Steps:
- In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into four patties., Grill burgers, covered, over medium heat or broil 3 in. from the heat for 4-7 minutes on each side or until a thermometer reads 160° and juices run clear. Top with cheese. Grill 1 minute longer or until cheese is melted. Serve on buns with bacon and toppings of your choice.

- Preheat a grill for high heat.
- Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
- Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

This burger came to me in a daydream and I just happened to have enough ingredients to make it work. It is incredibly juicy and the flavors harmonize very well together. If you enjoy a good pub-style burger, this one's definitely for you! Add whatever condiments you prefer.

- Place bacon in a large skillet and cook over medium-low heat, turning occasionally, until evenly browned, about 5 minutes. Drain bacon bits on paper towels.
- Preheat an outdoor grill for medium heat, 300 degrees F (150 degrees C) to 325 degrees F (165 degrees Fahrenheit). Lightly oil the grate.
- Separate ground beef into 1/4-pound portions. Mix bacon and green onions in a bowl and press onto either side of ground beef, working it in until mixture has an even consistency. Shape mixture into patties. Mix garlic salt and ground black pepper in a bowl and rub on both sides of the patties. Press a small indentation into the center of each patty.
- Place burgers on the preheated grill and pour 1/2 tablespoon of steak sauce into each indentation. Grill burgers for 5 minutes. Flip and add 1/2 tablespoon of steak sauce to the center of each burger. Top each with a slice of Cheddar cheese and grill until cheese is melted and burger has reached desired degree of doneness, about 4 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Meanwhile, begin toasting hamburger buns on the grill rack.
- Remove burgers and buns from the grill once the cheese has melted. Assemble burgers.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Shape beef into 4 equal patties and season with salt and pepper on both sides.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 10 to 12 minutes. Drain bacon slices on paper towels.
- At the same time, heat olive oil in a pan over medium-high heat. Saute onion slices in the hot oil until softened, 5 to 7 minutes. Remove from heat and set aside.
- Cook patties on the preheated grill until browned and no longer pink, 4 to 5 minutes per side, or to desired doneness. Top each with American cheese and allow to melt, about 1 minute more.

- 1. Pulse the bacon in a food processor, or chop with a knife, until ground. (If using a knife, freeze the bacon for a bit first to make the chopping easier.) 2. Combine the bacon and beef in a bowl, mixing lightly. Divide the mixture into four equal portions. Gently flatten into 1-inch patties and make a thumb-size divot in the middle of each.
- 3. Heat a griddle or large cast-iron pan over medium-high heat. Evenly sprinkle the patties all over with salt and 1/8 teaspoon pepper. Griddle the burgers, turning when the bottom forms a dark brown crust, about 4 minutes. Add 1-ounce cheese on top of each burger and cook for 2 minutes. Cover the pan and turn the heat off. Allow to sit, covered, until the cheese melts, about 1 minute. Place the burgers on the buns, top with lettuce and tomato. Cover with the top buns and serve.

- In a small bowl, mix together curry powder, cayenne pepper, and 2 tablespoons salt until well combined; set spice mixture aside.
- Preheat a grill: If using a charcoal grill, make a fire in your grill. When the charcoals are completely covered in gray ash, hold your hand about 5 inches above the grill grid; count how many seconds you can comfortably leave it there. When you can hold your hand above the grill for 1 to 2 seconds, you have high heat and are ready to grill. If you are using a gas grill, heat the grill for 15 minutes with the lid closed. Before beginning to cook, make sure the knobs are turned to high.
- In a large bowl, using clean hands, mix together brisket and sirloin until well combined; season with salt and pepper. Divide meat equally into 6 balls, and flatten each into a patty about 3/4 inch thick. Sprinkle both sides of each patty with spice mixture, reserving any remaining spice mixture for another use.
- Place burger on grill, directly over heat, cooking for about 3 minutes on each side for medium-rare; top burgers with bacon and cover with cheese during the last minute of cooking.
- Meanwhile, place bacon on grill and cook until crisp, about 1 minute. Place burgers on the bottom half of each bun and top with 2 slices bacon, lettuce, tomatoes, red onion, and ketchup as desired. Top with remaining bun halves and serve immediately. Serve pickles on the side.

- Preheat the oven to 400 degrees F.
- Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
- Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
- Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
- Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
- Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.
BACON CHEESEBURGERS TO DIE FOR
We love how Freda incorporates the flavor of bacon right into the burgers themselves. We opted to use the beef broth and each burger turned out perfectly moist and savory. Next time we may try adding more kinds of cheeses... That's always a good idea, right?! Enjoy.

- Grilling Method: Direct/Medium Heat
- Mix the ground chuck and the ground sirloin together with a fork or with your hands. Season it lightly with salt and pepper, and mix just to combine. You do not want to over-mix the meat.
- Gently shape the ground meat into six burgers of equal size and thickness (about 3/4-inch-thick). Brush both sides of the burgers with oil and season lightly with salt and pepper.
- Place burgers on cooking grate and grill until meat is to the desired level of doneness. The USDA recommends cooking all ground meat until no longer pink, about 10 to 12 minutes, turning once halfway through cooking time.
- Top each burger with a slice of cheese during the last couple of minutes so the cheese will melt. Remove from grill and top each burger with 2 pieces of bacon. Let the burgers rest 2 to 3 minutes to reabsorb the juices.

- Stir mayonnaise and Thousand Island dressing together in a small bowl. Set spread aside.
