2 cups brown rice
4 cups water
1 pound ground beef
1 onion, diced
¼ cup chopped mushrooms, or to taste
3 cloves garlic, chopped
1 (26 ounce) jar tomato sauce
1 (16 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 teaspoon Italian seasoning
salt and ground black pepper to taste
6 red bell peppers, tops and seeds removed
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Bring brown rice and water to a boil in a saucepan. Reduce heat to medium-low, place a cover on the saucepan, and simmer until the rice is tender, about 40 minutes; transfer to a large mixing bowl.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Break ground beef into small pieces and place in the skillet. Add onion, mushrooms, and garlic; cook and stir until the beef is completely browned, 7 to 10 minutes. Mix beef mixture into brown rice.
  • Stir tomato sauce, diced tomatoes, tomato paste, and Italian seasoning into the rice mixture and season filling with salt and black pepper.
  • Arrange bell peppers in a baking dish. Spoon filling into bell peppers.
  • Bake in preheated oven until the peppers are tender, about 1 hour. Sprinkle Parmesan cheese over the stuffed peppers to serve.

2 cups frozen corn, thawed
1/3 cup salsa
6 green onions, chopped
1 medium green pepper, halved and seeded
1 medium sweet red pepper, halved and seeded
1/4 cup shredded part-skim mozzarella cheese
2 bacon strips, cooked and crumbled
Additional salsa, optional

Steps:

  • In a large bowl, combine the corn, salsa and onions. Spoon into pepper halves. Place each stuffed pepper half on a piece of heavy-duty foil (about 18x12 in.). Fold foil around peppers and seal tightly., Grill, covered, over medium heat until peppers are crisp-tender, 25-30 minutes. Carefully open packets to allow steam to escape. Sprinkle with cheese and bacon. Return to the grill until cheese is melted, 3-5 minutes. Serve with additional salsa if desired.

2 red bell peppers, halved lengthwise
2 tablespoons butter
1 bunch scallions, including the firm greens, thinly sliced
2 1/2 to 3 cups kernels from 5 ears of corn
2 tomatoes, peeled, seeded, and diced
1 fresh mozzarella cheese, 4 to 5 ounces, finely diced, or 1 cup grated Cheddar or Monterey jack
2 tablespoons finely sliced basil leaves
2/3 cup fresh bread crumbs
Salt and freshly milled pepper
Paprika

Steps:

  • Preheat the oven to 375 degrees F. Lightly butter a baking dish just large enough to hold the peppers.
  • If the red peppers won't stand upright, slice them lengthwise in half, leaving the stem end intact. Steam them for 5 minutes and set aside.
  • Melt the butter in a large skillet. Add the scallions, corn, and tomatoes and cook for 3 minutes over medium heat. Turn off the heat and stir in the cheese, basil, and half the bread crumbs. Season with salt and pepper. Fill the peppers and top with the remaining bread crumbs. Set them in a prepared dish, add a few tablespoons water to the dish, cover, and bake until the corn is hot and the peppers are cooked, about 25 minutes. Uncover and brown the tops under the broiler. Dust with paprika and serve.

4 red bell peppers
2 Tbs. Butter, softened
1 medium onion, finely chopped
1 Tbs olive oil
8 oz Italian sausage, casings removed
15 oz corn, canned or frozen
1 egg
2 Tbs milk
1 ts salt
½ ts white pepper
1 ts paprika
1-cup beef broth
4 slices bacon

Steps:

  • Preheat oven to 350°F. Rinse the bell peppers. Cut off the tops and save; remove and discard the seeds. Butter the inside of the bell peppers and stand them upright in a baking dish just large enough to accommodate them. Heat the oil in a large skillet, adding onions and the top of the peppers finely chopped. Cook for about 5 minutes on medium heat and then add the sausage. After the sausage is cooked, turn off the heat and drain the fat from the skillet. At this point add the corn, mix well and stuff the peppers. In a small bowl whisk egg with milk seasoning them with salt, pepper and paprika. Divide in 4 equal amounts and pour into each pepper. Pour the beef broth into baking dish and place the dish in the oven; bake for 45 minutes. Few minutes before done, crisp the bacon in a pan or microwave. Serve peppers and decorate each with a slice of bacon on top.

1 cup chopped red onion
1 cup chopped celery
3 tablespoons chopped cilantro
3 tablespoons minced garlic
1 1/2 teaspoons sea salt
1 teaspoon black pepper
1 teaspoon oregano
1 teaspoon basil
1 cup Baby Spinach
6 red bell peppers

Steps:

  • Preheat oven to 375 degrees. In a large non-stick skillet, Lightly brown beef and onion. Turn heat to low and add seasonings and cook until beef is completely browned. Remove from heat and stir in spinach.
  • Wash bell peppers and remove tops, cores and seeds. Stuff each pepper with 1/2 to 2/3 cup of beef mixture. Put peppers in glass baking dish and pour 2 tbsp water into the bottom. Cover with foil and bake for 50 minutes.
  • Remove stuffed peppers from oven and take off foil. Turn up oven to 400 degrees. Cook peppers for additional 10 minutes. Allow to cool somewhat before serving.

3/4 cup vegetable broth
2 medium sweet red peppers
1/3 cup frozen corn, thawed

1 green onion, finely chopped
1-1/2 teaspoons chopped fresh mint or 1/2 teaspoon dried mint flakes
1 teaspoon shredded lemon peel
3/4 teaspoon fresh chopped oregano or 1/4 teaspoon dried oregano
1 small garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil

Steps:

  • In a saucepan, bring millet and broth to a boil. Reduce heat; simmer, covered, until millet is tender and broth is absorbed, about 30-35 minutes. Transfer to a large bowl and cool., Meanwhile, cut tops off peppers and remove seeds. In a large saucepan, cook peppers in boiling water for 3-5 minutes.
