Daddy's Fried Corn and Onions image

Combining my two favorites, fried onions and fresh corn, my husband came up with this very simple, delicious side dish.

4 ears fresh corn
2 tablespoons butter
1 small sweet onion, diced
salt and pepper to taste

Steps:

  • Cut corn kernels from cob. Melt butter in a medium skillet over medium heat. Saute corn kernels just until tender, then mix in onion. Continue to saute until onion is just beginning to turn crispy. Season with salt and pepper. Enjoy warm or cold.

Fried Fresh Corn and Onion image

Sometimes simple is the best, my family loves this when corn season comes around --- to make things easier use an electric knife to remove the corn from the cob, chili powder is also good to use in place of cayenne, you can also add in 1-2 tablespoons fresh minced garlic or 1/2 teaspoon garlic powder in with the onion if desired :)

4 large ears of corn (husks and silks removed)
3 tablespoons butter (no subs!)
2 -4 teaspoons sugar
1 pinch cayenne pepper (optional)
1 medium vidalia onion, finely chopped (not minced)
1/2 teaspoon salt (or to taste)
fresh ground black pepper (to taste)

Steps:

  • Using a sharp knife remove the corn kernels from the cob (I use my electric knife).
  • Melt the butter in a large skillet over medium heat.
  • Add in the corn, sugar and cayenne pepper; stir cooking for about 10 minutes.
  • Add in chopped onions and continue to cook until crispy.
  • Season with salt and ground lots black pepper.

This Fried Corn and Onion recipe might be the best-tasting vegetable side dish I've ever had! If you love sautéed onions and corn, this is the perfect, simple side dish you can whip up in less than 10 minutes!

4 ears fresh corn
1 small sweet onion (finely chopped)
1 clove garlic (minced)
2 tablespoons butter
salt and pepper to taste

Steps:

  • Remove corn kernels from cob using a sharp knife.
  • Add corn, onion, garlic and butter into a skillet over medium high heat. Cook until butter is melted and corn and onion are lightly browned, about 5-7 minutes.
  • Sprinkle salt and pepper on top to flavor, and then serve.

1 cup flour
1 cup cornmeal
2 eggs
3 tablespoons sugar
2 teaspoons salt
4 teaspoons baking powder
2 cups milk
1 medium onion
1/4 cup butter

Steps:

  • Chop the onion and sautee it in the skillet with the butter.
  • (It's more butter than you need for the onion, but it will all go into the mix.) In a bowl, fully mix the dry ingredients.
  • Separately, beat the eggs with the milk.
  • Combine the egg and milk mixture and the sauteed onions and butter with the dry ingredients.
  • Pour the mix into the skillet.
  • Place the skillet in a 400 degree oven and bake for about 20 minutes.
  • Enjoy it with honey.
