SAUS KACANG (INDONESIAN PEANUT SAUCE)

Saus Kacang (Indonesian Peanut Sauce) image

This peanut sauce recipe is based on my mom's version, which accompanies Gado Gado. Raw peanuts are roasted and then ground for the best flavor.

Provided by Patricia Tanumihardja

Categories     Peanut     Sauce     Vegetarian     Vegan     Wheat/Gluten-Free     Soy Free     Dip     Condiment/Spread

Yield 1 cup

Number Of Ingredients 9

2 tablespoons vegetable oil (or just enough to coat the peanuts)
1 cup plus 2 tablespoons (200 g) raw skinless peanuts
1 ½ cups (375 ml) water
2 makrut lime leaves (optional)
1 tablespoon seedless wet tamarind pulp, or 2 tablespoons freshly squeezed lime juice
3 tablespoons coconut palm sugar or 2 tablespoons dark brown sugar
2 teaspoons fine sea salt
1 teaspoon sambal oelek chili paste
1 to 2 Thai chiles, chopped (optional)

Steps:

  • Pour the oil into a large wok or and set over medium heat until shimmering hot. Add the peanuts and stir and cook until golden brown, 4 to 6 minutes. Toss them continuously so they cook evenly without burning.
  • Scoop up the peanuts with a slotted spoon and transfer to a paper-towel lined plate to cool. Remove any burnt peanuts, they will taste bitter.
  • When the peanuts are cool enough to handle, grind them in a small food processor or pulverize them with a mortar and pestle until they have the texture of coarse sand.
  • Mix the water together with the lime leaves, tamarind, sugar and salt in a medium saucepan. Bring to a boil over medium-high heat, then adjust the heat until it is bubbling gently. Simmer for about 5 minutes, breaking up the tamarind pulp.
  • Remove the lime leaves and any chunks of tamarind pulp with a slotted spoon. Add the ground peanuts and bring to a boil over medium-high heat. Adjust the heat and simmer gently until thick and creamy like gravy, 8 to 10 minutes, stirring often so the sauce doesn't stick to the bottom of the pot.
  • Remove from the heat and stir in the sambal oelek and Thai chilies (if using). Taste and adjust the seasonings as needed, making sure the acidity of the tamarind or lime sings through.
  • Serve the peanut sauce with vegetables or as a dipping sauce for grilled kebabs.

INDONESIAN-STYLE PORK ROAST

Indonesian-Style Pork Roast image

Your family and friends won't believe you when you reveal the "secret ingredients" for this flavorful pork roast-peanut butter! I've served this roast to guests for years, and I can't tell you how many times I've sent copies of the recipe home with guests. For a change of taste, you can substitute toasted walnuts for peanuts and use walnut oil instead of peanut butter.

INDONESIAN PORK ROAST WITH PEANUT SAUCE

Indonesian Pork Roast with Peanut Sauce image

This is absolutely a wonderful, lazy Sunday afternoon recipe. The peanut sauce is to die for, you could use it for satays, etc. I order the shoulder roast from my butcher when we need (crave) this meal. Prep time does not include marinading time.

BALINESE PORK SATAY (SATE BABI) WITH SWEET SOY GLAZE AND PEANUT SAUCE RECIPE

Balinese Pork Satay (Sate Babi) With Sweet Soy Glaze and Peanut Sauce Recipe image

This recipe is inspired by the delicious pork satay I had at a night market on the north shore of Bali: little chunks of marinated meat threaded onto bamboo skewers, grilled over coals until charred, then served with a sweet-and-spicy peanut-based dipping sauce.

For the Spice Paste:
One (1-inch) knob fresh turmeric, peeled (about 10g), or 1 teaspoon (4g) ground turmeric
2 stalks lemongrass, bottom 4 inches only, outer layers and root removed, thinly sliced (about 80g)
8 medium cloves garlic, sliced (about 60g)
2 small shallots, sliced (about 75g)
3 whole dried pasilla or guajillo chilies, stems and seeds removed, roughly chopped (about 40g)
2 tablespoons (about 30g) palm sugar or brown sugar
2 teaspoons (about 6g) whole coriander seed
1 tablespoon (about 9g) whole white peppercorns
Kosher salt
2 pounds (1kg) boneless pork shoulder, cut into 3/4-inch cubes
For the Glaze:
1 cup kecap manis (8 ounces; 240ml); see note
1/4 cup sugar (about 2 ounces; 50g), plus more if needed
One (2-inch) knob ginger, roughly chopped
4 medium cloves garlic, roughly chopped
For the Dipping Sauce:
10 ounces roasted peanuts (285g; about 1 1/2 cups)
1/4 cup (60ml) vegetable or canola oil, divided

1 tablespoon (15ml) kecap manis or fish sauce
Water, as necessary
Sugar, to taste

Steps:

  • To Cook: Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate.
  • Brush pork with another layer of glaze just before serving and serve with peanut sauce on the side or spooned on top.

ROAST PORK BELLY WITH CARAMELISED PEANUT SAUCE

Roast pork belly with caramelised peanut sauce image

Need a dinner party dish to impress? Roast pork belly is always popular and with added spice and an addictive peanut sauce, this will win your guests over

Provided by Diana Henry

Categories     Dinner, Main course

Time 2h30m

Number Of Ingredients 24

1 cinnamon stick
3cm piece ginger , peeled and chopped
2 lime leaves , torn
½ tsp black peppercorns
2 garlic cloves , chopped
3 star anise , broken
1 ½kg boned pork belly joint, scored across (this makes it easier to slice)
a little olive oil
3cm piece ginger , peeled and grated
2 tsp ground cinnamon
¼ tsp black peppercorns
2 tsp dried chilli flakes
1 tbsp groundnut oil
3 shallots , finely chopped
2 red chillies , deseeded and finely sliced
4 garlic cloves , finely chopped
3cm piece ginger , peeled and grated
1 ½ tbsp soft light brown sugar
2 lime leaves , left whole
1 tbsp fish sauce (nam pla)
2½ limes , juiced
100g crunchy peanut butter
¼-½ tsp tamarind paste
cooked rice and stir-fried greens, to serve

Steps:

  • Pound all of the ingredients for the spice rub together using a pestle and mortar. You'll end up with a coarse mixture. Transfer to a small bowl. Heat oven to 220C/200C fan/gas 7.
  • To prepare the spices that will be simmered with the pork, pound the cinnamon, ginger, lime leaves and peppercorns using a pestle and mortar to a rough paste. Add the garlic. Roughly break up the star anise - it's much too strong if you pound it - and add that too. Tip the spice mixture into a flameproof roasting tin that the pork will fit into. Lay the pork on top, skin-side down. Add enough boiling water to come just up to the level of the meat. Bring to a simmer on the hob and cook for 20 mins.
  • Take the pork out of the water and pat it dry. Discard the water and spices in the tin, wash and dry. Set a rack inside the roasting tin and lay the pork on top, skin-side up. Spread the spice rub over the pork, then drizzle on a little oil and rub all over the pork. Sprinkle over some sea salt, put in the oven and cook for 20 mins, then turn the heat down to 180C/160C fan/gas 4 and cook for a further 45 mins. Finish under the grill for 10 mins to crisp up the skin.
  • Make the sauce while the pork is cooking. Heat the oil in a frying pan and cook the shallots over a medium heat until golden. Add the chilli, garlic, and ginger and cook for 2 mins, then add the sugar. Cook until the sugar caramelises - be careful not to burn it - then quickly add 300ml water (it will sizzle and spit a bit). Stir in the lime leaves, fish sauce, lime juice and peanut butter. Bring to a simmer, stirring to break down the peanut butter. Taste. I usually add a little tamarind paste, but you might prefer to add more lime juice or fish sauce. Serve the pork belly with the sauce, rice and greens.

INDONESIAN PORK SATéS WITH SPICY PEANUT SAUCE

Indonesian Pork Satés with Spicy Peanut Sauce image

Categories     Salad     Sauce     Pork     Appetizer     Side     Broil     Christmas     Peanut

Yield makes 4 servings

Number Of Ingredients 15

Pork Satés
2 garlic cloves, coarsely chopped
1 teaspoon minced fresh ginger
2 tablespoons salad oil, such as peanut or canola
4 tablespoons ketjap manis (Indonesian sweet soy sauce; see p. 14)
1 pound lean pork loin or trimmed pork butt, cut in 1/2-inch cubes
Spicy Peanut Sauce
12-16 wooden skewers, soaked in water (15 minutes)
Thinly sliced radishes or cilantro sprigs, for garnish
Spicy Peanut Sauce
1 cup peanut butter (we use smooth, but you can use crunchy if you like the texture)
1 garlic clove, minced
1 teaspoon sambal oelek (red chile paste)
4 tablespoons ketjap manis
1-2 cups Chicken Stock (p. 206) or water, as needed

Steps:

  • Pork Satés
  • To make the satés, mix the garlic, ginger, oil, and ketjap manis in a medium bowl and add the pork cubes. Stir to coat with marinade; set aside. Meanwhile, make the sauce.
  • To make satés, thread the pork (4-5 cubes per skewer) onto the soaked wooden skewers. Grill or broil for 2-3 minutes on each side. Serve with the warm peanut sauce and a garnish of sliced radishes or cilantro sprigs.
  • Spicy Peanut Sauce
  • Place the peanut butter, garlic, chile paste, and ketjap manis in a small pot and warm gently over low heat for about 4 minutes. Stir in the Chicken Stock or water slowly, adding a little at a time; the mixture will thicken after each addition as it warms. This sauce can be made ahead of time and kept warm or rewarmed. You will need to add more liquid when ready to serve, as the peanut butter will thicken while standing. The sauce should have a thick, creamy consistency but be loose enough to stir easily. The seasonings can be adjusted to your personal taste; we like it a little spicy.
