A fabulous and easy cream soup that even people who don't like celery will love!

3 quarts chicken stock
3 pounds celery, coarsely chopped
½ pound carrots, julienned
½ pound onions, chopped
1 cup all-purpose flour
1 tablespoon salt
1 teaspoon ground white pepper
3 quarts hot milk
1 cup margarine

Steps:

  • Pour the chicken stock into a large pot, and bring to a boil. Add the celery, carrots and onion to the pot.
  • Whisk together the flour, salt, pepper, and milk; add to the pot along with the margarine.
  • Boil for 10 minutes, then strain out the vegetables by pouring through a sieve, or if the vegetables are large enough, a colander may be used.

1 tablespoon olive oil
1 onion, finely chopped
2 large potatoes, peeled and diced
6 stalks celery, washed and chopped
1 teaspoon caraway seed
2 1/2 cups vegetable stock
1 1/4 cups 1% low-fat milk
2/3 cup light cream
3 ounces blue cheese
1 ounce fresh chives, roughly chopped

Steps:

  • Heat the oil in a large saucepan then add the onion, potato, celery and caraway seeds.
  • Fry gently for approximately 5 minutes until the onion is softened but not browned.
  • Add the stock and milk and simmer uncovered for 20-30 minutes. Transfer the soup in batches to a blender and whizz until smooth, then return to the rinsed saucepan.
  • Gently reheat the soup, then stir in the cream. Do not allow to boil.
  • Crumble the blue cheese into individual soup bowls and pour over the soup.
  • Sprinkle with chives and serve immediately.

4 tablespoons butter
1 head celery, chopped (include the leaves!)
1 small onion, chopped
2 garlic cloves, minced
1 large russet potato, ptato peeled and diced very small
1/4 cup flour
2 cups chicken stock (or veggie stock)
1/2 cup white wine (or can use apple juice or white grape juice)
1/4 teaspoon white pepper
1/8 teaspoon cayenne pepper (to taste)
salt, if needed, to taste
3/4 cup heavy cream (or half and half or light cream)
4 ounces crumbled blue cheese

Steps:

  • In a soup pot over medium heat, melt butter. Add celery, onion, garlic and potato and saute for 5 - 7 minutes.
  • Add flour and stir constantly for 1 minute.
  • Slowly add stock, wine, white pepper and desired amount of cayenne. Bring to a boil; reduce heat and simmer for 15 - 20 minutes (stirring often), or until veggies are very tender.
  • Stir in cream and blue cheese. Heat through but do not allow to boil. Add salt, if needed.
  • Serve.

Serve this soup hot on cold days or cold on hot days. Organic celery is easy to find, it has a more pronounced taste than conventionally grown celery, and is much better for this soup.

2 tablespoons butter
7 cups celery, chopped (about 1 1/4 lb)
1 large white onions or 1 large Spanish onion, chopped
1 1/2 cups potatoes, cubed and peeled
3/4 teaspoon salt
1 pinch white pepper
1 pinch nutmeg
2 cups sodium-reduced chicken broth
3/4 cup whipping cream
6 ounces bleu benedictin blue cheese, crumbled
1 tablespoon fresh chives, finely chopped
freshly ground pepper

Steps:

  • In soup pot, melt butter over medium heat; add celery, onion, potatoes, salt, white pepper, and nutmeg. Cover and cook, stirring occasionally and reducing heat if vegetables show any signs of browning, until celery and onion are tender, about 10 minutes.
  • Add broth and 2 1/2 cups water; bring to a boil. Reduce heat and simmer, covered until potatoes are falling aparrt, about 20 minutes.
  • In batches, purée in blender; strain through fine sieve. Reheat soup in clean soup pot; stir in cream and bring to a simmer. Stir in 1 cup of the crumbled cheese until melted.
  • Ladle into bowls. Sprinkle chives over soup; top with remaining cheese, Sprinkle with pepper to taste.
  • SWITCH IT UP: Replace butter with olive oil, and whipping cream with sour cream.
  • Cook as directed; after straining puréed hot soup, stir in 1 cup of the cheese until melted (if soup isn't hot enough and cheese doesn't melt completely, return to heat and stir until melted) Let cool; whisk in sour cream. Chill in refrigerator. Taste and add more salt if needed (blue cheeses vary in saltiness, and cold soups generally need a little extra). Garnish as above, adding an extra dollop of sour cream, if desired.

6 Tbsp unsalted butter (1/2 stick)
2 c chopped yellow onions
1 leek, white park only, well rinsed and finely sliced
3 celery ribs
3 carrots, chopped and peeled
1 medium potato, peeled and diced
1 c dry white wine or dry vermouth
3 c chicken stock
1/2 to 3/4 lb imported roquefort or other blue cheese
salt and pepper,to taste
6 to 8 bacon strips, sauteed crisp and crumbled, for garnish

Steps:

  • 1. Melt the butter in a large heavy pot over low heat. Add the onion,leek,celery and carrots and cook,covered until the vegetables are tender and lightly colored, about 25 minutes,stirring occasionally.
  • 2. Add the potato,white wine, and stock, bring to a boil,reduce the heat and simmer partially covered until very tender about 20 minutes.
  • 3. Remove the soup from the heat and crumble in 1/2 pound of the cheese. Stir until the cheese has melted into the soup, then pour the soup through a strainer, reserving the liquid. Transfer the solid to a food processor or use a food mill fitted with a medium disc. Add 1 cup of the cooking stock and process until smooth.
  • 4. Return the soup to the pot, pour in the rest of the liquid and simmer over medium heat. Taste and correct the seasoning; you may want to add a little more cheese, and the soup may need salt and pepper.
  • 5. Ladle into bowls, garnish with the bacon crumbles and serve immediately.
