Make your own potato chips using your microwave. A tasty and easy alternative to store-bought potato chips (not to mention economical)! A mandoline would make slicing the potato into paper thin slices a breeze.

Steps:
- Pour the vegetable oil into a plastic bag (a produce bag works well). Add the potato slices, and shake to coat.
- Coat a large dinner plate lightly with oil or cooking spray. Arrange potato slices in a single layer on the dish.
- Cook in the microwave for 3 to 5 minutes, or until lightly browned (if not browned, they will not become crisp). Times will vary depending on the power of your microwave. Remove chips from plate, and toss with salt (or other seasonings). Let cool. Repeat process with the remaining potato slices. You will not need to keep oiling the plate.

- Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
- Cut the sweet potato into ⅛-inch to ¼-inch (3- to 6-mm) slices. In a medium bowl, toss the sweet potato slices with olive oil until fully coated. Add the seasonings and toss to coat. Arrange the slices on a baking sheet without overlapping the potatoes.
- Bake for 25 - 35 minutes, flipping halfway, until golden brown. Let the slices cool to room temperature.

- Using a vegetable peeler or metal cheese slicer, cut potatoes into very thin slices. Place in a large bowl; add ice water and salt. Soak for 30 minutes., Drain potatoes; place on paper towels and pat dry. - Using caution, very thinly slice the potatoes on a mandoline. Soak potatoes in a large bowl of ice water for 30 minutes. Transfer the potatoes to paper towels to dry thoroughly before frying.
- Fill a large, high-walled skillet with 2 inches of canola oil. Heat over medium heat until the temperature reaches 400°F (200°C). Line a baking sheet with paper towels and set a wire rack on top.
- Working in small batches, fry the potatoes, stirring and flipping frequently, until crispy and golden brown, about 4 minutes. Transfer from the oil to the wire rack to drain and season with the salt and pepper while the chips are still warm.

- On a cutting board, slice the potato into ⅛-inch (3 mm) slices.
- Dry the potato slices with a paper towel until there is no more moisture.
- Transfer the sliced potatoes to a bowl and coat in olive oil.
- Wipe down a large flat microwavable-safe plate with olive oil to prevent the chips from sticking.
- Place the chips on the plate in an even layer and sprinkle with salt.
- Microwave the chips on high for 6-7 minutes or until the chips just start to brown. When the chips develop some color remove them from the microwave and slowly peel from the plate. If chips are sticking, they can also be flipped halfway through!
- Repeat this process until all the potato slices are cooked.

- Slice the Potatoes. Once cleaned or peeled, slice the potatoes evenly and as thinly as you like. Thick-cut homemade potato chips are fabulous, so don't get too obsessed with thinness.
- Soak the Potato Slices. Rinse the potato slices and then soak them for about half an hour in a large bowl of cold water. You may be tempted to skip this step; don't.
- Dry the Potato Slices Thoroughly. Drain the potato slices and dry them thoroughly with a clean kitchen towel or layers of paper towels. Water will make the oil splatter, creating a mess and potentially causing burns.
- Heat the Oil & Fry the Potatoes. In a large, heavy pan or pot (the high sides of a pot help keep the oil from splattering too much), heat about 1/2 inch of vegetable oil, canola oil, grapeseed oil, or lard to about 350 F.
- Drain the Potato Chips. Use a slotted spoon or tongs to transfer the potato chips either to layers of paper towels or to a cooling rack set over a baking sheet to drain.
