This is everyone's holiday favorite, even the busy cook's, because it is so easy to make.

½ cup white sugar
½ cup butter
1 egg
1 cup molasses
2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon salt
1 cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
  • In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
  • In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
  • Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

These traditional cookies came to The Times by way of Jennifer Steinhauer in an article about her grandmother's beloved Christmas cookie recipes. Isabelle Steinhauer would bake between "15 and 20 varieties each season: cream cheese wreaths shot from a cookie press; papery wafers carefully dipped in colored sugar; elaborate cutout cookies of nursery rhyme characters, their eyes fashioned from metallic dragées that the F.D.A. has written off as inedible; all manner of confections with nuts." There's nothing fancy about these gingerbread cookies, but they are tender, gently spiced (feel free to add more to taste) and completely wonderful with a glass of cold milk. If you don't like using shortening, some readers have had good luck using half solid coconut oil and half softened butter instead.

1 cup light brown sugar
1 cup light molasses
1 cup vegetable shortening
1 tablespoon baking soda
1 egg, lightly beaten
1/4 teaspoon salt
2 teaspoons baking powder
1 tablespoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
4 to 4 1/2 cups all-purpose flour, more for rolling dough
Royal icing and cinnamon candies, for decorating, optional.

Steps:

  • In a small saucepan, combine brown sugar, molasses and shortening. Place over medium-low heat and stir just until mixture is melted and smooth. Remove from heat and mix in baking soda and 1/4 cup cold water. Set aside and allow to cool to room temperature.
  • Add egg, salt, baking powder, ginger, cinnamon and cloves; stir to mix well. Add 4 cups flour and mix well, adding up to 1/2 cup more if dough seems sticky. Shape into a ball, cover and refrigerate for at least 2 hours, up to 24 hours.
  • Preheat oven to 350 degrees. Line baking sheets with parchment paper and set aside. On a lightly floured surface, roll out dough to 1/4-inch thickness, and cut into gingerbread boy shapes with a 5-inch-long cookie cutter. Arrange on baking sheets 1 1/2 inches apart, and bake until risen and no longer shiny, about 10 minutes. Remove from heat and allow cookies to cool. If desired, decorate with royal icing and cinnamon candies. Store in an airtight container.

1/2 cup brown sugar
1/2 cup molasses
3 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon ground cloves

1/4 cup water

Steps:

  • Pre-heat oven to 350.
  • Beat softened butter and sugar until creamy.
  • Beat in molasses.
  • Combine the dry ingredients.
  • Add the dry mixture to the butter mixture in three parts, alternating with the water.
  • On a floured surface, roll the dough to your preferred thickness (recipe makes 8-16 cookies).
  • Use cookie cutters to shape the cookies.
  • Place on a lightly greased cookie sheet.
  • Bake for 8-10 minutes, depending on thickness.
  • If desired, mix 1/4 cup powdered sugar with a few drops of water and food colouring to make icing, and decorate when cool.

1 and 3/4 cups sifted all purpose flour or 7 ounces (4 oz = 1 sifted cup flour, 5 oz 1 unsifted cup)
1 1/2 tsp baking soda
1 tbsp ground ginger (or fresh, if you like it particularly spicy)
2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp salt
8 tbsp (one stick) unsalted butter
1 large egg
1/2 cup (4.0 oz)packed light brown sugar
1 cup molasses, the darker the spicier
1/2 cup boiling water
3 Tbsp finely chopped crystallized ginger

Steps:

  • Have all ingredients at room temperature 68-70 degrees F. Preheat oven to 350F. Grease bottom of one 9x9 inch pan or line the bottom with waxed or parchment paper (I did parchment). My tip is to prep everything you need for the recipe; it goes together very quickly. Sift together dry ingredients Beat butter until creamy Gradually add brown sugar and then mix in egg Mix in the dry ingredients until just blended Stir in boiling water into molasses until mixed and then add to dry ingredients and stir until just combined Stir in crystallized, again, just until combined Scrape batter into pan. Bake until a toothpick inserted in center comes out clean, 45-50 minutes

Ultimate easy gingerbread image

Make some gingerbread stars to hang from your Christmas tree. This biscuit dough is extremely forgiving if overworked, so it's perfect for baking with children

100g salted butter
3 tbsp golden syrup
100g dark muscovado sugar
½ tsp bicarbonate of soda
1 tbsp ground ginger
1 tsp ground cinnamon
225g plain flour
50g icing sugar

Steps:

  • Heat the butter, syrup and sugar together in a small pan until melted, stirring occasionally. Set aside to cool slightly.
  • Mix together the bicarb, ginger, cinnamon and flour in a large bowl. Pour in the buttery syrup mixture and stir to combine, then use your hands to bring together to form a dough. The dough will be soft at this point, but it'll firm up in the fridge.
  • Put the dough on a sheet of baking parchment, shape into a rectangle, and lay another sheet of parchment on top of it. Roll the dough out to a thickness of ½cm. Transfer to a baking sheet to keep it flat, leaving the parchment in place, then chill in the fridge for 1 hr.
  • Heat the oven to 190C/170C fan/gas 5 and line a large baking sheet with more baking parchment. Remove the dough from the fridge and cut out shapes using a cookie cutter. We used 9cm stars, but you can choose any shape. We also made some with smaller stars cut out of the centre to thread ribbon through and hang from a Christmas tree.
  • Place the shapes, spread apart, on the lined baking sheet, and bake for 10-12 mins. (Depending on the size of the cutters you use, they might need a few minutes more or less cooking in the oven). Leave to cool completely on the baking sheet.
  • Meanwhile, mix the icing sugar with 1-2 tbsp water - you want to create a consistency that's thick and pipeable, and not too thin or it will run. Decorate the cooled biscuits with the icing using a piping bag with a thin nozzle. Find out how to make a piping bag.
