1/2 cup sugar
2 tablespoons water
1/2 cup heavy cream
2 tablespoons butter
2 thinly sliced bananas

Steps:

  • In a large skillet, heat sugar with water, stirring to dissolve sugar. Boil (without stirring) until golden brown, 5 to 8 minutes.
  • Immediately add heavy cream and butter (mixture may sputter and clump); cook, stirring, until smooth. Add thinly sliced bananas; stir to coat.

This is a delicious and impressive dessert however, a little care must be taken when making this dish as you are working with very hot sugar, but the results are well worth the effort.

Number Of Ingredients 6

4 Bananas (skinned and sliced once length ways)
100g caster sugar
1 Vanilla pod
50g Kerrygold Butter (Softer)
4 Vanilla Sponge slices
4 tbsp Greek yoghurt

Steps:

  • In a large frying pan, heat the sugar over a moderate heat, after about 1-2 minutes the sugar will start to caramelise around the edges of the pan. Stir the sugar with a wooden spoon until the sugar has changed to a golden amber colour, continue cooking but be careful not to burn.
  • Remove from the heat and stir in the Kerrygold butter, vanilla seeds and 2 tbsp of cold water, to stop it cooking any further.
  • Add the bananas cut side down and return to the heat; cook for 1-2 minutes and then turn over, the bananas should have taken on the caramel colour.
  • Place the slices of vanilla sponge in the middle of the plates, pile 2 halves of bananas on top of the sponge and pour over the caramel sauce so it soaks into the sponge and add a scoop the Greek yoghurt
  • Quick Tip: To melt the butter faster use Kerrygold Softer Butter which is soft straight from the fridge and without the addition of vegetable oil.

This luscious sauce made of heavy cream, bananas, white chocolate and sugar is meant to be served with our banana-walnut bread pudding, but it's equally delicious drizzled over Sunday morning French toast.

1/2 cup sugar
1 cup plus 2 tablespoons heavy cream
2 bananas, cut into 1/4-inch dice
18 ounces finely chopped white chocolate

Steps:

  • Combine sugar and 2 tablespoons water in a heavy pan and set over medium heat. When sugar begins to brown, remove from the heat and allow to reach a deep, nutty brown. Carefully pour in cream (it will sputter). Let the mixture cool slightly and return to the heat. Add the bananas. Stir until sugar melts again and the mixture is smooth (except for the bananas).
  • Place the chocolate in a large bowl, pour the hot cream mixture over it and stir until the chocolate melts. Serve warm.

Sauteed Bananas With Caramel Sauce image

This is a rich ending to a perfect meal. If you want a non-alcoholic version, use apple juice for the dark rum.

1 tablespoon butter
1 1/2 teaspoons toasted peanut oil, divided
1 tablespoon honey
2 tablespoons firmly packed brown sugar
3 tablespoons low-fat milk
1 tablespoon dark raisin
1 tablespoon walnuts, coarsely chopped
2 firm bananas
2 tablespoons dark rum

Steps:

  • In a small saucepan, melt the butter over medium high.
  • Stir in 1 tablespon peanut oil, honey and brown sugar, stir until sugar is dissolved, about 3 minutes.
  • Sit in milk, 1 tablespoon at a time.
  • Stir and cook until the sauce thickens slightly, about 3 minutes.
  • Remove sauce from heat and stir in raisins and chopped walnuts.
  • Set aside and keep warm.
  • Peel the bananas, cut each crosswise into 3 sections and then cut each section in half lengthwise.
  • Add the additional 1/2 teaspoon peanut oil to a nonstick frying pan and place over medium-high heat.
  • Add the cut bananas and saute until they begin to brown, 3 to 4 minutes each side turning once.
  • Transfer to individual serving plates.
  • Pour the rum into the pan, bring to a boil, and deglaze the pan.
  • Cook until rum is reduced by half.
  • Add the carmel sauce to the rum and warm.
  • Spoon warm sauce over the bananas and serve immediately.

1 ¼ cups heavy cream
4 bananas, peeled and halved lengthwise

Steps:

  • Melt butter in a large, heavy skillet over medium heat. Stir in sugar and cook, stirring, until sugar is melted and light brown. Slowly stir in the cream (mixture will bubble up).
