CUCUMBER JICAMA GIMLET SALSA
This salsa is as refreshing as the drink it was inspired by. Bonus: it gets even better if it's refrigerated overnight, so make ahead for your next get-together or game day celebration.

Steps:
- Place the jicama in a food processor and pulse until finely chopped. Remove to a medium bowl. Stir in the cucumber, onion, pepper, gin, oil, sugar, lime juice and zest. Season with salt and pepper. Refrigerate until chilled, at least 1 hour or overnight. Serve with tortilla chips.

SLIGHTLY PICKLED HONEYDEW WITH HERBS
A cross between a pickle and a salad, these sweet and spicy melon wedges make a great side for grilled meats, especially those with Asian-inspired marinades or sauces. They can also be diced and added to ceviche, a salad, or wrap. Unlike most pickles, these don't get better with age, so use them within a day before their tender flesh starts to break down. If you like it spicy, use Thai chiles; for less heat, use Fresnos.

- Cut the honeydew into half. Save half for another use. Remove the rind. Cut into 3 wedges and then slice across to make 1/2-inch-thick triangles. You should have about 6 cups. Put the fruit in a resealable plastic bag.
- Put the vinegar, sugar and chiles in a small saucepan. Bring to a boil, stirring occasionally, and boil for about 30 seconds. Transfer to a small bowl and stir in 1 cup of ice. When the mixture is tepid, pour it over the melon, and seal, pressing out the air. Lay the bag flat in a shallow dish and chill for at least 4 hours and up to overnight, flipping the bag after about 2 hours.
- Remove the melon from the brine, shake off excess liquid, and place on a platter. Sprinkle some peanuts and herbs over the top, if using, and serve.

- Cut the melon in half; remove and discard seeds and rind. Cut melon into thin slices. In a large pitcher combine melon, cucumber, lime slices, and the 12 mint leaves. In a small bowl stir together lime juice and honey until combined; pour over melon mixture. Add wine, stirring gently. Cover and chill for at least 2 hours. To serve, stir in carbonated water. Ladle or pour into glasses. If desired, garnish with additional mint.
SUMMER CUCUMBER JICAMA SALAD
This is a really great cucumber salad that's light and flavorful and makes a great starter! Tastes fine as it is, but can be salted and peppered to taste, if desired. Just remember to add all ingredients and mix before adding in the tomatoes, as they are extremely delicate and do not withstand stirring very well once they are cut.

- Cut a few pieces of cucumber and honeydew away to chop and add to your Sangria later. It's always nice to ball the honeydew if you can. It's just so pretty.
- Juice the rest of your mellon and cucumber. If you don't have a juicer, but you do have a food processor, just cut up your mellon and cucumber into small pieces and process it until it's mush. Pour it into your mesh strainer and gently press the mush with a spoon over a bowl to catch the juice. You might want to further squeeze the mush in cheese cloth to get the extra juice.
- Add cucumber and honeydew fruit to your container and you can serve immediately. No need to let it sit over night.
