2 cups old-fashioned oats
1-3/4 cups boiling water
2 cups fat-free milk
1-1/2 cups chopped peeled tart apples
3/4 cup dried cranberries
1/4 cup maple syrup
1 teaspoon ground cinnamon
1/2 teaspoon salt

Steps:

  • Place oats in a large bowl; add boiling water. Let stand for 5 minutes. Stir in the remaining ingredients. , Transfer to an 11x7-in. baking dish coated with cooking spray (dish will be full). Cover and bake at 350° for 40 minutes. Uncover; bake 10-15 minutes longer or until bubbly and set.

3/4 cup dark brown sugar
2 eggs
1 cup butter, softened
3/4 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract
2 cups rolled oats
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 cup whole fresh or frozen cranberries

Steps:

  • Step 1: Sweeten the Mix Preheat oven to 350 degrees F. In a mixing bowl cream the butter with the granulated and brown sugars. Add the eggs and stir. Little Hands Tip: After you've gotten the batter started, let your child have a try with the spoon. Take turns mixing until the ingredients are blended together.
  • Step 2: Get Spicy Add the cinnamon, baking soda, cream of tartar and vanilla to the mixture. Then stir in the oats. Little Hands Tips: Let your child help measure out dry ingredients like sugar and oats and put them into the bowl. Talk as you measure together. For example, ask: "If we have one cup of oats, how many more do we need to make two?"
  • Step 3: Red, Healthy Cranberries Mix in the all-purpose and whole wheat flours. Then add the cranberries. Little Hands Tip: Talk about how cranberries are a kind of fruit that is good for our bodies. Cranberries are filled with Vitamin C that helps us stay healthy. What other fruits are red?
  • Step 4: Give It Some Love Put a spoon of batter down on the cookie tray, put the cookie cutter around it and press the dough into the shape (you can flour the cutter to keep it from sticking.) No cookie cutter? No problem! These can be made as traditional round cookies, too. Bake 8 to 10 minutes.
  • Step 5: Share with Someone Special! While you eat these sweet treats with your little sweetheart, talk together about the people you love and care about.

I am hypoglycemic and breakfast is especially important for me. This oatmeal recipe is a slight twist on a common GI recipe that introduces more fiber to your morning and is so easy to make. As a side note; cinnamon has been shown to reduce blood sugar levels and aids in digestion, what an excellent spice to add to breakfast!

1/2 cup old fashioned oats
1 cup water (or skim milk)
1 tablespoon ground flax seeds
1 teaspoon cinnamon
1/2 cup low-fat yogurt
fruit (optional)

Steps:

  • In a microwave safe bowl, combine the oats, water, flax and cinnamon. If you don't want to make a mess of more dishes, just swirl the ingredients around in the bowl for a couple of seconds instead of stirring to mix them up.
  • Heat on high for 4 minutes.
  • After removing, stir in the yogurt and fruit (if desired) and eat! An easy way to change up the recipe is to vary the fruit, yogurt (with other flavours or cottage cheese) and/or spices.
  • Caution: Old-fashioned rolled oats have a tendency to grow exponentially in the microwave while cooking; be sure to use a bowl at least 3-4 times the size of the ingredients. I use a medium glass saucepan or corning ware dish.

3/4 cup unsalted butter, softened
1 cup light brown sugar
1 egg, lightly beaten
1 tablespoon reduced-fat milk
1 teaspoon vanilla extract
1 1/2 cups quick-cooking oats
1 cup unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
3/4 cup raisins
1/2 cup pecans, chopped

Steps:

  • In a large mixing bowl, beat butter and brown sugar until creamy. Beat in egg, milk and vanilla; mix until light and fluffy.
  • Stir in oats, flour, baking soda, salt and cinnamon until well blended.
  • Stir in chips, raisins and pecans.
  • Drop by rounded tablespoonfuls 2 inches apart unto ungreased cookie sheets. Bake at 350 for 12-15 minutes or until edges are lightly browned. Cool 2 minutes on cookie sheets. Remove from cookie sheets and cool completely on a wire rack.

1 tablespoon instant yeast
1/4 cup wheat germ
1 cup oats
1/4 cup honey
1/4 cup oil
1 1/2 teaspoons salt
2 1/4-2 1/3 cups boiling water

Steps:

  • Grease pan and preheat oven 350°F.
  • Mix all dry ingredients.
  • Add in wet ingredients.
  • Knead until smooth and elastic.
  • Place in greased bowl, cover and rest until double. About 40 minute.
  • Divide into 3 7x3 loaf pan (approx 463g / loaf). Proof about 30 minute.
  • Bake 30-35 till brown top.

2 ¼ cups rolled oats
2 ½ cups buttermilk
1 ½ cups all-purpose flour
¾ cup whole wheat flour
⅓ cup white sugar
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon salt
¾ teaspoon ground cinnamon
3 eggs
¾ cup milk, or more as needed

Steps:

  • Mix the rolled oats and buttermilk together in a large bowl; allow to soak 15 minutes.
  • Whisk the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt together in a separate large bowl.
  • Beat the eggs and milk together in a separate small bowl; mix into the soaked oats. Stir the flour mixture into the oat mixture. If the batter seems dry, add milk about 1 tablespoon at a time until the desired consistency is achieved.
  • Grease a skillet or griddle and place over medium heat. Ladle about 1/2 cup of batter per pancake onto your preheated cooking surface. Cook until the pancake is lightly golden brown, about 2 minutes, flip, and continue cooking to brown other side, another 1-2 minutes.
