Steps:
- Spray a 3 quart saucepan with cooking spray and place over medium heat until pan is very hot, but not smoking. Add ginger root and ground cumin and cook for 1 minute.
- Add 4 cups water and bring to a boil. Stir in rice and salt. Reduce heat to low; cover and cook 15-18 minutes until all water is absorbed and rice is tender.
- Stir in lime juice and zest.

- Combine rice and ginger rounds in large saucepan. Add broth; sprinkle with salt. Bring to boil, stirring often. Cover; reduce heat to low. Simmer until rice is tender and broth is absorbed, about 18 minutes. Meanwhile, combine chopped cilantro, green onion, and minced ginger in mini processor. Add both oils and 1 teaspoon vinegar. Blend until almost smooth. Season cilantro oil to taste with salt, pepper, and more vinegar, if desired.
- Transfer rice to bowl. Remove ginger rounds. Mix in cilantro oil and serve.

- Bring 2 1/2 cups water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes. Set aside.
- Puree lemongrass, 2 tablespoons water, 1 tablespoon oil, ginger, jalapeno pepper, shallot, and garlic in a food processor.
- Heat remaining 1 tablespoon oil in a large skillet over medium-high heat; tilt skillet to coat with hot oil. Add pureed mixture to the skillet and cook until fragrant, 2 to 3 minutes. Add cooked rice and mix well.

- Whisk ginger, garlic, orange juice, vegetable oil, coconut aminos, lemon juice, and sesame oil in a small bowl; season with salt and set aside.
- Trim about ½" from woody end of broccoli stem. Peel tough outer layer from stem. Cut florets from stems and thinly slice stems about ½" thick. Break florets apart with your hands into 1"–1½" pieces.
- Heat 2 Tbsp. oil in a large nonstick skillet over medium. Working in 2 batches if needed, arrange broccoli in a single layer and cook, tossing occasionally, until broccoli is bright green and lightly charred around the edges, about 3 minutes. Transfer to a large plate.
