Very tasty yogurt-dipped, breaded chicken breasts. The yogurt makes the chicken VERY moist and the coating nice and crunchy!

4 skinless, boneless chicken breasts
1 (6 ounce) container plain low-fat yogurt
1 lemon, juiced
1 cup dried bread crumbs, seasoned
½ teaspoon garlic powder
salt to taste
¼ cup butter
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place yogurt in a small bowl and stir until creamy smooth. Add lemon and stir together. (Note: If you do not stir the yogurt first, the lemon juice will make the yogurt curdle.) In a separate shallow dish or bowl combine the bread crumbs, garlic powder and salt to taste; mix together.
  • In a 9x13 inch baking dish place 1 scant pat of butter or margarine for each chicken breast. Rinse chicken breasts and pat dry. Dip each breast in the lemon/yogurt mixture, then in the bread crumb mixture (coating completely but not heavily).
  • Place coated chicken in the baking dish and top each breast with a full pat of butter or margarine. Sprinkle with chopped parsley and bake in the preheated oven for 1 hour. Let cool for 5 to 10 minutes before serving.

cooking spray
1 (6 ounce) container fat-free Greek yogurt (such as Fage®)
⅓ cup grated Parmesan cheese
1 teaspoon seasoned salt
1 teaspoon garlic powder
½ teaspoon ground black pepper
4 skinless, boneless chicken breast halves
3 tablespoons dry Italian-seasoned bread crumbs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a baking pan with cooking spray.
  • Mix Greek yogurt, Parmesan cheese, seasoned salt, garlic powder, and ground black pepper together in a bowl.
  • Arrange chicken breasts in a single layer in the prepared baking pan. Spread Greek yogurt mixture on top of chicken; sprinkle bread crumbs on top.
  • Bake uncovered in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 40 minutes.

1 cup(s) plain yogurt
2 teaspoon(s) cumin
1 tablespoon(s) lemon juice
1 clove(s) clove of crushed garlic
1 tablespoon(s) chopped cilantro
4 - boneless skinless chicken breasts

Steps:

  • Combine yogurt, cumin, lemon juice, garlic and cilantro in a small bowl. Place chicken breasts in a glass baking dish or in a resealable plastic bag. Spoon yogurt mixture over the chicken and coat. Cover dish, or seal bag, and marinate in the refrigerator for 4 hours.
  • Place in a baking dish, spoon some of the yogurt mix over it. Bake chicken at 400F until it reaches 160F internal temp.

4 teaspoons minced garlic
3 teaspoons ground ginger

  • Mix together the yogurt, mustard, garlic, ginger, and salt and pepper.
  • Spread the mixture on the chicken, rubbing it in.
  • Place in a baking dish, cover, and let marinate for at least 2 hours.
  • Preheat oven to 375 F degrees.
  • Bake the chicken, uncovered, for 1 hour or until it is brown.

2 garlic cloves, minced
1 tablespoon minced fresh ginger
1/8 teaspoon red pepper flakes
1 1/2 teaspoons ground cumin
1 1/2 teaspoons paprika
1 1/2 teaspoons turmeric
2 teaspoons chopped fresh rosemary
4 green onions, chopped
2 teaspoons lemon juice
2 cups plain low-fat yogurt

Steps:

  • Place chicken breasts into a baking dish in a sigle layer.
  • In a small bowl, combine the seasonings, green onions, lemon juice, and yogurt.
  • Pour the yogurt/seasoning mixture over the chicken breasts, turning them over to coat well with the yogurt mixture.
  • For best results, cover and chill for a few hours to allow flavors to blend.

8 chicken thighs
1/2 tsp salt
1 1/2 c plain yogurt
1 c onions, chopped into 1/8-inch dice

Steps:

  • 1. Remove any excess fat from the chicken. Put the chicken in a medium non-metallic bowl with the yogurt and diced onions. Add 1/2 tsp. salt and mix well. Cover and refrigerate overnight.
  • 2. Heat oven to 350 degrees. Place the chicken pieces in a metal baking pan, making sure the pieces are separated and well covered with yogurt and onions. Bake for 40 minutes.
  • 3. Then broil the chicken, with the pan set at the greatest distance from heat, until onions are somewhat blackened.Be careful not to let them burn completely. This will take 4 to 5 minutes. Sprinkle with 1/2 tsp. salt.

HARISSA AND YOGHURT BAKED CHICKEN

1 tablespoon cornflour
1 cup plain yogurt
1 tablespoon harissa
1/3 cup mint, shredded
2 teaspoons ground cumin

Steps:

  • Preheat oven to 200°C.
  • Make deep slits all over the chicken pieces.
  • Blend the cornflour, yoghurt, harissa, mint, cumin, pepper and salt.
  • Spread yoghurt mix over both sides of the chicken pieces.
  • Place the chicken on a rack over a baking dish.
  • Bake for 25-35 minutes or until cooked through and crisp and golden on the outside.
  • Serve warm or cold.
