- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, cocoa, baking soda and salt; add to creamed mixture alternately with coffee and sour cream, beating well after each addition. , Pour into three greased and floured 9-in. round baking pans. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, beat cream cheese and butter until fluffy. Beat in the chocolate, coffee and vanilla until blended. Gradually beat in confectioners' sugar. Spread between layers and over top and sides of cake. Cover and refrigerate until serving.

MOCHA SHEET CAKE WITH PECANS
Steps:
- Preheat oven to 400°F. Lightly grease 15 1/2x10 1/2x1-inch jelly roll pan. Stir 1/2 cup butter, coffee, 1/2 cup cocoa and vegetable oil in heavy small saucepan over medium heat until smooth. Remove saucepan from heat. Stir flour, sugar, baking soda and salt in large bowl until blended. Whisk in cocoa mixture. Whisk buttermilk, eggs and 1 teaspoon vanilla in medium bowl until blended. Add to flour mixture and blended well. Spread batter in prepared pan.
- Bake cake until tester inserted into center comes out clean, about 20 minutes. Transfer cake to rack.
- Meanwhile, stir milk and remaining 1/2 cup butter and 1/4 cup cocoa in heavy medium saucepan over medium heat until smooth. Bring mixture to boil, stirring constantly. Remove from heat.Add powdered sugar and remaining 1 teaspoon vanilla and whisk until smooth.
- Spread frosting over warm cake. Sprinkle with pecans. Cool cake completely and serve.
MOCHA PECAN CAKE
I had to find a similiar recipe for a co-worker of mine who call's me Chef B (I am not a Chef but I do love to bake and make any kind of dessert). She stated she loved this Mocha Pecan cake that her friend makes her sometimes for her birthday, I hope this is the one she recalls.

Steps:
- Coat nuts & the chocolate chips with 1 tablespoons cake mix & set aside. Combine cake mix, pudding mix, sour cream, eggs, oil, coffee & 1 teaspoon vanilla. Beat at medium speed for 3 minutes Fold in chocolate chips & nuts. Turn into greased & floured tube pan & bake at 350 degrees F, 1 hr or until done. Cool for 15 mins & turn onto rack. Cool completely before glazing. (Cake freezes well without frosting).
- Heat the tub of frosting up 20 seconds at a time until melted slightly and drizzle on the cake, sprinkle left over pecans on top.
- Enjoy!

Steps:
- 1. preheat oven to 350°. Generously grease a 15 x 10" baking pan; set aside.
- 2. Dissolve espresso powder in the boiling water. In medium pan, mix brewed espresso, butter and unsweetened cocoa powder. Bring to boiling over medium high heat, stirring constantly. Remove from heat, let cool for 10 minutes.
- 3. In a large bowl, whisk together the sugar and flour. Add the warm cocoa mixture; stir to blend well. Add eggs, buttermilk, baking soda, vanilla, cinnamon, and salt; mix well. Spread batter evenly into prepared pan.
- 4. Bake for 20 to 25 minutes or until a wooden toothpick inserted near the center comes out clean. Immediately Frost hot cake with warm mocha frosting. Sprinkle with pecans. Cool to room temperature before cutting. Makes 24 servings.
- 5. Mocha frosting: in a medium pan heat 1/3 cup butter, 1/2 cup buttermilk or milk, 1/3 cup unsweetened cocoa powder, and 1 teaspoon instant espresso coffee powder over medium low heat until butter melts, stirring constantly. Remove from heat. With electric mixer on medium speed beat in 4 1/2 cups powdered sugar and 1 teaspoon vanilla.
MOCHA PECAN BALLS
Steps:
- In a bowl with an electric mixer cream the butter with the granulated sugar until the mixture is light and fluffy, add the vanilla, the espresso powder, the cocoa powder, and the salt, and beat the mixture until it is combined well. Add the flour, beat the dough until it is just combined, and beat in the pecans. Chill the dough, covered, for at least 2 hours or overnight.
- Preheat the oven to 375°F. Roll the dough into 1-inch balls and arrange the balls about 1 inch apart on baking sheets. Bake the cookies in batches in the middle of the oven for 12 to 15 minutes, or until they are just firm, and let them cool for 5 minutes on the sheets. Toss the warm cookies in batches in a bowl of the confectioners' sugar to coat them well. The cookies maybe made 2 months in advance and kept frozen in airtight containers.

- For Crust:
- Combine first 4 ingredients in processor. Using on/off turns, cut in butter and shortening until mixture resembles coarse meal. Blend in orange juice and enough water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic and chill 1 hour. (Can be prepared 1 day ahead. Keep refrigerated. Soften dough slightly at room temperature before rolling.) Preheat oven to 350° F. Roll out dough on lightly floured surface to 12-inch-diameter round. Transfer to 9-inch-diameter glass pie dish. Trim edges and crimp decoratively. Freeze 15 minutes. Line crust with foil; fill with dried beans or pie weights. Bake 15 minutes. Remove foil and beans. Bake crust until pale golden, about 10 minutes. Cool on rack.
- For Filling:
- Melt butter in heavy small saucepan over medium heat. Stir in cocoa, then cream and espresso powder. Pour into large bowl. Add corn syrup, sugar, eggs, vanilla and salt; whisk until well blended. Stir in pecans. Pour filling into pie crust. Bake until puffed and set, about 1 hour. Transfer to rack and cool completely. (Can be made 1 day ahead. Cover and let stand at room temperature.)
- Cut pie into wedges. Transfer to plates. Serve with dollops of Coffee Whipped Cream.

- Grease a 9-inch springform pan; line bottom with parchment paper. Grease paper; dust with flour. Set aside. In a small heavy saucepan combine butter and chocolate. Stir over low heat till melted and smooth; set aside.
- Place eggs and sugar in a blender container or food processor bowl. Cover and blend or process until smooth. Add nuts. Blend or process about 1 minute or until nearly smooth. Add melted chocolate mixture, cocoa powder, and liqueur; blend or process just until combined. Spread batter evenly in the prepared pan.
- Bake in a 350 degrees F oven for 35 to 40 minutes or until sides are puffed and set about 2 inches in from edge of pan. Place cake on a wire rack; cool thoroughly. Loosen sides of cake; remove sides of pan. Invert cake onto rack. Remove parchment paper. Place rack with cake on baking sheet. Pour warm Mocha Glaze over cake, covering top and sides.
- Pour melted baking bar into a plastic storage bag. Snip one corner of the bag to make a small opening. Starting at center of cake, pipe a spiral to the outer edge. Draw 8 to 10 lines with a toothpick from center of cake to edge at regular intervals to achieve a spider web effect. If necessary, chill cake until glaze is partially set but still sticky (5 to 10 minutes). Press nuts onto sides of cake. Transfer cake to plate and refrigerate. Makes 12 to 16 servings.
