3 russet potatoes
2 tablespoons olive oil
2 teaspoons salt
1 cup shredded cheddar cheese, plus more for topping
½ cup scallions, chopped
¾ cup bacon, chopped, divided
½ cup sour cream, plus more for topping
1 tablespoon butter
¼ cup milk
1 teaspoon pepper
chive, to serve

Steps:

  • Preheat the oven to 350°F (180°C).
  • Carefully pierce potatoes with a fork. On a baking sheet oil the potatoes well and sprinkle with salt.
  • Bake for one hour. If making more potatoes, an additional 15 minutes per potato is needed.
  • Once cooled, cut the potatoes vertically, scoop out the inside, and transfer to a bowl.
  • In the bowl with the scooped out potato, add the cheese, scallions, ½ cup (110 g) of bacon, sour cream, butter, milk, and pepper, and mix well.
  • Scoop the potato mixture back into the hollowed-out potatoes and top with cheddar cheese and remaining ¼ cup (55 G) of bacon bits.
  • Bake an additional 15 minutes until the cheese is melted.
  • Serve warm with sour cream and chives.

You can never go wrong with gorgonzola, blue cheese and bacon!!

4 large baking potatoes
4 slice bacon
2/3 c milk
2 Tbsp butter
1/2 c crumbled gorgonzola
4 medium green onions, sliced
1/2 tsp salt and pepper

Steps:

  • 1. Heat oven to 375. Clean potatoes, but do not peel. Pierce with fork. Place on rack and bake for 1 hour 15 minutes. Let stand until cool enough to handle.
  • 2. Cook bacon over medium heat 5-6 minutes, turning occasionally, until crisp.
  • 3. Cut each potato lengthwise and scoop out inside. Leaving a thin shell. Mash potatoes, milk and butter until no lumps. Sir in cheese, green onions and salt and pepper. Fill potato shells with mashed mixture, place on un-greased cookie sheet. Crumble bacon onto potatoes.
  • 4. Bake 20 miutes or until hot.

4 large baking potatoes
8 slices bacon
1 cup sour cream
½ cup milk
4 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes in preheated oven for 1 hour.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
  • Bake for another 15 minutes.

Here's a creative way to dress up your morning hash browns, and if you bake the potato the night before, all you need to do in the morning is make up the egg mixture and then quickly reheat the already cooked potatoes in the microwave!

1 large russet potato
2 large egg
1/2 cup(s) gorgonzola cheese
4 tablespoon(s) salsa, chunky
SALT AND PEPPER TO TASTE

Steps:

  • Preheat oven to 400°F. Scrub potato, then pierce several times with a fork. Rub the skin with olive oil and a bit of salt. Place directly on the middle rack of the oven, with a pan underneath to catch any drippings. Bake for 1 to 1-1/2 hours, until cooked through and soft. Let the potato cool slightly, then cut potato in half lengthwise. Use a spoon to scoop out the insides of each half, leaving about 1/4" layer of potato on the skin. Transfer the scooped out potato to a small bowl and mash with a fork. Scramble eggs in a non-stick skillet until almost done but still slightly wet. Transfer the eggs to the bowl with the mashed potato. Add cheese and season to taste with salt and pepper, then mix thoroughly. Spoon the mixture into the shelled out potato skins. Heat potatoes in a microwave on high for 30 seconds to 1 minute, until potatoes are hot, cheese is melted, and eggs are completely cooked. Spoon salsa on top, then serve (with additional salsa on the side, if desired).
  • VARIATIONS: Try adding black beans and spicy cheese, or bacon and sausage, or spinach and bell peppers.

1/2 cup cream cheese spread

1 cup shredded sharp Cheddar cheese (4 oz)
6 slices bacon, crisply cooked, crumbled
2 green onions, chopped
1/2 teaspoon table salt
1/2 teaspoon pepper

Steps:

  • Heat oven to 425°F. Prick potatoes with fork; place in 1-gallon resealable food-storage plastic bag. Add oil and kosher salt; seal bag and turn to coat potatoes. Place potatoes on cookie sheet. Bake 1 hour or until tender. Cool.
  • Reduce oven temperature to 350°F. Cut thin slice off top of each potato; discard. Scoop pulp into large bowl, leaving shells intact. Add cream cheese, butter and milk to pulp in bowl; mash with potato masher or electric mixer on low speed. Stir in cheese, bacon, onions, table salt and pepper. Spoon into potato shells. Return to cookie sheet.
  • Bake 30 minutes or until thoroughly heated.

½ pound lean bacon
¾ cup shredded mild Cheddar cheese
½ cup sour cream

1/4 cup milk, warmed
1 cup shredded cheddar cheese (about 4 ounces)
2 scallions, thinly sliced, plus more for topping
1 tablespoon chopped fresh parsley
Kosher salt and freshly ground pepper
4 large eggs

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Pierce the potatoes in a few places with a fork; place on a microwave-safe plate and microwave, turning halfway through, until tender, about 16 minutes. Set aside until cool enough to handle.
  • Meanwhile, cook the bacon in a large nonstick skillet over medium heat, turning occasionally, until crisp, 9 to 11 minutes. Drain on paper towels, reserving the drippings. Roughly chop 4 slices and break the other 2 slices in half; set aside.
  • Slice off the top 1/4 inch of the potatoes lengthwise. Scoop the flesh from 3 potatoes into a medium bowl, leaving a 1/4-inch-thick shell. Repeat with the remaining potato but discard the flesh. Add 2 tablespoons of the reserved bacon drippings and the warmed milk to the bowl and mash with a potato masher or fork until smooth.   • Season the inside of the potato skins with salt and pepper. Divide the filling among the skins, then press the back of a spoon down the center of the filling to create a long, deep well. Brush the outside of the skins with the remaining bacon drippings and transfer to the baking sheet.
  • One at a time, crack an egg into a ramekin or teacup, then carefully pour into each potato (it's OK if some of the egg white overflows). Transfer to the oven and bake until the whites are set, 20 to 25 minutes. Season with salt and pepper and top with more scallions and the halved bacon strips.
