SPICED CHICKEN FINGERS WITH SWEET-SOUR SAUCE



Spiced Chicken Fingers with Sweet-Sour Sauce image

Canola oil, to cook
1 small onion, roughly diced
1/2 tablespoon minced ginger
1 medium carrot, peeled, roughly diced
1 small pineapple, peeled, roughly diced
2 cups pineapple juice
1/2 cup rice vinegar
2 cups rice flour
1/2 tablespoon paprika
1/4 tablespoon cayenne
2 tablespoons white sesame seeds
1 quart cold soda water
4 single chicken breasts, skinless, 3 by 1/2 by 1/2-inch strips
Salt, to taste

Steps:

  • In a hot sauce pot coated with oil, saute the onions, ginger and carrots until soft, about 8 minutes. Season and add the pineapple, juice and vinegar. Cook until pineapple is soft, about 5 minutes. Puree mixture and check for seasoning. In another sauce pot filled 1/3 full of oil, heat to 350 degrees. In a bowl, mix together the flour, paprika, cayenne and sesame seeds. Whisk in the soda until a pancake batter consistency is achieved. Dip the chicken fingers individually in the batter and fry until golden brown, about 5 minutes. Season with salt.
  • PLATING Serve the soup in a small bowl on the same plate as a pile of mac-n-cheese. Place fingers on a plate around a small bowl of dipping sauce.
  • Drink Suggestion: Fresh Orange Juice, Cranberry Juice, Limes and Club Soda for house made spritzers.

1 cup ice water
1 egg
¼ teaspoon baking soda
¼ teaspoon salt
2 cups all-purpose flour, divided
4 skinless, boneless chicken breasts, cut into cubes
vegetable oil for frying
4 tablespoons cornstarch
3 tablespoons water
1 cup white sugar
½ cup ketchup
½ cup white vinegar
½ cup water
½ cup orange marmalade
½ cup chopped fresh pineapple
2 tablespoons pineapple juice
2 teaspoons soy sauce
1 ½ teaspoons minced fresh ginger root
1 teaspoon minced garlic
¼ teaspoon red pepper flakes

Steps:

  • Beat ice water and egg together in a bowl using a whisk or a fork. Add baking soda and salt and mix to combine. Add 1 cup flour to water mixture; mix until blended but lumpy.
  • Place remaining 1 cup flour in a separate bowl. Cover each piece of chicken in flour, then move to egg mixture and cover, letting excess batter drip off.
  • Heat vegetable oil in a wok or large, deep frying pan over medium heat until a drop of water crackles when placed into oil.
  • Place chicken into the hot oil and fry, flipping if needed, until no longer pink in the center and golden brown, 3 to 4 minutes. Set aside and keep warm.
  • Combine cornstarch and 3 tablespoons water in a small bowl.
  • Combine sugar, ketchup, vinegar, 1/2 cup water, orange marmalade, pineapple, pineapple juice, soy sauce, ginger, garlic, and red pepper flakes in a medium saucepan. Bring to a boil; add cornstarch mixture. Reduce heat and let simmer, stirring frequently, until desired thickness is reached.
  • Pour sauce over chicken and serve.

If you want something other than the ordinary mushy coated sweet and sour chicken, then I suppose this is one you should try. I learned how to make this from watching my mother make it.

3 large egg yolks
1 tablespoon soy sauce
1 tablespoon cornstarch
1 teaspoon salt
ground black pepper to taste
3 pounds skinless, boneless chicken breast, cut into bite-sized pieces
3 large egg whites
1 cup water
1 cup cornstarch
1 cup all-purpose flour
1 cup hot water
¼ cup white sugar
3 tablespoons sweet rice wine
2 tablespoons vinegar
1 tablespoon cornstarch
1 tablespoon soy sauce
1 teaspoon chicken bouillon granules
¼ teaspoon salt
1 tablespoon vegetable oil, or as needed
1 medium bell pepper, chopped
2 cloves garlic, minced
1 (8 ounce) can pineapple chunks, drained
2 tablespoons sesame oil
1 teaspoon sesame seeds

Steps:

  • Whisk egg yolks, soy sauce, cornstarch, salt, and pepper for marinade together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 20 minutes.
  • Beat egg whites for coating in a bowl until foamy. Add water, then cornstarch, then flour, mixing completely after each addition.
  • Combine hot water, sugar, rice wine, vinegar, cornstarch, soy sauce, bouillon granules, and salt for glaze in a bowl.
  • Remove chicken from the refrigerator. Dip each piece in coating.
  • Heat vegetable oil in a wok over medium-high heat until hot. Add chicken and cook in small batches until crispy, about 5 minutes per batch. Remove chicken to a plate and drain oil from the wok.
  • Add bell pepper and garlic to the wok and stir-fry until tender, about 3 minutes. Remove from the wok onto a separate dish.
  • Add pineapple chunks to the wok. Stir the reserved glaze and pour over pineapple. Simmer until sauce thickens, 2 to 3 minutes.
  • Add chicken and bell pepper mixture back to the wok; toss everything together. Drizzle sesame oil over top, stir, and sprinkle with sesame seeds.

  • Mix the ingredients for the marinade together in a large bowl. Add chicken and marinade for 2-24 hours. (The longer the better.)
  • Preheat the oven to 400 degrees. Transfer the chicken onto a cast iron or large baking dish. Be sure to pour some of the marinade onto each piece of chicken. Take a few blood orange slices and gently wedge it under the skin of the chicken. Season the dish with salt and pepper, throw in a few sprigs of rosemary, and transfer it to the oven.
  • After 25 minutes, baste the chicken with the sauce. If there is an excess of sauce and juices at the bottom of the cast iron or baking dish, pour about half of it out.Return the chicken to the oven for an additional 20 minutes. Once the chicken is done it will have a nice, crispy, golden crust.
  • To finish the dish, sauté the orange slices with the extra sauce (that was initially kept aside). Simply pour 1 tbsp of the sauce into a pan over medium heat, add the orange slices, and cook them for about 2 minutes on each side. Then garnish the dish with oranges. If you would like extra sauce, add the remaining sauce to the hot dish and allow it to simmer for about 5 minutes.
