CHINESE SWEET PORK

Chinese Sweet Pork image

This was the first recipe I tried from a recipe book (it's called Bowl Food). This dish has a very distinctive taste and my dinner guests always love it. If you can't get Asian shallots, use onions instead. 'Ketjap manis' is a sweet Indonesian soy sauce which you should be able to get at an Asian supermarket.

Categories     Pork

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 7

850 g pork belly (or pork spareribs)
1/2 cup grated palm sugar or 1/2 cup soft brown sugar
4 red shallots, sliced
1 tablespoon fish sauce
1 tablespoon ketjap manis
1/2 teaspoon white pepper
1/3 cup fresh coriander leaves

Steps:

  • Remove the bone and outer rind from the ribs/pork belly, and cut into 1 cm slices.
  • Place sugar in a wok or saucepan and stir over low heat until the sugar dissolves.
  • Increase to medium heat and boil, without stirring, for 5 minutes, or until the sugar turns an even, golden brown.
  • Add the pork and shallots and stir to coat.
  • Add the fish sauce, kecap manis, pepper and 1 cup (250ml) warm water.
  • Stir until all sugar has melted.
  • Cover and cook for 10 minutes, stirring occasionally, then cook, uncovered and stirring often, until the sauce is sticky and the meat is cooked.
  • If there is too much liquid, spoon some out. Basically the sauce should reduce to a thick glaze.
  • Garnish with coriander - this really adds to the flavour of the dish.
  • Serve with rice.

CHINESE-STYLE GLAZED PORK BELLY RECIPE BY TASTY

Chinese-style Glazed Pork Belly Recipe by Tasty image

This Chinese-style pork belly is sweet, salty, and perfectly tender. Slowly cooking the pork in a flavorful mixture of garlic, ginger, and brown sugar gives it that signature sticky-sweet glaze that pairs perfectly with salty soy sauce. Serve it over rice for the ultimate dinner and forget you ever wanted to order take-out.

Provided by Alvin Zhou

Categories     Dinner

Time 1h

Yield 2 servings

Number Of Ingredients 12

20 oz pork belly, lean
4 cups water, plus 250 milliliters, divided
4 slices of fresh ginger
1 spring onion, cut into 2-inch (5 cm) pieces
2 cloves garlic, crushed
2 tablespoons oil
2 tablespoons brown sugar
3 tablespoons light soy sauce
3 tablespoons dark soy sauce
3 tablespoons shaoxing rice wine
cooked rice, for serving
sliced green onion, for serving

Steps:

  • Cut the pork belly into roughly 1-inch (2 ½ cm) cubes.
  • Bring 1 liter of water to a boil in a pot, then add the pork, ginger, onion, and garlic, and cook for 3-4 minutes.
  • Remove the pork from the water using a slotted spoon and drain on a plate lined with a paper towel. Discard the remaining water and vegetables.
  • Clean and dry the pot, then return it to high heat and add the olive oil. Return the pork to the pan and cook until browned. The oil may pop and splatter, so be careful.
  • Add the brown sugar, then reduce the heat to low. Stir continuously until the sugar has melted, caramelized, and coated the pork evenly.
  • Immediately add the soy sauces and rice wine, stirring continuously for 5-6 minutes more, or until the liquid has reduced to a thick glaze.
  • Add the remaining 250 milliliters of water. Stir, cover, and simmer for about 45 minutes. Make sure the mixture is at a low simmer, not boiling. Stir every 10 minutes or so, adding more water if the pot is getting dry.
  • Remove the lid. The sauce should coat the pork in a very thick glaze. If it is too runny, continue to stir, uncovered, until the liquid has reduced.
  • Serve immediately over a bowl of rice and sprinkle with sliced green onions.

SWEET AND SOUR PORK III

Sweet and Sour Pork III image

My husband's grandmother was Chinese. She taught me this one. This is the way Gramma made Sweet and Sour all her life (she died 6 years ago at age 94). The secret is apple cider vinegar.

  • The sweet and sour pork marinate. Cut the pork into bite-size, about 2.5 cm (*1-inch) in length. Most Chinese restaurants use pork belly, but other cuts of pork, such as pork loin, pork shoulder, or collar butt, are less fatty.
  • Prepare the dry coating for deep frying. Prepare the dry coating as indicated in the note section of the recipe. The dry coating helps crisp up the crust form on the surface, making it highly crispy and able to withstand the moisture from the sauce drizzling on it while serving.
  • Cut the vegetables into bite-size. Fresh vegetables provide an excellent contrast to the deep-fried pork and the sauce with a strong savory flavor. The most common vegetables for Chinese sweet and sour pork are cucumbers, onions, and fresh pineapple.
  • Make the sweet and sour sauce. The sweet and sour sauce sets apart one recipe from another. Although you can prepare the sweet and sour sauce by combining only rice vinegar and sugar, it definitely can formulate with various ingredients to get more flavors.
  • Combine all the ingredients. Heat a tablespoon of cooking oil into the wok. Saute the onion, followed by pineapple and cucumber, and stir-fry for half a minute.
