Though I love mashed potatoes, I've always thought of them as a fairly laborious thing to make.

Number Of Ingredients 7

3 lb. Russet Potatoes, Peeled And Cut Into Small Chunks
1 c. Chicken Broth (see Note)
4 tbsp. Unsalted Butter; Cut Into Pats
1 1/2 tsp. Salt
1/2 c. Sour Cream
Chives Or Scallions, For Garnish
Heavy Cream Or Milk, To Taste (optional)

Steps:

  • Combine potatoes, chicken broth (see note below), butter, and salt in a slow cooker. Stir together, then cover and cook on high for 3-4 hours, until potatoes are tender and fluffy-looking. Mash with a potato masher or fork (or put them through a potato ricer, for super smooth potatoes), then add sour cream, chives or scallions, heavy cream or milk, or whatever ingredients you'd like. Season to taste, then serve and enjoy!Note: I used unsalted chicken broth. If you use full salt, reduce the salt to 1 teaspoon, then season to taste at the end. If you wish to skip the chicken broth, substitute water instead.

5 pounds potatoes (russet, yellow, or red), peeled and cut into 1- inch cubes
1 1/2 cups chicken broth
1 tablespoon minced garlic
3 chicken bouillon cubes or 3 teaspoons Better Than Bouillon
2/3 cup half and half
3/4 cup butter, cubed at room temperature
8 ounces cream cheese, room temperature
Fresh cracked black pepper to taste

Steps:

  • Place the potatoes in your 6-8 quart slow cooker. Add in the chicken broth, garlic, and chicken bouillon. Cover and cook on high for 3-4 hours, or on low for 6-8 hours, stirring once halfway through cooking.
  • When potatoes are done, add in the half and half, butter, and cream cheese. Mash using a potato masher or hand mixer until desired consistency is reached. You can add more half and half if you prefer creamier potatoes. Season with black pepper as desired.
  • Serve immediately, or keep warm in slow cooker until ready to serve, up to 2 hours.

5 pounds russet potatoes, peeled, cut into 1-inch chunks
1 cup (2 sticks) salted butter, cut into cubes, divided 1/2 cup and 1/2 cup
1 (32-ounce) carton chicken broth
1 (8-ounce) package cream cheese, softened, cut into cubes
1/4 cup whole milk or more, to taste
Salt and freshly ground black pepper to taste
2 tablespoons minced Italian parsley

Steps:

  • Place the potatoes into the bottom of a 6-quart Crock-Pot or slow cooker.
  • Dot the potatoes with half of the cubed butter.
  • Pour chicken broth over the potatoes.
  • Cover and cook on high for four to five hours. Potatoes are ready when they are fork-tender.
  • Carefully drain the excess broth from the cooked potatoes.
  • Place potatoes back into the Crock-Pot.
  • Add in remaining stick of cubed butter, cream cheese and milk. Season with salt and pepper to taste.
  • Mash the potatoes with a potato masher until smooth. Add more milk if needed.
  • Cover and keep the mashed potatoes on the warm setting until ready to serve.
  • Just before serving, garnish with minced parsley.

1 tablespoon minced garlic, or to taste
3 cubes chicken bouillon
1 (8 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
½ cup butter
salt and pepper to taste

Steps:

  • In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water. In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency.
  • Transfer the potato mixture to a slow cooker, cover, and cook on Low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste.

I usually make this the night before Thanksgiving or Christmas and store it in the refrigerator in the insert of my slow cooker. It frees up my holiday to enjoy with family and is delicious!

5 pounds potatoes, peeled
1 (8 ounce) package cream cheese, softened
½ cup half-and-half, or more as needed
2 egg whites, slightly beaten
⅓ cup chopped fresh chives
2 teaspoons onion powder
nonstick cooking spray
salt and ground black pepper to taste
¾ cup butter, divided

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil over high heat. Reduce heat to medium-low and simmer until fork tender, 20 to 25 minutes. Drain water and place pot with potatoes back over medium heat until potatoes are dry, 1 to 2 minutes.
  • Mash potatoes using a hand mixer until smooth. Stir in cream cheese, half-and-half, egg whites, chives, onion powder, salt, and pepper. Blend well.

12 tablespoons (1 1/2 sticks) unsalted butter, cut into 1/2-inch cubes

2 tablespoons sliced chives

Steps:
