1/2 cup butter
1 cup whipping cream
1 tablespoon sugar
1 teaspoon salt

Steps:

  • Place corn in large skillet and turn on medium heat.
  • Add butter, whipping cream, sugar, and salt.
  • Stirring constantly, heat until most of whipping cream and butter is absorbed into corn.

8 slices bacon, chopped
4 cups fresh sweet corn (about 8 ears)
1 small white onion, chopped
1 fresh jalapeno pepper, sliced
1 (8 ounce) package cream cheese, cubed
1/2 cup milk
1 teaspoon sugar
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Cook bacon until crisp.
  • Remove bacon and drain, reserving 2 tablespoons drippings in skillet.
  • Saute corn, onion, and pepper in dripping in skillet over medium heat, until tender.
  • Add cream cheese and milk, stirring until cream cheese melts.
  • Stir in sugar, salt, pepper.
  • Top with bacon.

Country Fried Corn image

This has been a staple at Miss Mary Bobo's Boarding House in Lynchburg, Tennessee for over 100 years. Use only fresh corn for best results. I have not made this so cook times are only estimates.

6 ears corn
3 slices bacon
2/3 cup water
2 tablespoons sugar
1/4 cup milk
2 teaspoons cornstarch
1 tablespoon butter
salt

Steps:

  • Scrape kernels of corn off the cob using a sharp knife. Be sure to get as much liquid from the cob as possible. Set aside.
  • In a heavy skillet cook the bacon until crisp; remove from skillet and crumble. Set aside.
  • Stir corn into hot bacon drippings. Add water and sugar.
  • Cook, stirring constantly, until mixture begins to thicken.
  • Gradually stir milk into cornstarch until smooth. Add to corn.
  • Cook over low heat until thickened.
  • Stir in butter and salt.
  • Top with crumbled bacon before serving.

Steps:

  • Preheat grill to medium-high heat.
  • Husk corn; remove silk.
  • Rinse corn.
  • Wrap each ear in foil.
  • Grill corn 15 to 20 minutes, or until tender, turning ocassionally.
  • Remove corn from grill and unwrap.
  • Mix butter and choice of add-in options.
  • Spread onto corn.
  • Makes 4 servings of 1 ear of corn for each serving.
