Sweet muffins rolled in butter and sugar yield a donut-like muffin with a surprise jelly center. Use your favorite jam/jelly to make several different kinds of fabulous muffins!

3 1/2 cups all-purpose flour
1/2 cup granulated sugar
5 teaspoons baking powder
1 teaspoon salt
2/3 cup unsalted butter, melted and cooled
1 1/2 cups milk
2 large eggs
1 1/2 teaspoons vanilla extract
your choice of jam or jelly
6 Tablespoons unsalted butter
granulated sugar (1-2 cups)

Steps:

  • Preheat the oven to 375ºF. Grease or line a muffin pan. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder and salt. In a separate bowl, whisk together the melted butter, milk, eggs and vanilla extract. Stir the butter mixture into the flour mixture, until completely combined, but still lumpy.
  • Scoop half of the batter into the prepared muffin tin. Spoon 1-2 teaspoons of jelly over the batter in the muffin tin, then top with the remaining batter. If necessary, smooth the batter so it covers the jam.
  • Place in the preheated oven and bake for 18-23 minutes, or until a toothpick inserted in the center comes out with just a few crumbs. Let cool for 10 minutes.
  • Meanwhile, melt the 6 tablespoons of butter in a small bowl. Place 1 cup of sugar in another small bowl. Carefully removing the muffins one at a time, dip the tops in the melter butter, then in the sugar to coat the top. Place on a wire rack. Repeat with remaining muffins, adding more sugar to the bowl if needed. Serve.

1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
2-1/2 cups Gold Medal® all-purpose flour
1 tablespoon baking powder
1 cup buttermilk
1 cup fruit jelly
Glaze:
2 cups powdered sugar
1/2 cup buttermilk
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F. Lightly spray a 12 cup muffin pan with cooking spray and set aside.
  • In the bowl of an electric mixer, beat the butter and sugar until smooth. Beat in the eggs, one at a time, and then the vanilla. Add the flour and baking powder and beat on low speed until just combined. With the mixer still on low speed, pour in the buttermilk and mix until well combined.
  • Scoop a few tablespoons of batter into the bottom of each prepared muffin cup. Make a well in the center of the batter with the back of a spoon and place a heaping tablespoon of jelly in the center. Cover the jelly a few more tablespoons of batter.
  • Bake for 25 minutes or until the muffins start to turn a light golden brown and a toothpick inserted in the top comes out clean. Let muffins cool in pan while preparing the glaze.
  • For the glaze, whisk together the powdered sugar, buttermilk and vanilla in a small bowl until smooth. Transfer the muffins to a wire rack that's been placed on a baking sheet to catch any dripping glaze. Brush each muffin with a generous amount of glaze going back and brushing on more until all of the glaze has been used. Let glaze set for about 5 minutes and then place a small dollop of jelly on the top of each muffin.
  • Notes: Store in an airtight container for up to 4 days.

  • Sift together flour, baking powder, and salt and add to the stand mixer on the lowest speed setting until just combined.
  • Using an ice cream scoop fill the cups 2/3 full and bake for 20-22 minutes until a toothpick comes out clean.
  • Cool completely.
  • Cut out a 1 1/2 inch wide circle about 1 inch deep.
  • Fill with raspberry jam (trim the piece you cut out and add the cap back to the cupcake).
  • To make glaze whisk together the powdered sugar, milk and vanilla extract until smooth.
  • Dip the cupcake carefully upside down into the glaze, letting the excess drip off (if you're nervous about the cap falling out hold it in place with a toothpick pressed gently against it - not poking into it - then remove toothpick when glaze is done dripping off.

3/4 cup butter, softened
2/3 cup packed brown sugar
1/4 cup sugar
2 large eggs
1-1/4 cups 2% milk
1 teaspoon vanilla extract
3 cups all-purpose flour
2-1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
COATING:
1 cup coarse sugar
1 tablespoon ground cinnamon
1/3 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually beat in milk and vanilla. In another bowl, whisk flour, baking powder, salt, nutmeg, cinnamon and baking soda. Add to creamed mixture; stir just until moistened., Fill greased or paper-lined muffin cups. 1 egg
1/3 cup oil
1/2 cup milk
1 1/2 cups flour, sifted
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 teaspoons baking powder
3 tablespoons sugar
3 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Beat egg.
  • Add in oil and milk and continue to beat until mixed. Set aside.
  • Sift flour, nutmeg, salt, baking powder and sugar into the egg mixture.
  • Mix and fill muffin cups.
  • Combine sugar and cinnamon.
  • Sprinkle generously on top of each muffin.
  • Add a dollop of butter atop each muffin.
  • Bake at 400°F for 20 minutes.
  • NOTE: I add a couple of sprinkles of cinnamon to the batter.
  • I also sprinkle a little of the cinnamon/sugar mixture on the bottom muffin cups before adding mix.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup warm 2% milk (110° to 115°)
1/3 cup butter, softened
1-1/3 cups sugar, divided
3 large egg yolks, room temperature
1 teaspoon salt
3 to 3-3/4 cups all-purpose flour
3 tablespoons jelly or jam
1 large egg white, lightly beaten
Oil for deep-fat frying

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine milk, butter, 1/3 cup sugar, egg yolks, salt, yeast mixture and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough (do not knead)., Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes., Punch dough down. Turn onto a lightly floured surface; knead about 10 times. Divide dough in half. , Roll each portion to 1/4-in. thickness; cut with a floured 2-1/2-in. round cutter. Place about 1/2 teaspoon jelly in the center of half of the circles; brush edges with egg white. Top with remaining circles; press edges to seal tightly. , Place on greased baking sheet. Cover and let rise until doubled, about 45 minutes., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry doughnuts, a few at a time, 1-2 minutes on each side or until golden brown. Drain on paper towels. Roll warm doughnuts in remaining sugar.

Steps:

  • Preheat oven to 350°F.

The only specialty tool you'll need is a pastry bag. But you can also poke a funnel into the side of the doughnut and spoon the jelly into the center of the pastry.

2 1/4 teaspoons (one package) active dry yeast
2 eggs
8 tablespoons (1 stick) butter, melted and cooled
1/4 cup granulated sugar
1 teaspoon salt
4 1/4 cups all-purpose flour, plus more for rolling out the dough
2 quarts neutral oil, for frying, plus more for the bowl.

Steps:

  • Heat the milk until it is warm but not hot, about 90 degrees. In a large bowl, combine it with the yeast. Stir lightly, and let sit until the mixture is foamy, about 5 minutes.
  • Using an electric mixer or a stand mixer fitted with a dough hook, beat the eggs, butter, sugar and salt into the yeast mixture. Add half of the flour (2 cups plus 2 tablespoons), and mix until combined, then mix in the rest of the flour until the dough pulls away from the sides of the bowl. Add more flour, about 2 tablespoons at a time, if the dough is too wet. If you're using an electric mixer, the dough will probably become too thick to beat; when it does, transfer it to a floured surface, and gently knead it until smooth. Grease a large bowl with a little oil. Transfer the dough to the bowl, and cover. Let rise at room temperature until it doubles in size, about 1 hour.
  • Turn the dough out onto a well-floured surface, and roll it to 1/2-inch thickness. Cut out the doughnuts with a doughnut cutter, concentric cookie cutters or a drinking glass and a shot glass (the larger one should be about 3 inches in diameter), flouring the cutters as you go. Reserve the doughnut holes. If you're making filled doughnuts, don't cut out the middle. Knead any scraps together, being careful not to overwork, and let rest for a few minutes before repeating the process.
  • Put the doughnuts on two floured baking sheets so that there is plenty of room between each one. Cover with a kitchen towel, and let rise in a warm place until they are slightly puffed up and delicate, about 45 minutes. If your kitchen isn't warm, heat the oven to 200 at the beginning of this step, then turn off the heat, put the baking sheets in the oven and leave the door ajar.
  • About 15 minutes before the doughnuts are done rising, put the oil in a heavy-bottomed pot or Dutch oven over medium heat, and heat it to 375. Meanwhile, line cooling racks, baking sheets or plates with paper towels.
  • Carefully add the doughnuts to the oil, a few at a time. If they're too delicate to pick up with your fingers (they may be this way only if you rose them in the oven), use a metal spatula to pick them up and slide them into the oil. It's O.K. if they deflate a bit; they'll puff back up as they fry. When the bottoms are deep golden, after 45 seconds to a minute, use a slotted spoon to flip; cook until they're deep golden all over. Doughnut holes cook faster. Transfer the doughnuts to the prepared plates or racks, and repeat with the rest of the dough, adjusting the heat as needed to keep the oil at 375. Glaze or fill as follows, and serve as soon as possible.
  • When the doughnuts are cool enough to handle but still warm, roll them around in a shallow bowl of granulated sugar to coat. Fill with your favorite jelly.

85 ml vegetable oil
1 large egg
1/2 teaspoon vanilla extract
200 g self-raising flour
100 g superfine sugar
12 teaspoons strawberry jam
100 g unsalted butter
150 g granulated sugar

Steps:

  • Preheat oven to 190°C/370°F.
  • Beat together milk, oil, egg and vanilla with a fork.
  • Stir the wet mixture into flour and superfine sugar to combine (just). Don't overmix! The lumps don't matter.
  • Spoon the mixture into each muffin cup in your tray so its just under a third full.
  • With a teaspoon, add a dollop of strawberry jam, then top with more muffin mix so the cases are just about full.
  • Bake for 20 minutes until the tops are springy.
  • Melt butter in a saucepan and lay out the granulated sugar in a wide, shallow bowl.
  • As soon as the muffins are ready remove from moulds and dip into butter then toll in sugar.
  • Eat warm.
