BAKED CHICKEN AND PEPPERS



Baked Chicken and Peppers image

These Italian Baked Chicken and Peppers are so simple to make and so DELICIOUS to eat! With as little as 10 min of prep and one dish you can have this flavor packed meal in the oven baking to perfection.

2 lbs boneless skinless chicken breast (cut into thin cutlets)
1 red bell pepper (cut into strips)
1 green bell pepper (cut into strips)
1/2 sweet yellow onion (thinly sliced)
4 cloves garlic (pressed)
15 oz crushed tomatoes ((1 can))
1 tbsp balsamic vinegar
1 tbsp dried oregano
1 tsp dried basil
1 tsp salt
1/2 tsp ground black pepper
1 cup mozzarella cheese (shredded)

Steps:

  • Place the onions and peppers in the bottom of a 9x13 baking dish.
  • Mix the oregano, basil, salt and pepper together in a small bowl. Place the chicken in a single layer on top of the peppers and season with a couple pinches of the seasoning.
  • Mix the crushed tomatoes, remaining seasonings, garlic, and vinegar together and pour over the top of the chicken to cover.
  • Bake uncovered at 400˚F for 35 minutes. Then remove the dish and sprinkle the mozzarella cheese over the top and finish cooking for 5-10 minutes or until the chicken is cooked through (165˚F) and the sauce is bubbling on the sides.

This is a quick fix no peek recipe, juice to be served with noodles or rice. Prepare in the morning, refrigerate and bake in the evening. A nice meal for guests.You can prepare in grill bag and place in 9 X 13 pan.

12 chicken thighs or 12 chicken breasts
6 green peppers, cored, seeded and cut in quarters
2 orange baby bell peppers, split
2 red baby bell peppers, split
2 yellow baby bell peppers, split
6 -8 stalks fresh celery, cut in small diced pieces, include the leaves
1 tablespoon thyme
2/3 cup Heinz 57 steak sauce
1/3 cup Worcestershire sauce
1/4 cup lemon juice
1/4 cup margarine
1/2 cup brown sugar, packed
1 teaspoon paprika
Pam cooking spray

Steps:

  • Spray a 9 X 13 pan with Pam.
  • Lay green pepper quarters with cup side up.
  • Put diced celery in each pepper quarter.
  • Sprinkle each quarter with thyme.
  • In mixing bowl add Heinz 57 sauce, Worcestershire sauce, lemon juice, brown sugar and margarine. Mix well.You can heat and mix. I do to make sure the flavors mix.
  • Place split baby peppers in between the green peppers.
  • Place chicken pieces over each pepper quarter.
  • Spoon sauce mixture over chicken pieces.
  • Sprinkle paprika over chicken.
  • Note: You may add 1/8 tsp cayenne pepper to the sauce mixture if you like it hot! This is optional!
  • Cover or foil the top. Refrigerate or Bake at 400* for 40 minutes. Allow extra time if refrigerated about 10 more minutes.
  • I have added the brown sugar because it gives a extra tangy sweetness to the dish and everyone raves about it. The baby peppers are sweet and add color and a little more flavor. You may use Splenda brown sugar blend if desired.
  • Lift out with spatula to individual plates.

1 pound skinless boneless chicken thighs
1 cup Heinz 57 sauce
1/2 cup honey
2 teaspoons garlic powder
1/2 teaspoon hot pepper sauce - (to 1)

Steps:

  • For sauce, combine Heinz 57 sauce and remaining ingredients. Divide sauce in half. Brush chicken often with one half of sauce during last 5 minutes of cooking time. Serve chicken with remaining sauce for dipping. (Makes about 1 1/2 cups of sauce) Grill chicken until cooked through (12 to 14 minutes for breasts, 20 to 25 minutes for thighs). This recipe was on the back of a bottle of Heinz 57 Sauce years ago and I lost the recipe. It recently popped back up in an Ore Ida ad for their grillers. The chicken is so easy and tastes so good, so I'm putting it in Food.com for safe keeping.

1 (10 ounce) bottle Heinz 57 steak sauce
1/4 cup honey
8 -10 pieces chicken (I use thighs and breasts)

Steps:

  • Mix together the Heinz 57 and the honey.
  • Grill the chicken over medium heat for 4-6 minutes.
  • Brush both sides with sauce mixture, turn over and grill for an additional 4-6 minutes or until the chicken is no longer pink.
  • Use any extra sauce for dipping.

1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 each large green and red pepper, coarsely chopped
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 cup KRAFT Shredded Mozzarella Cheese
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 375ºF.
  • Cook pasta as directed on package, omitting salt. Meanwhile, cook and stir chicken in large nonstick skillet on medium-high heat 2 min. Add peppers; cook and stir 3 min. Stir in pasta sauce; simmer 6 to 8 min. or until chicken is done and peppers are crisp-tender, stirring occasionally. Add cream cheese; cook and stir 1 to 2 min. or until melted.
  • Drain pasta. Add to chicken mixture; toss to coat. Spoon half into 8- or 9-inch square baking dish; top with 1/2 cup mozzarella and 2 Tbsp. Parmesan. Repeat layers.
