes before serving. If desired, sprinkle with parsley.

GRANDMA'S CHEESY POTATOES
My grandmother makes this every year with a brisket for Christmas dinner. This is hands down my favorite potato recipe ever. I leave the skins on the potatoes, but this is optional. Garnish with chopped green onions or Italian parsley, and top with more cheese for a restaurant 'look.' I hope you enjoy this recipe as much as we do.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a deep 9x13-inch baking dish with cooking spray.
- Place yellow and red potatoes into a large pot and cover with salted water; bring to a boil. Cook until soft, about 10 minutes. Drain.
- Combine mozzarella cheese, Cheddar cheese, sour cream, and mayonnaise in a large bowl; mix well. Slowly add potatoes and toss; use a wooden spoon or flat spatula to avoid mashing the potatoes.
- Pour potatoes into the prepared pan. Dot butter over the top and cover with foil.
- Bake in the preheated oven, 25 to 30 minutes. Remove from oven and uncover. Preheat the oven's broiler. Return to the oven and broil until top is browned, about 5 minutes.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. Mash the potatoes with butter, milk, salt and pepper until smooth. Add cream cheese and onion dip; mix well. , Spread in a greased 2-1/2-qt. baking dish. Sprinkle with paprika. Cover and refrigerate for 8 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or until heated through.

My grandma's signature mashed potato casserole. Super creamy mashed potatoes topped with melted cheese. Yum! If I had to pick one food to eat for the rest of my life, it would be this.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain.
- Return potatoes to the pot and mash until smooth. Add sour cream, cream cheese, margarine, and milk; beat until light and fluffy. Add in garlic powder, salt, and pepper. Transfer to a 9x13-inch casserole dish.
- Bake in the preheated oven until heated through, 30 to 40 minutes. Sprinkle Colby-Jack cheese over top and bake until cheese is melted, about 5 more minutes.
