CITRUS GLAZED ROAST CHICKEN
This Citrus Glazed Roast Chicken boasts robust citrus flavors and the juiciest, most tender meat possible! Easy to prepare, only 45 minutes in the oven, and an incredible marinade is what sets this chicken apart from the rest!

Steps:
- Combine all the ingredients for the marinade in medium bowl and whisk to combine. Set aside.
- Place the chicken halves in a deep dish like a casserole dish.
- Pour the marinade over the top of the chicken and use a pastry brush to coat the chicken on all sides.
- Cover the dish with plastic wrap and refrigerate for at least 2 hours, turning the chicken over at least once.
- Preheat oven to 375F.
- Lightly spray a large baking sheet or roasting pan with non stick cooking spray OR line with parchment paper.
- Line the baking sheet with the orange and lemon slices.
- Transfer the two chicken halves to the baking sheet so they are resting on top of the orange and lemon slices.
- Pour the marinade over the top of the chicken.
- Bake for 45 to 55 minutes or until a meat thermometer inserted into the thigh registers 165F and juices run clear.
- Baste the chicken every 15 minutes.
- Let chicken rest 10 minutes before carving.

- In a mixing bowl whisk together all ingredients except chicken until well combined.
- Place chicken in a gallon size resealable bag or dish.
- Pour marinade over chicken. Transfer to refrigerator and let rest at least 1 hour and up to 6 hours.
- Preheat a grill over medium-high heat. Remove chicken from marinade and cook on grill until center registers 165 degrees in center of thickest portion, turning once halfway through cooking (reduce grill temperature as needed if chicken is browning too quickly).
- Let chicken rest 5 minutes before serving. Garnish with chopped fresh parsley if desired.
GRILLED CITRUS MARINATED CHICKEN THIGHS

- Season the chicken thighs generously with salt and pepper. In a non-reactive baking dish large enough to hold all the chicken to marinate, whisk together the vegetable oil, citrus zests and juices, cayenne pepper and the thyme. Add the chicken thighs and turn to coat. Let marinate for at least 30 minutes or up to a couple hours in the refrigerator.
- Preheat the grill. Remove the chicken from marinade and let excess drip back into dish. Place chicken on the hot grill, without overcrowding the pieces. Grill until fully cooked through, turning occasionally, about 15 minutes total, depending on how hot your grill is. Serve immediately.
CITRUS ROSEMARY CHICKEN RECIPE
Crisp, tangy, and succulent citrus rosemary chicken, seasoned Mediterranean-style with garlic, rosemary, and oregano, and covered in a bold wine and orange marinade. Use split chicken or chicken pieces of similar size for even cooking. For best flavor, allow 30 minutes to 2 hours for marinating.

- Season the chicken with kosher salt on all sides, making sure to season underneath the skin as well. (You can do this one night ahead of time and keep the chicken in the fridge to air-chill uncovered).
- Prepare the citrus marinade. In a large bowl, add the wine, orange juice and zest, lime juice, 3 tablespoons extra virgin olive oil, tomato paste, spices, and a good dash of kosher salt. Add the garlic and onion. Whisk to combine.
- Add the chicken and toss to coat, making sure to lift the skin up and spoon some of the marinade underneath (this will give you more flavor). Set aside at room temperature for 30 minutes. Alternatively, cover and refrigerate for an hour or two (for best results, take it out of the fridge and leave the chicken at room temperature for 30 to 45 minutes before cooking)
- Preheat the oven to 425 F and adjust a rack in the middle.
- Transfer the chicken and the marinade to a braising pan. Roast for 30 minutes, then carefully turn the pan 180 degrees and roast for another 15 minutes or until the chicken is fully cooked and tender (juices should run clear).
- In a small bowl, mix together the honey with 1 tbsp of extra virgin olive oil. Carefully remove the chicken from the oven and brush the top with the honey and olive oil mixture.
- Switch the oven to the broil function. Return the chicken back to the oven about 6 inches away from the broiler and cook briefly for 3 to 4 minutes, watching for the skin to turn a nice golden brown.
- Remove from the heat and finish with lime juice. Add slices of fresh orange and wedges of lime.

- Put the chicken in a large nonmetalic bowl. Put the orange and lime zests in a small bowl and add the fruit juices. Whisk in the olive oil, garlic, 1 teaspoon salt, and a generous grind of black pepper. Pour the marinade over the chicken and toss until well coated. Marinate for 20 to 30 minutes but no longer than 45 minutes.
- Preheat the oven to 375 degrees F. Put a rack on a rimmed baking sheet. With tongs, remove the chicken pieces from the marinade and arrange them on the rack leaving space between each piece. Drizzle a small spoonful of the marinade over the top of each chicken piece; season well with salt and pepper, to taste. Roast until the chicken is cooked through and the juices run clear when meat is pierced with a knife, about 45 minutes.
- Transfer the chicken to a serving platter. Cool slightly before serving or let stand until room temperature before refrigerating for later use.

- Lightly pound chicken to soften.
- In a large baking dish, combine thawed Orange Juice, melted Orange Marmalade and Salt.
- Add chicken and enough water to just cover chicken.
- Marinate chicken at least 2 or up to 48 hours. (I always make it at least a day ahead for more flavor.).
- Sauce: (Can be made up a day ahead or frozen and re-heated) :.
- In a food processor, puree mangoes.
- Add the juice of 1 orange, 1 lime, 1/4 cup rum, butter, honey, cilantro and salt.
- Mix in processor and transfer to saucepan.
- Add whole (not chopped) habanero into saucepan and heat on medium heat until the sauce has your preferred amount of heat.
- Remove pepper. (If it is still not hot enough after 20 minutes, remove pepper and dice. Slowly add until it is to your taste.
- Grill chicken and pour sauce over chicken when plating. Tastes great with my posted Coconut Rice, Recipe #312530.
CITRUS MARINATED CHICKEN WITH ROASTED CORN SALSA #RSC
Ready, Set, Cook! Reynolds Wrap Contest Entry. This is a great Southwestern style dish that incorporates the rich smoky flavor of charred vegetables. The citrus juice in the marinade tenderizes the chicken and adds a bright flavor. Roasted jalapeno and sweet corn in the salsa adds excitement and depth to the dish.

- In food storage bag combine lemon juice, all but 1 teaspoon of the lime juice, 2 tablespoons cilantro, 3 tablespoons olive oil, 1 teaspoon salt, and pepper to make marinade. Add chicken, seal and shake the bag to coat chicken evenly. Place in refrigerator for at least one hour. Remove chicken ½ hour before cooking.
- Make salsa by turning broiler on high. Form two pieces of Reynold's Wrap foil into two shallow bowls. Place jalapeno and ear of corn in foil to prevent from rolling under broiler. Place both the jalapeno and corn on a baking sheet under the broiler on highest oven rack. Broil turning often until jalapeno is completely charred and corn is slightly charred on all sides. Do not turn off broiler.
- Place charred jalapeno in a small bowl and cover with Reynold's Wrap foil. Set aside for five minutes. Meanwhile slice kernels off cob and place in a bowl. Add black beans, tomatoes, onion, ½ tablespoon olive oil, remaining cilantro, lime juice, and salt. Remove jalapeno from bowl and peel off charred skin. Slice off both ends. Cut a slit down the jalapeno and remove the seeds. Finely chop jalapeno and stir into the corn mixture. Cover and set aside.
- Heat a remaining olive oil in a grill pan or skillet over medium heat. Remove chicken from marinade and cook 4 minutes per side or until cooked through. Remove chicken from pan and place on a baking sheet lined with Reynold's Wrap foil. Sprinkle with Monterey Jack cheese. Place under broiler for 1-2 minutes or until cheese is melted and bubbly. Place chicken on serving dish. Spoon roasted corn salsa over top of chicken and serve immediately.
