Recipe video above. The idea behind this recipe is that the potatoes suck up the amazing lemon-garlic-oregano flavoured broth, then roasted until golden crispy edges. These won't go super crunchy because of the way they're cooked - but you won't miss the crunch because they have flavour unlike any other ordinary roasted potato! 1.2 kg / 2.5lb potatoes ((Aus: Desiree, US: Yukon Gold, UK: Maris Piper) (Note 1))
1 1/2 cups chicken stock/broth (, low sodium (Note 2))
1/2 cup olive oil
1/3 cup lemon juice
5 garlic cloves (, finely grated using microplane (Note 3))
1 tbsp dried oregano
2 tsp salt ((Note 4))
Lemon wedges, fresh oregano leaves

Steps:

  • Preheat oven to 200°C/390°F (180°Cfan).
  • Cut potatoes: Peel potatoes and cut large ones into thick wedges - about 3cm / 1.2" thick - and medium ones into 3 (see photo in post).
  • Coat potatoes: Place potatoes in a roasting pan with all the other ingredients. Toss well.
  • Roast 45 minutes: Roast for 20 minutes. Turn potatoes, roast for a further 25 to 30 minutes until the liquid is mostly absorbed by potatoes/evaporated and you're left with mainly oil in the pan.
  • To crisp the potatoes (optional): Transfer potatoes to a separate tray. (Note 3) Tilt the original roasting pan and scoop off as much of the oil as you can (some juices is ok), then drizzle over the potatoes.
  • Roast 35 minutes: Transfer potatoes to oven and roast for 35 - 40 minutes, turning once or twice, until potatoes are golden and a bit crispy on the edges.
  • Heat pan juices: Return pan #1 with the garlic juices to the oven for the last 5 - 10 minutes or so to reduce down and make the garlic golden. (Optional, Note 4)
  • Plate up: Transfer potatoes to serving platter. Drizzle over the reduced garlic pan juices (or toss potatoes in the pan). Serve, garnished with lemon wedges and oregano if desired.

5 large russet potatoes, scrubbed and quartered
3 cloves garlic, minced
1 pinch sea salt and ground black pepper to taste
1 cup water
½ cup olive oil
¼ cup lemon juice

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Place potatoes in a 9x13-inch baking dish and season with garlic, sea salt, and pepper. Pour in water, oil, and lemon juice and mix for a few seconds with a wooden spoon to coat.
  • Roast in the preheated oven for 40 minutes. Turn the potatoes and continue to cook until all sides are golden brown, about 25 minutes more.

1 pound small red potatoes
2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup shredded Parmesan cheese
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut scrubbed potatoes into wedges; place in a large saucepan. Add water to cover; bring to a boil. Cook, covered, until tender, 10-15 minutes; drain. In the same pan, heat oil over medium-high heat. Add potatoes; cook until browned, 4-6 minutes. Add garlic; cook 1 minute longer. Remove from heat. Stir in remaining ingredients.

2 1/2 lbs red potatoes, cut into 1-in cubes
12 garlic cloves, peeled
2 tablespoons olive oil
1 1/2 teaspoons fresh lemon peel, grated
1 teaspoon coarse salt
1/4 teaspoon fresh coarse ground black pepper

Steps:

  • In large bowl, toss potatoes, garlic, olive oil, lemon peel, salt, and pepper until potatoes are evenly coated.
  • Layer two 30" by 18" sheets, heavy-duty foil to make a double thickness. Place potato mixture on center of stacked foil. Bring short ends of foil up and over potatoes; fold several times to seal well. Fold remaining sides of foil several times to seal in juices.
  • Place packet on grill over medium heat and cook 30 minutes, or until potatoes are fork-tender, turning packet over once halfway through grilling.
  • Shallot & Herb Packet Variation:.
  • Prepare as above but omit garlic. Add 2 medium shallots, thinly sliced, and 2 tsp minced fresh thyme leaves or 1/2 tsp dried thyme. Wrap and grill as above. Sprinkle with 1/3 cup chopped fresh parsley before serving.

1 ½ pounds fingerling potatoes
1 small lemon, juiced
2 teaspoons olive oil
2 teaspoons garlic powder
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Wash potatoes and pat dry. Cut abnormally large potatoes in half so all potatoes are around the same size (no bigger than 1/2 of a ping pong ball). Transfer to a metal baking pan.
  • Mix lemon juice and olive oil together and drizzle over potatoes. Sprinkle with garlic powder and salt. Toss until well coated and spread evenly in the pan.
  • Bake in the preheated oven for 20 minutes. Stir and bake until tender, about 10 minutes more.

Take your roast potatoes to new levels of deliciousness with lemon, garlic and bay. They make the perfect side dish to a Sunday roast or Christmas dinner

2kg Maris Piper potatoes
1 garlic bulb, cut in half lengthways
100ml rapeseed or sunflower oil
8-10 fresh bay leaves
½ tsp lemon , zested

Steps:

  • Peel and halve or quarter the potatoes, if large, so they're all the same size. Put in a large pan and cover with cold water and a pinch of salt. Add one half of the garlic bulb. Bring to a simmer and cook for 10 mins until a knife goes easily through the potatoes, then drain well, reserving the garlic. Leave the potatoes to steam-dry in the pan for 10 mins. Heat the oven to 220C/200C fan/gas 7.
  • Pour the oil into a large baking tray or two smaller ones - it should cover the base of the tray, so add a little more if you need to. Heat in the oven for 10 mins until really hot. Carefully transfer the spuds to the oil, leaving lots of room between each one (otherwise they will steam, rather than roast) and coat in the oil, taking care not to splash yourself. Season, then add both halves of the garlic, blanched and not, and nestle the bay leaves underneath the spuds.
  • Roast for 40-45 mins, turning halfway through and coating in more oil, until golden and crunchy. Season with more salt and pepper, and zest the lemon directly over the potatoes so the essential oils spritz over the spuds. Serve with the roasted garlic in its shell.

For perfect Roasted Potatoes with Garlic, Lemon, and Oregano there is no need to peel them, but I suggest that you halve them, because they taste best when they can absorb more sauce.

3 pounds baking potatoes, peeled and cut into 1 1/2-inch cubes
1/2 cup olive oil
4 garlic cloves, minced
1 1/2 teaspoons dried oregano, crumbled
1 teaspoon salt
Freshly ground black pepper
1/2 cup beef stock or chicken stock
1/3 cup freshly squeezed lemon juice
2-3 tablespoons chopped fresh oregano

Steps:

  • Preheat oven to 400°F.
  • Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil.
  • Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through. If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown.
  • Sprinkle with the fresh oregano and serve at once.
  • Variation:
  • Dissolve 1 tablespoon tomato paste in the stock, and reduce the amount of lemon juice to taste. Substitute Aleppo pepper or crushed red pepper flakes for the black pepper.

I love grilling out side dishes along with the main dish, such easy clean up after dinner. This is a recipe I found on the Land O'Lakes recipes. Garlic and lemon are the flavorful seasonings in this easy grilled potato and onion recipe.

6 medium potatoes, washed, unpeeled, thinly sliced (6 cups)
1 medium onion, thinly sliced
2 tablespoons minced roasted garlic (purchased)
1 tablespoon lemon zest, freshly grated (may substitute lemon juice but would increase it to 2-3 TBSP)
1/2 teaspoon salt
1/4 teaspoon ground pepper
4 tablespoons butter

Steps:

  • Heat gas grill on medium or charcoal grill until coals are ash white.
  • Mound potatoes and onion evenly among 6 (12-inch) squares heavy-duty aluminum foil sprayed with no-stick cooking spray (I love using the new non-stick foil - no spray needed). Sprinkle with garlic, lemon zest, salt and pepper. Dot each serving with 2 teaspoons butter.
  • Bring edges of foil up to center; tightly seal top and sides of each packet.
  • Place foil packets onto grill. Cover; grill, turning once, until potatoes are tender (15 to 30 minutes but will vary depending on grill temp).
  • Oven Directions: Heat oven to 375°F Prepare potatoes and onion mixture as directed above. Bake for 40 to 50 minutes or until vegetables are tender.
  • Recipe Tip.
  • Place potatoes and onion in disposable aluminum pan. Sprinkle evenly with garlic, lemon zest, salt and pepper; top with butter. Cover pan with heavy duty aluminum foil. Grill as directed above, stirring occasionally, until vegetables are tender (25 to 35 minutes).

½ cup fresh lemon juice
⅓ cup vegetable oil

Place potato halves, cut side down in a single layer on baking sheet. Roast in preheated oven for about 20 minutes, or until under-side of potatoes are golden brown.
  • When potatoes are almost finished roasting, melt butter in a skillet over medium heat. Add garlic and cook, stirring, until garlic is soft and fragrant, but not browned. Turn off heat under pan. Add parsley and thyme. Stir to combine.
  • As soon as potatoes are removed from the oven. Spoon in to skillet with garlic herb butter. Toss to coat, then remove to a serving plate. Sprinkle with flaky salt and drizzle with fresh lemon.

  • Place potatoes in colander set over large bowl. Rinse under running water, tossing with hands until water runs clean. Drain potatoes well. (This helps rinse off extra starch so the potatoes don't get sticky as they cook.)
  • In a large nonstick skillet, bring potatoes, smashed garlic, lemon juice, broth, and 1/2 teaspoon salt to boil over medium-high heat. Reduce heat to medium-low and cook, covered, until potatoes are just tender, about 15 minutes. Remove lid and increase heat to medium-high again. Cook, stirring occasionally, until liquid evaporates, about 5 minutes.
  • Discard the smashed garlic and add the 2 tablespoons olive oil to the pan. Turn all the potatoes cut-side down and continue to cook until deep golden brown, 5-6 minutes. If some of the potatoes in the center of the pan start to brown quicker, kind of switch them around to trade places with some of the potatoes nearer the oustide of the pan. This doesn't matter too much, though. Some really crispy and some more soft on outside is still great. Remove from the heat, stir in the parsley, lemon zest, and minced garlic. Season with salt and pepper. If you want more lemon flavor, squeeze more fresh lemon juice over. Serve.
