GRILLED ITALIAN BURGERS
When all I had available was ground beef and I was tired of plain-old hamburgers, I invented these. A good dose of Italian seasonings and mozzarella makes them unique. They're perfect with homemade French fries for a quick meal. -Rebekah Beyer, Sabetha, Kansas

- In a large bowl, combine 1/2 cup cheese and seasonings. Add beef; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., Grill burgers, covered, over medium heat or broil 4 in. from heat until a thermometer reads 160°, 4-5 minutes on each side. Sprinkle with remaining cheese; grill, covered, until cheese is melted, 1-2 minutes longer. Serve with marinara sauce.

GRILLED ITALIAN BURGERS
Season ground beef with oregano and garlic before grilling it; serve it with a side of giardiniera.

Steps:
- Prepare an outdoor grill for medium-high heat.
- Gently mix the beef, oregano, garlic and 1/2 teaspoon each salt and pepper in a medium bowl until just combined.
- Shape the meat into 4 6-ounce patties, about 5-inches in diameter. Make a slight indentation in the center of each patty and lightly sprinkle the outside of the patties with salt and pepper. Lightly oil the grill grates. Grill to desired doneness, about 4 minutes per side for medium, adding a slice of cheese to each burger during the last minute of cooking.
- Mix the mayonnaise and balsamic vinegar together in a small bowl. Quickly toast the buns on the grill for about 1 minute and then spread with some of the mayonnaise mixture. Top with a burger and then some fresh basil leaves. Serve with giardiniera on the side.
SPICY AND SAVORY BROILED TURKEY BURGERS
These are some of my favorite turkey burgers. They begin with the beautiful trio of onion, garlic, and ginger and are accented with a wide range of spices. Most ground turkey comes in 20-ounce plastic-covered trays, so I usually just peel off the top, dump all the ingredients in, make patties, and throw away the package. No dishes to do, except for the cooking pan and utensil.

- Set an oven rack about 4 to 5 inches from the heat source and preheat the oven's broiler. Lightly spray a broiling pan with cooking spray.
- Combine turkey, onion, garlic, ginger, Worcestershire sauce, seasoned salt, Italian seasoning, cumin, coriander, chili powder, red pepper flakes, and black pepper in a mixing bowl. Mix by hand until uniformly combined. Form into 4 patties and place on the prepared pan.
- Broil until an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C), 6 to 7 minutes per side.

- Combine turkey, basil, garlic, salt, and pepper in a bowl. Divide into 4 equal portions and form into hamburger patties.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill patties for about 4 minutes per side. Place provolone slices on the patties; continue to cook until cheese melts. Place ciabatta rolls on the grill and cook until browned to your liking, 2 to 3 minutes.
- Mix mayonnaise and pesto in a small bowl until thoroughly combined. Spread onto the rolls. Place the turkey patties on the rolls and top with sliced red onion and lettuce.

PERFECT GRILLED BURGERS

- Preheat a grill to medium high. Form ground beef (preferably chuck) into 6-ounce patties and make an indentation in each. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. - Mix first 4 ingredients in large bowl. Season with pepper. Divide mixture into quarters. Shape each into 3/4-inch-thick party. Mix tomatoes and mayonnaise in small bowl to blend. (Can be prepared 1 day ahead. Cover patties and tomato mayonnaise separately and chill.)
- Prepare barbecue (medium-high heat). Grill burgers, onions and peppers until burgers are cooked through and onions and peppers are lightly charred, turning occasionally, about 10 minutes. Move peppers and onions to cool side of grill. Top burgers with cheese. Place rolls on grill cut side down. Cover with lid and cook until cheese melts and buns are heated through, about 2 minutes. Transfer buns to plates. Spread 3/4 tablespoon mayonnaise mixture over each bun half. Top with burger, then bell pepper and onion. Cover with top half of buns and serve.
BROILED BURGERS ITALIAN-STYLE

- Preheat the broiler to high.
- Put the beef in a mixing bowl and set aside.
- Heat the butter in a saucepan and add onion and garlic. Cook, stirring occasionally, until wilted. Let cool.
- Add onion mixture to the beef. Add salt and pepper, and blend well with the fingers.
- Divide the mixture into 4 equal portions and shape into patties, each about an inch thick.
- Cut away and discard the core of the tomato. Cut into 4 slices, each about the same size. Sprinkle with salt and pepper. For each tomato slice, cut one anchovy fillet in half crosswise and arrange the halves on the slice in a cross. Brush with a little oil from the anchovy can.
- Arrange patties on a grill for broiling.
- Place the rack under the broiler with top of patties about 4 inches from the heat source. Broil 2 to 3 minutes, then turn patties. Place under broiler once more, leaving the broiler door open. Let broil 2 to 3 minutes. Top each patty with a slice of mozzarella. Center one anchovy-topped tomato slice on each patty. Place under broiler and let broil 2 minutes longer with door closed.
