SOUTHERN FRIED PICKLES



Southern Fried Pickles image

Southern-style fried pickles seasoned to perfection! Paired with a sweet and tangy dipping sauce.

Number Of Ingredients 16

1 ½ cups dill pickle chips (pressed dry with paper towels ( I use Mt. Olive mini stuffers))
1 cup all-purpose flour
1½ teaspoons Cajun seasoning
1 teaspoon smoked paprika
½ teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon black pepper
¼ teaspoon cayenne pepper
½ cup buttermilk
1 egg
oil for frying
½ cup mayonaisse (I use Duke's)
2 tablespoons ketchup
½ teaspoon granulated sugar
½ teaspoon Italian seasoning

Steps:

  • Heat oil to 375 F.
  • Line a baking tray or cutting board with parchment paper. Set aside.
  • In a bowl, mix together flour and spices. Set aside.
  • In another bowl combine buttermilk and egg. Set aside.
  • Dip pickle into buttermilk mixture, shake off excess.
  • Next, coat the pickles in flour and shake off excess flour.
  • Place pickles on the prepared baking tray.
  • When all pickles have been coated with flour, coat them again. (Some of the flour from the first coating will be absorbed)
  • Quickly place the pickles in the hot oil (I did 2 batches)
  • Cook until golden brown and then remove with a slotted spoon.
  • Place pickles on paper towels to drain.
  • To make the sauce, stir together sauce ingredients. Taste and adjust seasonings.
  • Serve the fried pickles immediately with the sauce.

FRIED QUICK PICKLES WITH BUTTERMILK RANCH DIPPIN' SAUCE



Fried Quick Pickles with Buttermilk Ranch Dippin' Sauce image

Canola oil or peanut oil, for frying
3 cups Quick Pickles, recipe follows, drained
1 cup flour
2 large eggs, beaten
1/2 cup milk
1 cup panko, pulsed in food processor
1 teaspoon dried dill
1 teaspoon garlic powder
Kosher salt
Buttermilk Ranch Dippin' Sauce, recipe follows
2 cups red wine vinegar
1 1/2 cups sugar
1/4 cup kosher salt
1 teaspoon mustard seeds
3/4 teaspoon coriander seeds
1/2 teaspoon celery seeds
1/4 teaspoon whole black peppercorns
2 cloves garlic, peeled and crushed
1 red Fresno chile, split in half
6 Kirby cucumbers (about 2 pounds)
1/2 cup buttermilk
1/2 cup mayonnaise
2 tablespoons chopped fresh chives
2 tablespoons lemon juice
1 tablespoon chopped fresh dill
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1/4 teaspoon freshly cracked black pepper

Steps:

  • In a large heavy-bottomed skillet or cast-iron pan, heat enough oil to cover 1/2-inch of the skillet over medium-high heat until it reaches 350 degrees F. Line a baking sheet with a wire rack.
  • In a large zip-top bag, add the drained Quick Pickles and flour and shake until well coated.
  • In a mixing bowl, whisk together the eggs and milk. In a shallow baking dish, add the panko, dill, garlic and 1 teaspoon salt. In batches, dip the floured pickle chips into the eggs and then into the panko, making sure they are fully coated with the seasoned breadcrumbs. Place the coated pickles on the prepared baking sheet until all the pickles are coated.
  • Working in batches, fry the pickles until they are golden brown, 1 or 2 minutes, turning once. Drain the pickles on a paper towel-lined plate (or another baking sheet lined with a wire rack). Sprinkle them with kosher salt as soon as they come out of the oil and serve immediately alongside some Buttermilk Ranch Dippin' Sauce.
  • Cook's Notes: Using a slotted spoon or a fish spatula will help you toss the pickles in the egg mixture. When frying, always drop the food into the oil away from your body and close to the surface of the hot oil.
  • In a saucepot, combine the vinegar, sugar, salt, mustard seeds, coriander seeds, celery seeds, peppercorns, garlic, chile and 2 cups water and bring the mixture to a boil to dissolve the sugar and salt.
  • Using a mandolin (or sharp knife), slice the cucumbers 1/4-inch thick and place in a large heat-safe bowl or container.
  • Once the mixture boils, pour the liquid over the sliced cucumbers, making sure the cucumbers are submerged. Let the cucumbers sit in the liquid as it comes to room temperature, for about 20 minutes. Drain the pickles, reserving the liquid. Serve as is or fry em' up! To serve, add a little of the pickling juice right on top of the pickles.
  • In a medium mixing bowl, whisk together all of the ingredients until fully incorporated. Adjust the seasoning. The dressing can be stored in the refrigerator in a sealed container for up to a week.;

1/2 cup buttermilk
1 clove garlic, finely chopped
1/4 cup chopped fresh Italian (flat-leaf) parsley
2 tablespoons chopped fresh dill weed
1 tablespoon chopped fresh chives
1 tablespoon Worcestershire sauce
1 teaspoon white vinegar
1 teaspoon salt
1/2 teaspoon pepper
1 jar (32 oz) dill pickle slices, drained
1 cup buttermilk
2 tablespoons red pepper sauce
1 cup Gold Medal™ all-purpose flour
1 cup yellow cornmeal
2 tablespoons Cajun seasoning
Vegetable oil for deep frying
2 teaspoons salt

Steps:

  • In small bowl, mix all dipping sauce ingredients until well blended. Cover; refrigerate until serving time.
  • Pat pickles dry with paper towels. In shallow bowl, mix 1 cup buttermilk and 2 tablespoons pepper sauce. In another shallow bowl, mix flour, cornmeal and Cajun seasoning.
  • In deep fryer or heavy saucepan, heat 2 to 3 inches oil to 350°F. Dip pickles in buttermilk mixture, then coat with flour mixture. Working in small batches, fry pickles about 2 to 3 minutes or until golden brown and crisp. Drain on paper towels; immediately sprinkle with 2 teaspoons salt.
  • Serve fried pickles warm with dipping sauce.

I have made these for a few years now, and have converted many people into huge fans using this recipe! Great as an appy for those willing to try new things! (It is slightly messy!) Serve with ranch dip or dip of your choice.

2 cups vegetable oil for frying
3 cups Italian-seasoned bread crumbs
1 teaspoon garlic powder
½ teaspoon salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 egg
1 cup milk
4 dill pickles, quartered lengthwise

Steps:

  • Combine bread crumbs, garlic powder, salt, pepper, and cayenne pepper in a bowl; set aside. Whisk egg and milk together in a separate bowl. Dip dill pickle spears into the egg mixture, then into the bread crumb mixture until well-coated. Dip the pickles in the egg and bread crumb mixtures a second time so each spear is double coated. Arrange pickles in a single layer on a baking sheet. Place the baking sheet in the freezer until the breading is set, about 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Fry the pickles in the preheated oil until light golden brown, 3 to 4 minutes. Drain on a paper towel-lined plate.

1 (32 ounce) jar dill pickle slices, drained
1 cup Italian seasoned bread crumbs
1 teaspoon cayenne pepper
1 teaspoon black pepper
½ teaspoon garlic powder
2 eggs, beaten
1 (8 ounce) bottle Ranch dressing

Steps:

  • Heat the oil in a large heavy skillet over medium heat.
  • Pat the pickle slices dry with paper towels. In a small bowl, stir together the bread crumbs, cayenne pepper, black pepper and garlic powder. Dip pickle slices into the egg, and then coat with the bread crumb mixture.
  • Fry the pickles in the hot oil, until golden brown on each side, turning once. Transfer to paper towels, and serve hot with Ranch dressing.
