Heather's Cilantro, Black Bean, and Corn Salsa image

This is a fun summer recipe that can be served on its own, or with tortilla chips. It is also beautiful, so make sure you have a clear bowl to put it in.

1 (15 ounce) can yellow corn, drained
1 (15 ounce) can white corn, drained
2 (15 ounce) cans black beans, drained and rinsed
1 (14.5 ounce) can Italian-style diced tomatoes, drained
1 bunch finely chopped cilantro
5 green onions, finely sliced
1 small red onion, finely chopped
1 red bell pepper, seeded and chopped
1 tablespoon minced garlic
¼ cup lime juice
1 avocado - peeled, pitted, and diced
2 tablespoons olive oil, or to taste

Steps:

  • Stir the yellow and white corn, black beans, tomatoes, cilantro, green onion, red onion, bell pepper, and garlic in a large bowl. Gently mix in the lime juice and avocado. Drizzle with olive oil to serve.

This is a wonderful salsa!! It is full of black beans, corn, tomatoes, and onion. I can never make enough when I have a party!! Chill 24 hours before serving if you have time!! Serve with tortilla chips.

3 (15 ounce) cans black beans, drained and rinsed
1 (11 ounce) can Mexican-style corn, drained
2 (10 ounce) cans diced tomatoes with green chile peppers, partially drained
2 tomatoes, diced
2 bunches green onions, chopped
cilantro leaves, for garnish

Steps:

  • In a large bowl, mix together black beans, Mexican-style corn, diced tomatoes with green chile peppers, tomatoes and green onion stalks. Garnish with desired amount of cilantro leaves. Chill in the refrigerator at least 8 hours, or overnight, before serving.

A friend of a friend brought this to a party of mine. At the time, I didn't really care for raw onions or tomatoes, and I was shocked that I liked this so much. This is definitely a wonderful summer crowd pleaser.

1/4 cup fresh cilantro, chopped
16 ounces canned corn, drained (shoe peg or sweet white corn)
1/2 cup red onion, chopped (or vidalia onions)
30 ounces black beans, drained and rinsed
1/2 teaspoon cumin seed
6 tablespoons lemon juice
6 tablespoons light olive oil (not extra virgin)
1/2 teaspoon salt
2 tomatoes, chopped (2-4 tomatoes)

Steps:

  • Combine all ingredients except tomatoes.
  • Refrigerate overnight.
  • Add tomatoes just before serving.
  • Serve with tortilla chips (scoop style chips work great with this recipe).

1 (10 1/2 ounce) can pinto beans
1 (10 1/2 ounce) can garbanzo beans
1 (10 1/2 ounce) can black beans
1 (10 1/2 ounce) can black-eyed peas
1 (10 1/2 ounce) can shoe peg corn
1 cup chopped celery
1/2 cup green pepper
1 small onion (chopped)
1 tablespoon pepper
3 cups chopped cilantro (fresh makes it taste better)
1/2 cup red pepper (optional)
1 cup sugar (diabetics and carb counters can use a substitute such as splenda)
1/2 cup cider vinegar
1/2 cup canola oil
1 tablespoon water

Steps:

  • Drain the liquid off of the beans and rinse with water in a strainer. And place in a larger bowl. All all other ingredients except for sauce ingredients.
  • Mix the sauce ingredients in a small cause pan and cook on low until the sugar melts, then pour over the bean mixture. Mix throughly. Let marinate over night before serving and stir occasionally.
