CINNAMON BREAD I
This is a lovely way to start off your morning when you want a little something different than your usual. Note: If you don't have buttermilk you may substitute milk with 1 tablespoon vinegar to measure 1 cup.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
- Measure flour, 1 cup sugar, baking powder, baking soda, 1 1/2 teaspoons cinnamon, salt, buttermilk, oil, eggs and vanilla into large mixing bowl. Beat 3 minutes. Pour into prepared loaf pan. Smooth top.
- Combine 2 tablespoons white sugar, 1 teaspoon cinnamon and butter, mixing until crumbly. Sprinkle topping over smoothed batter. Using knife, cut in a light swirling motion to give a marbled effect.
- Bake for about 50 minutes. Test with toothpick. When inserted it should come out clean. Remove bread from pan to rack to cool.

- Preheat oven to 350°. In a large bowl, combine flour, 1 cup sugar, baking soda and salt. Combine buttermilk, egg and oil; stir into dry ingredients just until moistened. In a small bowl, combine cinnamon and remaining sugar. , Grease the bottom only of a 9x5-in. loaf pan. Pour half the batter into pan; sprinkle with half the cinnamon-sugar. Carefully spread with remaining batter and sprinkle with remaining cinnamon-sugar; cut through batter with a knife to swirl., Bake 45-50 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack to cool completely. Combine confectioners' sugar and enough milk to reach desired consistency; drizzle over loaf.

RAISIN CINNAMON BREAD

- In a large bowl, dissolve yeast in warm water. Add milk, 1/3 cup sugar, oil, salt and 2 cups flour. Beat until smooth. Add raisins and enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/4 hours. , Punch dough down. On a lightly floured surface, divide in half. Roll each into a 15x7-in. rectangle. Combine cinnamon and remaining sugar; sprinkle over dough. Sprinkle with water. Starting with a short side, roll up tightly, jelly-roll style. Pinch seams and ends to seal. Steps:
- Combine dry ingredients in large bowl.
- Add nuts.
- In another bowl, combine eggs and oil
- Mash bananas and add to eggs mixture.
- Add vanilla, mix well.
- Add wet ingredients to dry ingredients, stir until moistened.
- Pour batter into 2 greased and floured loaf pans.
- Bake at 350 degrees for 1 hour and 5 minutes, or until done.
- Cool 10 minutes before removing from pans.
- Remove to wire racks, cool completely.

Steps:
- Soften yeast in water. Combine scalded milk, mashed potatoes, salt and 1/3 cup sugar; cool until lukewarm. Add yeast, mix well. Add 2 cups flour and beat until smooth. Add melted butter, egg and remaining flour and mix well. Knead on floured board until smooth and elastic. Place in greased bowl, cover and let rise 1 hour until doubled.
- Punch down,let rest 5 minutes. Roll into 4 rectangles, spread with soft butter and filling. Roll up and seal edges. Twist 2 together and put on greased cookie sheet. Let rise again (covered) until doubled in size.
- Bake in a 375 degree oven for 30 minutes.

- 1. Preheat oven to 350°. Grease and flour, or parchment line 2 9 x 5 loaf pans
- 2. In a large bowl combine all of the dry ingredients for the bread. Whisk together well.
- 3. In another bowl. Mix eggs pumpkin, oil, and vanilla together. Mix pumpkin mixture into flour mixture. Combine well. Add the chopped apple and mix to combine. Do not beat mixture. Use a spoon.
- 4. Make the filling. Mix all ingredients together in a bowl. It should resemble a crumbly paste. If not. Add a bit more flour.
- 5. Layering filling and batter: Place half the batter in another bowl. Place 1/3 of the pumpkin batter of each bowl in the two loaf pans. Divide filling in half. Then sprinkle 1/4 of the filling over the batter in each pan. Avoid the outside edges of the batter. Top with 3rd of batter again. Then filling. Finish topping with remaining 1/3 of batter.
- 6. Place in 350° oven and bake one hour or until toothpick inserted comes out clean. Cool and enjoy!

Cover; let rise in a warm place until doubled, about 1 hour., Mix cinnamon and remaining sugar. Punch down dough. Turn onto a lightly floured surface; divide in half. Roll each portion into an 18x8-in. rectangle; sprinkle each with about 1/4 cup cinnamon sugar to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in 2 greased 9x5-in. loaf pans, seam side down., Cover with kitchen towels; let rise in a warm place until doubled, about 1-1/2 hours. Preheat oven to 350°., Bake until golden brown, 30-35 minutes. Remove from pans to wire racks to cool.
