This comforting second-time-around casserole from Lois Koogler of Sidney, Ohio is perfect for a family supper or potluck. "With its appealing crunch from water chestnuts, almonds and chow mein noodles, this economical main dish is enjoyed by all," she assures.

2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 cup 2% milk or chicken broth
4 cups cubed cooked turkey
2 celery ribs, thinly sliced
1 small onion, chopped
1 can (8 ounces) sliced water chestnuts, drained and halved
1 tablespoon reduced-sodium soy sauce
1 can (3 ounces) chow mein noodles
1/2 cup slivered almonds

Steps:

  • In a large bowl, combine soup and milk. Stir in the turkey, celery, onion, water chestnuts and soy sauce. , Transfer to a greased shallow 2-qt. baking dish. Sprinkle with noodles and almonds. Bake, uncovered, at 350° for 30 minutes or until heated through.

1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped onion
1 tablespoon lemon juice
1/4 teaspoon white pepper
3 cups cubed cooked turkey
1 1/2 cups cooked yellow rice
2 celery ribs, chopped
0.5 (4 ounce) can sliced water chestnuts, drained
3/4 cup sliced almonds
1 cup crushed Club crackers
1/4 cup butter or 1/4 cup margarine, melted
1/4 cup sliced almonds

Steps:

  • In a large bowl, combine the soup, mayo, sour cream, onion, lemon juice and pepper.
  • Stir in the turkey, rice, celery, water chestnuts and almonds.
  • Transfer to a greased glass baking dish.
  • Combine topping ingredients and sprinkle over turkey mixture.
  • Bake, uncovered at 350, for 35-40 min or until bubbly and golden brown.

This tastes so good, it's almost sinful! It's a bit costly though and very rich. I first had it at a church luncheon when I was a teenager.

2 cups flour
6 ounces cream cheese
1/2 teaspoon salt
1/2 cup margarine
1/2 cup milk or 1/2 cup water
4 tablespoons margarine
1 large chopped onion
1/2 lb sliced mushrooms
1/2 cup slivered almonds
2 (13 ounce) cans worthington deli turkey, cut into bite-sized pieces
1/2 teaspoon poultry seasoning
1 cup sour cream
2 (10 ounce) cans cream of mushroom soup
1/2 teaspoon garlic powder
1/2 teaspoon thyme
1/2 teaspoon onion powder
4 tablespoons melted margarine
1 cup coarse breadcrumbs

Steps:

  • Line a 9 by 14-inch baking pan with the pastry.
  • Saute onion and mushrooms in margarine.
  • Stir in nuts and remaining ingredients except breadcrumbs and rest of melted margarine.
  • Pour into pastry. Fold pastry over and make a rolled crust completely around pie.
  • Toss breadcrumbs with melted margarine and sprinkle on top.
  • Bake at 425 degrees for 20 to 25 minutes.
