Irish Omelet image

A great way to use up leftover boiled, baked or mashed potatoes. I love omelets and separately whipping the egg whites makes this light and fluffy despite the inclusion of potatoes. In case you're wondering about taste - imagine a cross between a knish and a souffle. Other herbs or grated onions might be good variations.

4 large eggs, whites and yolks separated
1 large potato, cooked and mashed
1 teaspoon lemon juice
1 tablespoon fresh chives, chopped
2 teaspoons butter
salt and pepper

Steps:

  • Separate the eggs and beat the yolks. Add, the mashed potato to the yolks, mixing thoroughly. Add the lemon juice, chives, and salt and pepper.
  • Whisk the egg whites until stiff. Fold the egg whites into the potato mixture.
  • Melt the butter in a nonstick skillet or omelette pan over low-medium heat. Cook the omelet until golden (3-5 minutes), then run under the broiler to finish and puff the omelet.
  • Serve immediately.

1/8 teaspoon salt
Pinch ground white pepper
1 tablespoon unsalted butter, melted
*3 tablespoons grated cheese, such as cheddar or Swiss (optional)
3 large eggs
2 tablespoons heavy cream

Steps:

  • Place the eggs, heavy cream, salt and pepper in the blender and mix until very frothy, about 1 minute. Heat a saute pan over medium heat and, when hot, add the butter to the pan, swirling to coat. Pour the egg mixture into the pan. Using the rubber spatula, stir continuously and scrape down sides so as to evenly cook the mixture. Once the mixture resembles wet scrambled eggs, after about 30 seconds, use the rubber spatula to smooth the eggs so that they are an even depth throughout. Cook until almost set, about 10 seconds longer, and use the rubber spatula to fold the omelet in 1/2. Carefully slide the omelet out of the pan onto the plate.
  • Serve immediately.

  • Beat the eggs: Soak 3 large eggs for 5 minutes in hot-not scalding-tap water. This will ensure that the omelet cooks faster, and the faster an omelet cooks, the more tender it's going to be. Crack the eggs into a small bowl or large bowl-shaped coffee mug. Season with a pinch of fine salt. Beat the eggs gently with a fork.
  • TIP: I prefer a fork to a whisk for omelets because I don't want to work air into the eggs: Air bubbles are insulators and can slow down cooking if you're not careful.
  • Heat the pan: Heat a 10-inch nonstick saute pan over medium to high heat for 2 to 3 minutes. Add 1 teaspoon room-temperature unsalted butter. Once melted, spread the butter around the pan with a basting brush to ensure coverage.
  • TIP: Heat your pan empty for a few minutes before adding the butter: Even a nonstick surface is pocked with microscopic pores that eggs can fill and grab hold of. Heat expands the metal, squeezing these openings shut.
  • Add the eggs: Pour the eggs into the center of the pan and stir vigorously with a silicone spatula for 5 seconds. (Actually, it's not so much a matter of stirring with the spatula as holding the spatula relatively still and moving the pan around to stir the eggs.)
  • Let them cook: As soon as curds begin to form (that's the stuff that looks like scrambled eggs), lift the pan and tilt it around until the excess liquid pours off the top of the curds and into the pan. Then use the spatula to shape the edge and make sure the omelet isn't sticking. Move the spatula around the edge of the egg mixture to help shape it into a round and loosen the edge. Then walk away. That's right-let that omelet sit unaccosted for 10 long seconds so it can develop a proper outer crust. Don't worry: Your patience will be rewarded.
  • Finish the omelet: Time for the "jiggle" step: Simply shake the pan gently to make sure the omelet is indeed free of the pan. Lift up the far edge of the pan and snap it back toward you. Then use the spatula to fold over the one-third facing you.
  • Change your grip on the pan handle from an overhand to an underhand and move to the plate, which you might want to lube with just a brief brushing of butter to make sure things don't bind up in transit. Slide the one-third farthest from you onto the plate and then ease the fold over. Imagine that you're making a tri-fold wallet out of eggs-because that's exactly what you're doing. And just ease the pan over. There, that wasn't so hard.

A genious combination of eggs and potatoes and lightly fragranced with fresh chives, this traditional Irish omelette is a great breakfast treat.

1 small potato (cooked and mashed)
2 eggs (separate egg whites from egg yolks)
1 tbsp fresh chives (chopped)
1 tbsp full fat milk (optional - it can be dairy free if you like)
1 tsp lemon juice
pinch of salt & pepper to season
pinch ground nutmeg
2 tsp melted butter
butter or oil (to fry the omelette)

Steps:

  • Mash the potato and add the egg yolks together with the milk, chopped up chives, butter, lemon juice and a pinch of salt and pepper.
  • In a separate bowl, whisk the egg whites until they hold a stiff peaks.
  • Gently fold the whisked egg whites into the potato mixture, making sure that you don't lose any air.
  • Heat the pan on low heat, add extra butter or oil and pour the omelette mixture in.
  • Cook for about 5 minutes and check when the bottom gets a nice brown colour.
  • At that point either place it under low heat grill (if you have a suitable skillet or a baking tray) or very gently turn the omelette in the pan. If you use a long and wide utensil, you should be fine turning the omelette without knocking too much air out of it.
  • Cook for another 5 minutes or until is very light brown on the top.
  • Traditionally you'd slice the omelette into 4 pieces and serve it with buttered toast or even a salad if it's for a lunch.

EASY BAKED MINI-OMELETS

Found this on Facebook. NOTE: Use your imagination regarding what veggies you want to include in this recipe, just remember they have to be pre-cooked. NOTE: These little muffins stay warm for quite a while, and they reheat VERY well in the microwave. They would be a fantastic addition to any brunch table because they are tasty at room temperature as well !! NOTE: When I make these for just the two of us, I cut the recipe in half, which gives us 2 mini-omelets each and a couple to snack on later.

1 lb bacon or 1 lb sausage, cooked and drained
1 cup favorite vegetables, sauteed (optional)
8 large eggs
1/4 cup milk or 1/4 cup cream, if you're feeling self-indulgent
1/2 teaspoon vegetable oil
1/2 teaspoon baking powder
1/4 teaspoon salt (depending on how salty your meat is)
1/2 teaspoon black pepper
1/2 cup grated parmesan cheese (I used swiss)

Steps:

  • Preheat oven to 375 and spray cupcake pan with vegetable spray.
  • Whisk the eggs, milk or cream, oil, baking powder and salt and pepper together until smooth.
  • Divide meat and vegetables evenly between the 12 greased cupcake wells; top with a little cheese. Pour enough egg mixture in each well to come to the top.
  • Bake in preheated 375 oven for 15-20 minutes (my oven took 22 minutes). During this time, they will REALLY dome up like a real cupcake, but they will flatten back down as they cool.
  • Remove from oven and garnish with a pinch of cheese (I topped them with cheddar). Let the mini-omelets rest in the pan for 5 minutes before you take them out (they will easily lift out after 5 minutes).

SIMPLE ITALIAN OMELET

1 tablespoon crumbled goat cheese, or to taste

Steps:

  • Heat olive oil in a large skillet over medium heat, swirling oil to coat the skillet. Pour eggs into hot skillet; eggs will bubble and firm immediately.
  • Lift cooked edges of the omelet with a rubber spatula and tilt the skillet so that the uncooked egg runs underneath the lifted edge. Continue cooking, lifting edges and tilting the skillet, until omelet is almost completely set, 1 to 2 minutes total cooking time; remove from heat. Spread out any runny egg evenly on the top of the omelet with a rubber spatula.
  • Sprinkle goat cheese, 1 1/2 teaspoons chives, sea salt, and black pepper over omelet. Gently lift one edge and fold 1/3 of the omelet into the center over the cheese and chives. Fold the opposite 1/3 of the omelet into the center. Slide omelet to the edge of the skillet and flip, folded side down, onto a plate. Top with remaining chives.
