Soft goat cheese adds a tang to this otherwise basic polenta.

1 tablespoon salt
1 pound quick-cooking polenta (2 2/3 cups)
4 ounces soft goat cheese
1/2 cup grated Parmesan cheese
2 tablespoons unsalted butter

Steps:

  • Bring 1 quart of water to a boil in a medium-size saucepan. Add salt and slowly add polenta, in a thin stream, whisking constantly to avoid lumps. Continue whisking until thick and creamy, about 5 minutes. Stir in the cheeses and butter. Serve immediately.

This is an unusual appetizer that calls for goat cheese and oil packed sun dried tomatoes-very trendy but not too putzy to put together. It's pretty tasty.

1 cup yellow corn grits, plus
2 tablespoons yellow corn grits
2 (14 1/2 ounce) cans chicken broth
2 cloves garlic, minced
6 ounces goat cheese, crumbled (chevre)
1/2 cup sun-dried tomato packed in oil, cut into matchstick size strips

Steps:

  • Combine the grits, chicken broth and garlic in a large saucepan with a tight fitting lid.
  • Bring to a boil over medium heat, stirring frequently.
  • Reduce heat to low and cook, stirring occasionally, for 20 minutes.
  • Remove from the heat and stir in the goat cheese and sun dried tomatoes.
  • Continue stirring until the cheese has melted and all ingredients are well mixed.
  • Grease a 9X13 inch cooking pan and spoon the mixture into the dish and press with wet hands to spread evenly.
  • Can be served room temperature or chilled.
  • For entree size serving, cut into 6 pieces.
  • For an appetizer, cut into smaller squares.

6 cups water
1 1/2 teaspoons salt
2 cups polenta (coarse cornmeal)
Olive oil (preferably extra virgin)
7 ounces fresh goat cheese (such as Montrachet), room temperature
2 tablespoons chopped fresh thyme

Steps:

  • Lightly oil 2 baking sheets. Combine 6 cups water and salt in heavy large saucepan. Bring to boil. Gradually add cornmeal, whisking until smooth. Reduce heat to low. Cover and cook until polenta is thick and creamy, stirring frequently, about 10 minutes. Cool 5 minutes.
  • Preheat oven to 350°F. Spoon warm polenta out onto wet work surface. Roll out polenta with wet rolling pin to 1/3-inch thickness. Cool completely. Using wet 1 3/4- to- 2-inch round cookie cutter, cut out polenta rounds. Discard polenta scraps. Transfer rounds to baking sheets.
  • Lightly brush polenta with oil. Bake polenta 15 minutes. Turn polenta rounds over. Lightly brush with oil and bake until polenta is slightly puffed and pale golden, about 10 minutes longer.
  • Spoon goat cheese into pastry bag fitted with large star tip. Transfer polenta rounds to platter. Pipe 1 small rosette in center of each polenta round. Sprinkle with thyme and serve.

CRISPY POLENTA MEDALLIONS

Anson Mills polenta, once it stiffens, is particularly well suited to this recipe for crispy rounds, though any polenta will work. The Anson Mills remains very creamy on the inside and crisps up beautifully on the surface. Make sure to cook these long enough in the oil - they should be a deep golden brown, and crispy. I topped the hot medallions with a dab of blue cheese, which softened and partially melted onto the crisp surface; heaven. I also love romesco with these, as well as green pipian and simple marinara sauce.

Number Of Ingredients 6

1 recipe Soft Anson Mills Polenta
2 to 3 tablespoons olive oil, as needed
Blue cheese or gorgonzola (about 1 ounce)
Romesco Sauce (about 1/4 cup)
Marinara Sauce (about 1/4 cup)
Green Pipian (about 1/4 cup)

Steps:

  • Cover a baking sheet with plastic or lightly oil a baking dish. Make polenta and when done, pour onto plastic or into lightly oiled baking dish. Spread to a thickness of about 1/3 inch using an offset spatula. If you are using a baking dish and can't spread the polenta that thin, you can always slice the rounds after they are cut to make thinner medallions. Cover with plastic and allow to stiffen completely, preferably in the refrigerator overnight.
  • Cut the stiff polenta into 1 1/2 to 2-inch rounds with a cookie cutter. If the rounds are thick, cut crosswise into 1/3 inch thick rounds.
  • Heat 2 tablespoons olive oil over medium-high heat in a heavy nonstick or cast iron skillet. The polenta should sizzle as soon as you place the medallion in the oil. Cook the rounds in batches until nicely browned on each side, about 3 minutes per side. Turn them carefully with a spatula, and do not crowd the pan. Drain on paper towels. Transfer to a platter while warm and place a pinch - about 1/4 teaspoon - of blue cheese on each round. It should soften and melt a little bit on the hot surface of the polenta. Or top with small dollops of the other toppings of your choice. Serve warm (they are also good when they cool down).

2 cups whole milk
2 cups low-salt chicken broth
1 bay leaf
1 cup polenta (coarse cornmeal)*
1/2 cup (packed) coarsely grated Comté cheese
2 tablespoons (1/4 stick) butter
Mushroom Ragout:
3 tablespoons butter, divided
4 tablespoons extra-virgin olive oil, divided
1 1/2 pounds assorted wild mushrooms (such as oyster, crimini, and stemmed shiitake), thickly sliced
1/4 cup finely chopped shallots
2 teaspoons balsamic vinegar
1/4 cup low-salt chicken broth
1/3 cup crème fraîche or whipping cream
1/3 cup chopped fresh parsley, divided
1/3 cup (packed) coarsely grated Comté cheese

Steps:

  • For polenta:
  • Generously butter 13x9x1- inch baking sheet. Bring milk, broth, and bay leaf to simmer in heavy medium saucepan. Remove saucepan from heat; cover and let steep 20 minutes to allow flavors to develop. Discard bay leaf. Bring liquid to boil. Gradually add polenta, whisking constantly until smooth. Reduce heat to medium-low and cook until polenta is very thick, stirring frequently, about 10 minutes. Stir in Comté cheese and butter. Season to taste with salt and pepper. Transfer polenta to prepared 13x9x1-inch baking sheet. Using wet hands, press polenta evenly over sheet to edges. Chill until firm, at least 3 hours. Cut polenta into 20 squares. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • For mushroom ragout:
  • Melt 2 tablespoons butter with 2 tablespoons oil in large deep skillet over medium-high heat. Add all mushrooms and sauté until tender and browned, stirring often, about 10 minutes. Add shallots and balsamic vinegar; sauté until tender, about 2 minutes. Season lightly to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • Rewarm mushrooms in large skillet over medium-high heat until heated through. Add broth and simmer 1 minute. Stir in crème fraîche and half of parsley. Season mushroom ragout to taste with salt and pepper. Remove from heat; cover to keep warm.
  • Meanwhile, preheat oven to 300°F. Melt remaining 1 tablespoon butter with remaining 2 tablespoons olive oil in large nonstick skillet over medium-high heat. Working in batches, add polenta squares to skillet and cook until browned, about 2 1/2 minutes per side. Transfer to rimmed baking sheet and keep warm in oven while cooking remaining polenta squares.
  • Arrange 2 polenta squares on each plate. Top each with warm mushroom ragout; sprinkle with grated Comté cheese and remaining parsley and serve.

  • Comté is a semi-firm, Gruyère-style cow's-milk cheese made primarily in France's Franche-Comté region. It adds great flavor to this recipe and would also be delicious on a cheese platter. Comté is available at some supermarkets, cheese shops, and specialty foods stores.
  • *Polenta can be found at some supermarkets, as well as at natural foods stores and Italian markets. If polenta is unavailable, substitute an equal amount of regular yellow cornmeal and cook it about half as long.

1 cup instant polenta
2 cups milk
2 cups water
2 tbsp butter
1/3 cup grated parmesan cheese
½ tsp cayenne pepper
2 small heads or 1 large head of garlic
Olive oil
Salt & pepper
8 oz log of goat cheese
5-7 small green chilies

Steps:

  • Remove the loose outer skin from the heads of garlic. Cut off the very tops of the cloves and rub both heads lightly with olive oil. Wrap in foil and roast in a 375-degree oven for 45 minutes. Allow the garlic to cool slightly and then squeeze the cloves into a small bowl. Mash lightly with a fork and set aside. Next, bring the milk and water to a boil and cook the polenta according to the instructions specified on the package (the polenta I use takes 3 minutes). Remove the polenta from the heat and stir in the butter, the roasted garlic paste, the parmesan cheese, the cayenne pepper and salt and pepper to taste. Line a 9x13-inch jelly-roll pan with aluminum foil and lightly spray the foil with cooking spray or olive oil. Spread the polenta onto the foil and roll it up from left to right into a thick log. Refrigerate the log at least 6 hours or overnight. The chilled log should be very firm. Once the polenta has chilled, prepare the roasted chilies. Either roast the chilies directly over a gas flame or under the broiler until they are blackened on all sides. Place in a small bowl, cover with plastic wrap and let sit 5 minutes. Then peel and deseed the chilies and chop finely. Slice both the polenta log and the goat cheese into 15 pieces. Lightly coat a large skillet with olive oil and cook the polenta slices over medium-high heat for 2 minutes per side. Arrange the cooked slices on a baking sheet and top each with a slice of goat cheese and a smattering of chilies. Place the baking sheet under the broiler for 5-10 minutes or until the goat cheese is hot and bubbly.
