2 cups all-purpose flour
1 cup white sugar
1 tsp baking soda
1/2 cup chopped walnuts
1/2 tsp ground cloves
1 egg
1/2 cup applesauce
1 juice (lemon)
1 tsp vanilla extract
3/4 cup dried cranberries
1 lemon (zest)
1/4 cup softened butter
2 tbsps confectioners' sugar

Steps:

  • 1.Preheat an oven to 350 degrees F (175 degrees C). Grease 2 baking sheets. 2.Mix the flour, sugar, baking soda, walnuts, and cloves together in a large mixing bowl. Beat the egg, applesauce, lemon juice, vanilla, cranberries, lemon zest, and butter together in a separate bowl with an electric hand mixer; pour into the flour mixture and mix well. Drop spoonfuls of the dough 2 inches apart onto the prepared baking sheets. 3.Bake in the preheated oven until the edges are golden, about 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely. Dust with the confectioners' sugar to serve.

Number Of Ingredients 8

2 cups all-purpose flour
3/4 cup Dutch cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups (2 sticks plus 4 tablespoons) unsalted, butter room temperature
2 cups sugar, plus more for dipping
2 large eggs
2 teaspoons pure vanilla extract

Steps:

  • Sift together flour, cocoa powder, baking soda, and salt. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter, 2 cups sugar, and eggs on medium speed until light and fluffy, about 2 minutes. Add vanilla, and mix to combine. Gradually add dry ingredients, and combine with mixer on low speed. Cover bowl with plastic wrap, and chill until dough is firm, about 1 hour.
  • Preheat the oven to 350 degrees. Line baking sheets with Silpat baking mats. Roll dough into 1-inch balls. Dip top of each ball into sugar. Place on prepared baking sheets about 1 1/2 inches apart. Bake until set, about 8 minutes. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

This recipe for spice cookies came to The Times from Claire Will of San Francisco after a callout for favorite holiday recipes. At first, it seemed rather plain Jane, but the hefty dose of ground cloves (3/4 teaspoon) was what lured me into testing it, and I have to admit I was skeptical. I was soon a believer. Of the five kinds of cookies I served to a group at a holiday party, those crisp-edged, soft-centered beauties were the first to vanish. One friend texted on his way home, "send recipe for spice cookies a.s.a.p."

1 cup/225 grams unsalted butter (2 sticks), softened
1 cup/200 grams granulated sugar
1/4 cup/60 milliliters molasses
1 large egg
1 3/4 cups plus 2 tablespoons/240 grams all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon ground cloves
1/2 teaspoon fine sea salt
3 3/4 cups/460 grams confectioners' sugar
1 teaspoon vanilla extract
3 tablespoons heavy cream or milk, more as needed
1 to 2 tablespoons Irish whiskey, optional

Steps:

  • Heat oven to 375 degrees. Line several baking sheets with parchment paper or nonstick liners.
  • Using an electric mixer, beat 12 tablespoons butter with the granulated sugar, molasses and egg until fluffy, about 2 minutes. Slowly beat in flour, baking soda, spices and salt.
  • Shape dough into walnut-size balls and place 2 inches apart on baking sheets. Bake until firm, about 10 to 12 minutes. Let cool on wire racks.
  • To make the icing, beat remaining 4 tablespoons butter with the confectioners' sugar until smooth. (Go slowly so you don't create a sugar storm.) Beat in the vanilla and enough cream or milk, and whiskey (if using), to make a spreadable frosting. Slather on fully cooled cookies.

My grandmother made these in her woodstove oven and I have always guessed at the cooking temperature and cooking times. As is usual with lots of older recipes no exact amount of flour was listed either.

1 cup white sugar
½ cup shortening
1 teaspoon baking soda
2 teaspoons cream of tartar
¼ teaspoon ground nutmeg
¼ teaspoon salt
2 cups all-purpose flour
⅓ cup granulated sugar for decoration
¾ cup sweetened condensed milk

Steps:

  • Mix all ingredients, except flour. Add enough flour to make a rollable dough, about 2 cups.
  • Roll out to approximately 1/2 inch thick. Cut with round biscuit cutter and sprinkle with sugar.
  • Bake in a preheated 350 degree F (175 degree C) oven for 8 - 10 minutes.

scant 1/2 cup sweet butter
1/4 cup soft brown sugar
1/4 cup superfine sugar
1 egg, lightly beaten
a few drops of vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons milk (optional)
1/2 cup shelled hazelnuts, coarsely chopped
2 ounces semisweet chocolate, coarsely chopped
salt

Steps:

  • Preheat the oven to 350°F. Cream the butter with both types of sugar in a bowl, then beat in the egg and vanilla. Combine the flour, baking powder and a pinch of salt in another bowl, then sift into the creamed mixture, beating constantly with a wooden spoon. If necessary, soften the mixture with a little milk. Stir in the hazelnuts and chocolate. Place about 15 tablespoons of the mixture, spaced well apart, on an ungreased cookie sheet and bake for about 7-8 minutes. Remove the cookie sheet from the oven and let cool slightly, then remove the cookies with a spatula and let cool on a wire rack. Cook the remaining mixture in the same way.

Everyone loves these gingerbread cookies that my grandmother makes, and now I also bake for our christmas cookie trays. They have a nice taste to them and don't get too hard like other recipes (that is, if you roll them out thick enough!)

1/3 cup shortening
1 cup brown sugar
1 1/2 cups dark molasses
2/3 cup cold water
6 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon allspice
1 teaspoon ginger
1 teaspoon clove
1 teaspoon cinnamon

Steps:

  • MIX shortening, brown sugar, and molasses thoroughly.
  • STIR in water.
  • MEASURE flour by dip-level method.
  • BLEND all dry ingredients.
  • STIR in and chill.
  • ROLL 1/2 inch thick
  • Cut with 2-1/2 inch round cutter.
  • Place far apart on a lightly greased baking sheet.
  • Bake at 350 degrees for about 15 minutes or until to imprint remains when touched lightly.
  • Frost with any buttercream frosting of your choice. We use the one on the back of the 10x sugar (some of you may know what I am talking about!).
  • I am not sure to how many gingies this yields because I used a different cookie cutter, however, this recipes makes A LOT.

Steps:

  • Melt butter in a large saucepan over medium heat; add sugar, milk, and cocoa powder. Bring mixture to a boil, about 5 minutes; stir in peanut butter until melted, about 5 minutes. Return mixture to a boil and turn heat to low; simmer, stirring constantly, for 2 minutes. Remove saucepan from heat; stir in vanilla extract.
  • Fold oats into mixture until thoroughly mixed. Drop mixture by spoonfuls onto a sheet of waxed paper; cool to room temperature.
