COPYCAT MCALISTER'S SWEET TEA

Steps:

• Begin by boiling two cups of water in a pot.
• Once the water comes to a boil add the tea bags, turn the heat off, and then move it to an empty burner to cool.
• Gently stir in 3/4 cup of white sugar and 1/4 teaspoon baking soda (be careful not to add more than 1/4 teaspoon or it will be too much).
• Stir until the sugar and baking soda dissolve. Again, do not overdo the baking soda. Let the teabags steep for 10 minutes.
• After 10 minutes, add 6 more cups of cool water. Stir well and add to a pitcher.
• Serve over ice and with a lemon wedge, if desired.

MCALISTER POTATOES

Steps:

• In small mixing bowl combine sour cream, peppadew peppers, and white wine. Mix thoroughly and refrigerate for 1 hour.
• In large stock pot cover potatoes with water and add 2 tablespoons salt. Set heat on high and boil until fork tender.
• In a large saute pan over medium heat cook bacon and saute onions until caramelized. Transfer bacon and onions from pan on to a paper towel to absorb grease. Distribute evenly on a platter and keep warm. Leave remaining fat in pan.
• When potatoes are fork tender, drain, and with a clean kitchen towel, palm smash the hot potatoes to approximately 1/3-inch thick.
• Reheat fat in saute pan and add 2 tablespoons olive oil. Heat to oil medium heat and place potatoes in oil. Season with salt and pepper and brown on both sides, then transfer to onion and bacon platter. Repeat, adding more oil, until all potatoes are cooked crispy.
• Top potatoes with Parmesan and then with sour cream mixture.

COPYCAT MCALISTER'S TORTILLA SOUP

Steps:

• In a large pot or dutch oven, melt the butter on low and then add the garlic and onion.
• Move the heat to medium and saute until the onions begin to brown.
• Reduce the heat and then add the remaining ingredients except for the half and half. Stir well.
• Let simmer for about 20 to 25 minutes. Reduce the heat and stir in the half and half.
• Top with shredded cheese and other desired toppings such as sour cream, fresh avocado, tortilla strips, fresh lime juice, and pico de gallo.

COPYCAT MCALISTER'S CHILI

Steps:

• In a large skillet, brown and then drain the fat off of your ground beef. Set aside.
• Run the stewed tomatoes through a food processor and add to a large pot.
• Next, run your diced tomatoes with green chiles and add them.
• Run your celery stalk through the food processor next and add it to the chili.
• Add the ground beef and onion. Stir well.
• Add the tomato paste, vinegar, and spices. Stir well.
• Bring to a low boil and then reduce to a low heat let simmer for about two hours. Stir occasionally.

COPYCAT MCALLISTER'S CHICKEN TORTILLA SOUP

Steps:

• In a large pot over medium heat, saute the garlic and onion in the butter or margarine for 5 minutes.
• Add flour and stir well, cooking for 1 minute more.
• Add the broth and half-and-half. Bring to a boil and reduce heat to low. Add the soup, salsa, corn, chicken, cumin, fajita seasoning and 2 tablespoons cilantro. Stir and continue to heat for 15 minutes.
• Crumble tortilla chips into individual bowls, add 1/2 ounce shredded cheese to each bowl and ladle in soup. Top each bowl with more crumbled chips, remaining 1/2 ounce cheese and remaining 1 tablespoon cilantro, few chopped green onions and serve.
