2 tablespoons unsalted butter
1 small sweet onion (, diced)
4 cloves garlic (, minced)
4 ounces cream cheese (, cut into cubes)
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup Parmigiano-Reggiano (, freshly grated)
pinch of nutmeg
pinch of cayenne pepper
1 cup mozzarella cheese (, freshly grated)
2 pounds frozen cut leaf spinach

Steps:

  • In a large nonstick skillet, melt butter over medium-high heat. Add onion and sauté until softened and translucent, stirring frequently, about 2-3 minutes.
  • Add garlic and cook for 30 seconds until fragrant. Add cream cheese and cook, stirring, until melted.
  • Add heavy cream, salt, pepper, nutmeg, and cayenne; cook for 2 minutes.
  • Add mozzarella cheese and parmesan cheese. Stir until combined and melted.
  • Fold spinach into cream sauce until evenly combined, cooking for an additional minute or so to warm through.
  • Taste and adjust seasoning, if necessary. (If the spinach seems a little watery, cook over medium-low heat until any excess liquid evaporates.)
  • Serve immediately while the sauce is still shiny and cheese is gooey.

1 8- to 10-ounce ham steak (1/2 inch thick)
2 teaspoons butter
2 garlic cloves, minced
3/4 cup half and half
1 10-ounce package frozen chopped spinach, thawed, squeezed dry
1/8 teaspoon ground nutmeg

Steps:

  • Season ham generously with pepper. Melt 1 teaspoon butter in heavy medium skillet over medium-high heat. Add ham to skillet; sauté until golden brown, about 3 minutes per side. Transfer ham to plate; tent with foil to keep warm.
  • Melt 1 teaspoon butter in same skillet over medium heat. Add garlic and stir 30 seconds. Add half and half and simmer until slightly reduced, scraping up browned bits, about 3 minutes. Add spinach and nutmeg. Stir until spinach mixture thickens slightly, about 2 minutes. Season with salt and pepper.
  • Spoon creamed spinach into 2 plates. Cut ham steak in half; place atop spinach and serve.

1 tube (4 ounces) refrigerated crescent rolls

  • In a large skillet coated with cooking spray, cook ham over medium heat until lightly browned. Stir in the carrots, soup, spinach, water, pepper and salt; heat through. 2 packages (10 ounces each) frozen spinach, thawed and squeezed dry
2 cups Simple White Rice
2/3 cup whole milk
2 large eggs
1 cup grated Gruyere cheese
Coarse salt and ground pepper
1 tablespoon extra-virgin olive oil
1 medium yellow onion, finely chopped
2 garlic cloves, minced
1/2 cup dry white wine
1/2 pound ham, chopped

Steps:

  • Preheat oven to 375 degrees. In a large bowl, combine spinach, rice, milk, eggs, 3/4 cup cheese, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. In a large skillet, heat oil over medium-high. Add onion and garlic and season with salt and pepper. Cook, stirring occasionally, until onion is soft and beginning to brown, about 10 minutes. Add wine and cook until evaporated, about 3 minutes. Add ham and cook until warmed through, about 2 minutes.
  • Add ham mixture to spinach mixture and stir to combine. Transfer to four 10-ounce ramekins or an 8-ounce square baking dish; top with 1/4 cup cheese. Bake until warmed through and golden brown on top, 20 to 30 minutes.
