CINNAMON APPLE DUMPLINGS
WHEN Mom made pies to feed the crew during wheat harvest, she always had plenty of dough left over, so she treated us kids to apple dumplings. I've carried on this tradition in my own family. Now my husband and I enjoy this special dessert even when I'm not baking pies.

- Preheat oven to 400°. In a bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. With a fork, stir in water until dough forms a ball. Roll out on a floured surface to a 14x7-in. rectangle; cut crust in half. , Peel and core apples; place an apple on each square of crust. Combine sugar and cinnamon; spoon into apples. Moisten edges of crust with water and gather around apples; pinch seams to seal., Place dumplings in an ungreased 9x5-in. loaf pan or a shallow 1-1/2-qt. baking dish. Brush with cream. , In a small saucepan, combine the sugar, Red Hots, cornstarch, water and butter. Bring to a boil over medium-low heat, stirring frequently; boil for 2 minutes. Pour between dumplings. , Bake until crust is golden brown and apples are tender, 35-45 minutes. Serve warm, with cream if desired.

- sift flour, baking powder, salt, cinnamon in medium bowl.set aside.
- stir together sugar, and 3/4 cup water in large pan.over medium heat.
- cook without stirring still sugar begins to melt and turns to amber color -- about 14 minutes.
- continue to cook, stirring occasionally.about 2 minutes more or medium amber.
- work butter into flour till crumbly.
- whisk butter into flour till crumbly.
- forming a well in the center of the flour mixture -- pour in egg.
- stir gently with fork till combined.
- remove sugar mixture from heat, slowly whisk in cider.
- return to heat.bring to simmer.
- using hands, divide dough into 12 pieces.roll into balls --
- drop balls into cider.cook, turning over once or twice until tripled in size and golden brown.
- remove with slotted spoon to a platter and cover.
- repeat with remaining dough.
- drizzle with remaining syrup.
- top with cool whip -- .
APPLE DUMPLINGS WITH CINNAMON SYRUP
Got this in a recipe swap a few years ago from a woman who owned a small diner. She says customers really enjoyed these, maybe you will too. Eat warm from the oven or re-heat in microwave, scrumptious with vanilla ice cream. Ovens vary so bake time is a guess.

- Mix flour and salt. Cut in shortening until mixture is crumbly. Add enough water to make dough. Divide dough into 6 equal parts. Keep covered while making filling.
- Peel and slice apples. Sprinkle with cinnamon and sugar. Set aside.
- Put syrup ingredients in medium saucepan. Boil for 3 minutes.
- Roll each pastry piece into a circle. Place apples in center of each circle. Wet edges of pastry and bring up edges around the apples. Pinch to seal.
- Place dumplings in a 9x12 baking dish. Pour syrup over the top of dumplings.
- Bake at 425° about 5 minutes or until crust just starts to brown. Reduce temperature to 350° and bake 30 minutes or until crust is golden brown.

- In a large bowl, combine the flour, baking powder and salt; cut in shortening until crumbly. Gradually add milk, tossing with a fork until dough forms a ball. Divide into 24 portions. Cover and refrigerate for at least 1 hour or until easy to handle., On a well-floured surface, roll each portion of dough into a 7-in. square. Place an apple on each square. CIDER BASTED APPLE DUMPLINGS
Your kitchen is going to smell amazing when this is cooking. And it tastes divine too! The cider simple syrup added great flavor. The pastry and apples were cooked perfectly. A great comfort dessert!

- 1. Preheat oven to 350 degrees F. Generously coat an 8"X8" baking dish with cooking spray. Set aside. (If apples are large and do not fit, use a bigger baking dish.)
- 2. Simple Cider Syrup: Combine the sugar, cinnamon, water and apple cider in a small saucepan. Mix well and bring to a boil. Let boil, stirring often, for 5-6 minutes. Remove from heat and set aside to cool.
- 3. Pastry: In a large bowl, stir together the flour and salt. Using a pastry blender, cut in shortening until crumbs are formed and pieces are the size of small peas. Sprinkle 1 tablespoon of water at a time over flour mixture. Gently toss with fork and push moistened dough to side of bowl. Repeat until dough holds together. Divide into 4 equal portions, forming each into a ball and flatten out to make 4 discs. Cover and set aside.
- 4. Apple prep: Peel apples, cut in half and remove seeds. Place 1 teaspoon of butter into each of 4 apple half acvities. Divide cinnamon-sugar evenly between apples, placing other half of apple on top of "filled" half. Press lightly together (butter should act as a "glue" to hold halves together). Set aside.
- 5. To prepare pastry: On a lightly floured surface, roll each douch disc into a circle about 1/8" thick. Place a filled apple in center of each dough circle. Moisten edges of pastry with water and bring dough up around apples, being careful not to tear pastry. Press edges together on top of apple to seal.
- 6. Place wrapped apples in prepared baking dish. Gently pour cider syrup evenly over apples and sprinkle with sanding sugar. Bake for 55-60 minutes or until pastry is golden.
- 7. Serve warm
APPLE DUMPLINGS WITH RICH CINNAMON SAUCE
This dessert stands on its own, but a scoop of vanilla ice cream certainly wouldn't hurt.

- Adjust oven rack to lower-middle position and heat oven to 425 degrees.
- Mix 3 Tbs. of butter, 1/2 cup of brown sugar, 1 tsp. cinnamon and all the nuts in a small bowl. Spoon a portion of the mixture into each hollowed-out apple core.
- For boxed pie crusts, unroll one of the dough sheets onto a floured work surface. Pulling on sides of dough to straighten rounded edges, roll it into an approximate 12-inch square, then cut the dough into four 6-inch squares; brush the perimeter of each square with egg white. Set an apple half on each square. Bring up the 4 corners of dough around the apple and pinch edges to seal. Place on a large (at least 18- by 12-inch) parchment-covered baking dish. Brush dumpling tops and sides with egg white; sprinkle with sugar. Repeat process with remaining apples and dough.
- Bake dumplings until pastry sets and starts to turn golden brown, about 10 minutes. Reduce heat to 375 and bake until golden brown, about 20 minutes longer.
- While apples bake, bring 1 cup water, the remaining 2 Tbs. butter, 1/2 cup brown sugar and 1 tsp. cinnamon to boil in asmall saucepan over medium heat. Dissolve cornstarch in 2 tsps. water; whisk into hot syrup for a smooth sauce. Cover, keep warm.
- For each serving, spoon a portion of sauce on a dessert plate. Set apple dumpling over warm sauce; serve immediately.
