A colourful accompaniment to cheese or meat, this infused pickle can also be jarred and given as a gift

500g red cabbage, finely shredded
140g coarse sea salt
500ml cider vinegar
200ml red wine
400g granulated sugar
2 tsp black peppercorn
6 bay leaves
2tbsp yellow mustard seed

Steps:

  • Place the shredded cabbage in a colander over the sink and sprinkle with salt. Leave for 2-3 hours, then drain and wash away the salt. Pay dry with a clean tea towel.
  • Put the vinegar, wine, sugar, peppercorns and bay leaves into a big, wide saucepan and simmer until the liquid has reduced by about half. Set aside for 10 mins to infuse.
  • Strain through a fine sieve into a jug or bowl, and discard the peppercorns and bay leaves. Put the cabbage and mustard seeds into a big bowl, and then pour the strained liquid over. Transfer the cabbage and pickling liquid into sterilised jars and seal. Will last for a month in the fridge.

This quick-pickled red cabbage is ready in just 2 hours and provides both flavor and a pop of color to tacos, salads, and sandwiches.

1/2 head red cabbage
1 1/4 cups water
1 1/4 cups apple cider vinegar
1 1/2 teaspoons kosher salt
2 teaspoons sugar
Optional: pinch of red pepper flakes
2 cloves garlic (sliced)
2 teaspoons coriander seeds (or caraway seeds)
12 black peppercorns

Steps:

  • Gather the ingredients.
  • Using a large sharp knife, a mandoline , or a food processor fitted with the slicing disc, slice the cabbage into thin shreds. Set aside.
  • Put the water in a saucepan and bring it to a boil over high heat. Remove the pan from the heat and add the vinegar, salt, and sugar. Add a pinch of red pepper flakes, if using.
  • Put the shredded red cabbage in a bowl and then pour the hot brine over it.
  • Divide the brined cabbage between 2 (1-pint) jars, layering evenly with the garlic slices, coriander seeds, and peppercorns.
  • Place the lids on the jars and refrigerate for at least 2 hours before serving. For the best flavor, however, refrigerate for 24 to 48 hours before serving. This recipe can keep in the fridge for about seven days.

This is a delicious, authentic Irish cabbage side dish.

2 slices Irish bacon, diced
1 medium head cabbage, cored and cut into wedges
2 tablespoons melted butter
2 teaspoons ground nutmeg
2 cups water
salt and pepper to taste
½ cup red wine vinegar

Steps:

  • Preheat your oven's broiler.
  • Place cabbage into a large pot. Add water and bring to a boil. Simmer over low heat until tender, about 15 minutes. Meanwhile, cook bacon in a skillet over medium-high heat until crisp. Drain and set aside. Drain cabbage, and drizzle with melted butter. Sprinkle with bacon and nutmeg. Transfer to a baking dish.
  • Place under your oven's broiler until the top layer is lightly browned, about 5 minutes. Serve with salt, pepper and vinegar as desired.

1 (3 lb) red cabbage
1/3 cup coarse salt
1 quart malt vinegar
1/4 cup sugar
2 tablespoons mixed pickling spices
2 bay leaves
1/2 teaspoon peppercorn

Steps:

  • Core cabbage; discard any coarse leaves.
  • Wash well; drain.
  • Finely shred cabbage.
  • Place in large stainless-steel or glass bowl.
  • Add salt; stir well.
  • Let stand in cool place 2 days, stirring well several times a day.
  • On the third day drain cabbage well; squeeze dry in towel.
  • Place in canning jars.
  • Combine remaining ingredients in large saucepan.
  • Bring to boil; cook, stirring, 5 minutes.
  • Cool; strain.
  • Pour over cabbage in jars.
  • Cover; refrigerate.
  • Allow to age 3 days before serving.
  • Will keep 6 weeks in refrigerator.
  • Makes 4 pints.

2 garlic cloves, halved
1 teaspoon whole peppercorns
1 cup water
1 cup cider vinegar

Steps:

  • Finely slice red cabbage, preferably with a mandoline. Place cabbage in a bowl, and add salt and vinegar. Using your hands to mix thoroughly, squeeze cabbage until it begins to wilt and get juicy. Let stand for 30 minutes. Adjust seasonings to taste.   • Grate or shred cabbage into very thin slivers.

500g (1lb 2oz) red cabbage (or 1 small head), core removed and leaves thinly sliced
1 onion, thinly sliced
50g (1/3 cup) sultanas (golden raisins)
2 tbsp white wine vinegar
2 tbsp muscovado sugar or light brown sugar
250g (9oz) cooking apples (or 2 cooking apples), peeled, cored and sliced
15g (1 tbsp) butter
1/2 tsp ground mixed spice (allspice)
1 tsp salt
Freshly ground black pepper
Grated rind and juice of 1 orange

Steps:

  • Preheat the oven to 150°C/300°F/gas mark 2.
  • Layer the cabbage, onion, sultanas, vinegar, sugar, apples, butter and mixed spice into a baking dish and season with the salt and some black pepper. Add the orange rind and juice.
  • Cover the dish with kitchen foil and bake for 2 1/2 hours, removing the foil for the last 20 minutes of cooking. Serve hot or cold.
