SHRIMP AND PORK TACOS WITH TOMATO SALSA AND CREAMED AVOCADO



Shrimp and Pork Tacos with Tomato Salsa and Creamed Avocado image

Number Of Ingredients 28

1 teaspoon vegetable oil
12 ounces ground pork
1 shallot, diced
1 clove garlic, diced
1 green chile, chopped
2 tablespoons ground cumin
2 teaspoon smoked paprika
15 (21/25 count) shrimp, shelled, deveined and coarsely chopped
1/2 cup canned water chestnuts, rinsed, drained and diced
Pinch sugar
2 tablespoons chopped fresh cilantro stems
Zest and juice of 1 lime
Salt
3 plum tomatoes, diced
2 green onions, chopped
Juice of 1/2 lime
1/4 bunch fresh cilantro, leaves picked and stems chopped
Pinch sugar

2 avocados, halved, pitted, peeled and chopped
Juice of 2 1/2 limes
1/4 bunch green onion, chopped
2 tablespoons sugar
1/4 cup sour cream
Salt
8 soft tortilla shells, warmed over grill or in microwave for 30 seconds
Fresh cilantro sprigs, for garnish

Steps:

  • For the shrimp and pork filling: In a cast iron pan, heat the vegetable oil over medium heat. Place the pork in the pan and saute until brown and caramelized.
  • Once the pork has browned, add the shallots, garlic, and chiles, cook for 1 to 2 minutes.
  • Add the cumin and smoked paprika and stir. Add the shrimp and stir. Once the shrimp has turned pink, add the water chestnuts and stir. Add the sugar, cilantro stems, lime zest and juice, remove from heat.
  • For the tomato salsa: Put the tomatoes and green onions in a small bowl. Add the lime juice, cilantro leaves and stems and mix. Season the salsa with sugar and salt.
  • For the creamed avocado: Put the avocados in a bowl, add the lime juice and chopped green onion. Add the sugar and sour cream. Mash until the mixture is incorporated. Season with salt.
  • To assemble the shrimp and pork tacos: Place the tortilla shells on a plate. Divide the pork and shrimp filling among the tortilla shells. Spoon the filling in the center of the taco.
  • Spoon the creamed avocado and tomato salsa over the tortilla shells. Garnish with cilantro.

8 ounces fresh tomatillos, husked, rinsed, coarsely chopped
2 serrano chiles, seeded, coarsely chopped
2 tablespoons chopped white onion
2 tablespoons coarsely chopped fresh cilantro

Steps:

  • Combine all ingredients in processor. Using on/off turns, process until chunky puree forms. Transfer to medium bowl. Season with salt. (Can be made 4 hours ahead. Press plastic wrap directly onto surface of salsa and chill.)

1 tablespoon ground allspice
1 tablespoon cayenne
3 (3/4-pound) pork tenderloins
1 tablespoon oil

Steps:

  • Preheat oven to 400°F.
  • Stir together salt, allspice, and cayenne. Pat pork dry and sprinkle spice rub all over pork, pressing to adhere.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown pork, 1 tenderloin at a time, on all sides, about 1 minute each. Transfer as browned to a large roasting pan and arrange 2 inches apart.
  • Roast in middle of oven until an instant-read thermometer inserted diagonally 2 inches into center of each tenderloin registers 155°F, 20 to 25 minutes. Let pork stand 5 minutes before slicing.

1/2 cup lime juice
1/4 cup finely chopped seeded jalapeno peppers

3 tablespoons jalapeno pepper jelly
SALSA:
2 medium ripe avocados, peeled and chopped
1 small cucumber, seeded and chopped
2 plum tomatoes, seeded and chopped
2 green onions, chopped
2 tablespoons minced fresh cilantro
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For marinade, mix first 5 ingredients. In a large bowl, toss pork with 1/2 cup marinade; refrigerate, covered, up to 2 hours., For glaze, place jelly and 1/3 cup of the remaining marinade in a small saucepan; bring to a boil. Cook and stir until slightly thickened, 1-2 minutes; remove from heat. Place salsa ingredients in a large bowl; toss lightly with remaining marinade., Drain pork, discarding marinade. Place pork on a lightly oiled grill rack over medium heat. Grill, covered, until a thermometer reads 145°, 4-5 minutes per side, brushing with glaze during the last 3 minutes. Serve with salsa.

Steps:

  • Heat broiler. Place tomatoes cut side down on a foil-lined rimmed baking sheet. Fit onion, chiles, and garlic around tomatoes so everything is snug but not overlapping. Broil, turning onion and chiles once, until lightly charred, about 6 minutes for chiles and garlic and 15-18 minutes for tomatoes and onion.
  • Peel garlic and place in a food processor along with half of the tomatoes. Pulse until very smooth. Add remaining tomatoes and pulse until tomatoes are mostly broken up but mixture still has some texture. Transfer to a medium bowl. Finely chop onion and chiles and mix into purée; season with salt. Let cool. Stir in lime juice and cilantro. Season salsa with more salt if needed. Serve with chips.
