ONE-PAN BAKED HALIBUT RECIPE WITH VEGETABLES
You'll love this simple baked halibut recipe with colorful vegetables tossed in a citrus and olive oil sauce! Perfect for busy weeknights because it comes together in 20 minutes or less. If you can't find halibut, another white fish like cod, haddock, or red snapper would work well. This sheet pan dinner is a filling meal in one, but if you want to make the most of the zesty Mediterranean-style sauce, serve the halibut and veggies over a bed of barley or bulgur.

- Preheat the oven to 425 degrees F.
- In a large mixing bowl, whisk the sauce ingredients together. Add the green beans, tomatoes, and onions and toss to coat with the sauce. With a large slotted spoon or spatula, transfer the vegetables to a large baking sheet (21 x 15 x 1 inch baking sheet, for example). Keep the vegetables to one side or one half of the baking sheet and make sure they are spread out in one layer.
- Now, add the halibut fillet strips to the remaining sauce, toss to coat. Transfer the halibut fillet to the baking sheet next to the vegetables and pour any remaining sauce on top.
- Lightly sprinkle the halibut and vegetables with a little more seasoned salt.
- Bake in 425 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3 minutes or so, watching carefully. The cherry tomatoes should begin to pop under the broiler.
- When ready, remove the baked halibut and vegetables from the oven. Serve immediately.

HALIBUT WITH VEGETABLE RAGOûT
With the mercury rising, who wants to feast on a winter stew? Lighten up with this dish from Sondra Bernstein, author of _The Girl & the Fig Cookbook_ (Simon &Schuster). It features fresh herbs and veggies and a protein-packed halibut fillet. Then, instead of hitting the couch to digest, you can hit the pavement for an after-dinner stroll.

- Raise oven rack to top and turn on broiler. Blend parsley, broth, 1/2 tsp salt, 1/2 tsp pepper and 1/4 cup oil in food processor on low for 2 minutes. Set aside. Coat medium-sized sauté pan with cooking spray, then add garlic and shallots; cook 1 minute. Mix in mushrooms and green onions and cook 5 minutes, stirring constantly. Add thyme, oregano, and wine, stirring until liquid thickens. Add beans, potatoes, and parsley-oil mix. Brush halibut with 1 tbsp oil, season with remaining salt and pepper and broil 2 or 3 minutes on each side or until firm. Serve immediately in a bowl with ragout.
RAGOûT OF HALIBUT AND CABBAGE

- Sauté bacon in heavy large saucepan over medium-high heat until brown and crisp, about 3 minutes. Using slotted spoon, transfer bacon to paper towel and drain. Add onion to drippings in pan. Sauté until beginning to color, about 4 minutes. Add clam juice and potato and bring to boil. Reduce heat to medium, cover and simmer until potato is almost tender, about 8 minutes.
- Add cabbage and fish and simmer uncovered until potato is tender, fish is just opaque in center and cabbage is wilted, about 5 minutes. Add half and half and bacon; simmer 1 minute to blend flavors. Season ragout with salt and pepper. Ladle into bowls and serve.
HALIBUT WITH BUTTER BEAN AND VEGETABLE RAGOUT (SOUTH BEACH P2)
From most recent book. Haven't tried. Butter beans, a smaller cousin of lima beans, add a decidedly creamy texture to this dish. If you can't find butter beans. use limas instead. We prefer vine-ripened tomatoes, sold in most supermarkets, as they tend to be juicier than the average beefsteak type. To save time, ask the fishseller to skin the halibut fillets for you.

- Heat the oven to broil.
- In a medium saucepan, heat 1 tablespoon of the oil over medium heat. Add onion, garlic, salt, basil, and pepper. Reduce heat to medium low, and cook, stirring occasionally, 4 minutes.
- Stir in tomatoes and peas; cover and cook 4 minutes longer.
- Stir in beans, cover and cook 2 minutes longer. Remove pan from heat and leave covered to keep warm.
- While ragout is cooking, place halibut fillets on a broiler pan, season with salt and pepper and brush with remaining 1 t oil. Broil until opaque and cooked through, 6 to 8 minutes.
- Divide ragout evenly over 4 plates and serve fillets on top of ragout.

- Cook eggs in a large saucepan of boiling water 7 minutes. Drain and place in a large bowl of ice water; let cool.
- Prepare a grill for medium-high heat. Rub halibut with 2 Tbsp. oil; season with salt and pepper. Grill, skin side down, until skin is charred and fish is nearly cooked through, 5-8 minutes. Turn and grill just until cooked through, about 1 minute. Transfer halibut to a plate and remove skin.
- Toss vegetables with remaining 1/4 cup oil in a large bowl; season with salt and pepper. Grill, turning occasionally, until lightly charred and tender. Time will be different for each vegetable (about 2 minutes for scallions and garlic scapes, 4 minutes for Romano beans, 8-10 minutes for eggplants, 10-15 for potatoes). Transfer to a plate as they are done.
- Carefully peel and halve eggs (yolks will still be a bit loose in the center). Arrange lettuce leaves on a platter and place halibut, grilled vegetables, tomatoes, radishes, and eggs in separate areas on top. Spoon some Green Olive Tapenade over; serve remaining tapenade alongside.
FENNEL-RUBBED HALIBUT WITH FAVA BEAN RAGOUT
Steps:
- Prepare a medium-hot fire (450°F) in a wood-fired grill.
- Combine the fennel seeds and olive oil to create a paste. Add the salt and pepper. Rub each fillet with the mixture and set aside at room temperature.
- To make the ragout, bring the white wine and stock to a low boil in a small nonreactive saucepan. Add the saffron threads, remove from the heat, and set aside.
- Melt 2 tablespoons of the butter in a large sauté pan over medium heat. Add the shallots and sauté until soft, about 3 minutes, then add the leeks and mushrooms and sauté for 5 minutes. Add the thyme sprigs. Add the saffron liquid and stir to scrape up the browned bits from the bottom of the pan. Stir in the remaining 2 tablespoons butter, the fava beans, and carrots and cook over low heat for 5 to 7 minutes, until the favas and carrots are tender. Remove the thyme and add the parsley. Season to taste with salt and pepper. Set aside and keep warm.
- Oil the grill grids and add the halibut. Cover and cook on one side until the flesh is opaque throughout, 8 to 10 minutes. (With the lid closed, the delicate halibut does not need to be turned over and cooked on both sides.) Transfer to a warmed platter, grilled side up, surround with the ragout, and serve.
- Cleaning Leeks
- Leeks add an incredible depth of flavor to homemade soups, but they are like sand traps. Trim off the root ends, then make two perpendicular cuts down the entire length of the dark green leaves. Swish the leeks in a bowl of warm water (I find that cold water makes the sand cling), separating the dark green leaves to expose any sand. Then chop them and swish around in a fresh bowl of water. Lift out chopped leeks with your fingers, allowing any sediment to sink to the bottom of the bowl

- Rather than the tedious three-step method of shelling, blanching, and peeling fava beans, try this time-saver from Paula Wolfert.
- Place unshelled fava beans in a steamer rack over boiling water; cover and cook until wilted, about 15 minutes. Remove from the steamer and let cool to the touch. Remove the pods, then remove the skin from each fava bean.
- If the beans will be cooked further, cut back a bit on the steaming time so the beans will be slightly undercooked when skinned.
