1 medium ripe banana (cut in half lengthwise)
1/2 tablespoon honey
cinnamon (to taste)

Steps:

  • Preheat oven to 400F degrees.
  • Arrange banana on an oven safe dish or foil.
  • Sprinkle with cinnamon and honey.
  • Cover tight with foil and bake for 10 to 15 minutes, depending on how soft you like them.
  • Enjoy as is, or (optional) add some whipped cream or light ice cream on the side.

  • Slice the bananas in half and put in an oven proof dish.
  • Drizzle the honey over them and sprinkle the cinnamon on top.
  • Put in a preheated oven at 200°C/390°F/Gas6 for 15 minutes.

2 ripe bananas
4tbsp honey, plus extra for drizzling
2tsp brown sugar
1tsp cinnamon
200g tub Greek yoghurt
4tsp chopped walnuts

Steps:

  • Pre-heat oven to 190⁰C/370⁰F/Fan 180⁰C/Gas Mark 5.
  • Slice the bananas lengthways, and place them in a baking tray lined with aluminum foil.
  • Pour a tbsp of honey and a pinch of cinnamon and sugar over each banana half, ensuring that they are evenly coated.
  • Bake for 10-15 minutes until the bananas are soft and sticky.
  • Serve warm with a dollop of Greek yoghurt drizzled with honey and a tsp of walnuts sprinkled over each half.

1 lemon, cut in half for juice

  • Cut the lemon in half and squeeze a little juice over each banana.

I love banana's but can't stand to eat them when they're over-ripe so I always end up binning some. In a bid to cut down on wastage I now eat this delicious baked (or you could BBQ it) banana combo for my breakfast. I like it so much now that it's gone from being a recipe I use to get rid of my over-ripe banana's to being my standard week-day breakfast! It's so versatile... great on it's own, over porridge or weetabix, on toast, with yogurt, or over ice cream... Mmmmmmm!

1 banana (nice and ripe)
2 teaspoons honey
cinnamon

Steps:

  • Pre-heat the oven to 200c (or get your BBQ nice and ready if you're BBQing).
  • Either slice the banana up into bite-sized pieces or cut it in half lengthways if you're looking for a smarter presentation or are having an ice cream banana split.
  • Place the banana on an over-sized square of tin foil and sprinkle with cinnamon (to taste).
  • Drizzle 2tsp of honey evenly over the banana and gather up the corners of the foil to create a little banana parcel.
  • Place the parcel in the oven (or on the barbie) and bake for approximately 15mins.
  • NB. Baking time depends on how you prefer your bananas - the more you bake, the more soft and gooey they get and the more the honey caramelises onto them. Personally I don't like mine too over-baked as I prefer the banana to still be a bit hard and the honey to be liquid.

6 bananas
1/3 cup butter
1 cup sugar
2 teaspoons cinnamon
milk (enough to cover the bananas)
ice cream

Steps:

  • Preheat oven to 375.
  • Cut the bananas in halves. Butter a baking dish thoroughly, and place the bananas flat in them. Sprinkle the sugar mixed with the cinnamon over the bananas, and don't move them.
  • Pour the milk over the banans until they are all covered , cut butter into little cubes and scattered all over the bananas, cover with foil.
  • Place baking dish on a edged baking sheet in case millk cooks over, bake with foil on for the first five minutes, then uncover and let the cook until brown on top.
  • This dessert can be served hot or cool with vanilla cream on the side, or on it's own.
