Cinnamon Bread Puddings With Caramel Syrup image

This recipe is easy because it starts with cinnamon-swirl bread, reducing the need to add other flavorings. They are delicious, easy to make, and fun because they're baked in muffin cups to create individual servings. I wrap leftovers individually in foil, pop in a freezer bag and freeze for bread pudding anytime I want! Two "puddings" take exactly 70 seconds to reheat from frozen, at least in my microwave. I hope you enjoy these as much as we do!

1 1/3 cups 2% low-fat milk
1/2 cup sugar
3 large eggs, lightly beaten
1 lb loaf cinnamon-swirl bread, cut into one-inch cubes (I use Pepperidge Farm)
2/3 cup caramel ice cream topping (more or less to taste)

Steps:

  • Combine first 3 ingredients in a large bowl, stirring well with a whisk. Add bread, tossing gently to coat. Cover and chill 30 minutes or up to 4 hours.
  • Preheat oven to 350 degrees.
  • Divide bread mixture evenly among 11-12 muffin cups coated with cooking spray. Bake for 30 minutes or until a knife inserted into the center comes out clean.
  • Serve warm with syrup.
  • NOTE: My knife has never come out completely clean, and the puddings tasted good to me! We also serve with vanilla ice cream or fresh whipped cream.

1 cup fat-free milk
1/2 cup packed brown sugar
1/2 cup egg substitute
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
5 cups cubed day-old bread
1/2 cup chopped peeled apple
1/2 cup fat-free whipped topping
1/2 cup fat-free caramel ice cream topping

Steps:

  • In a large bowl, combine the applesauce, milk, brown sugar, egg substitute, vanilla and cinnamon. Fold in bread cubes and apple; let stand for 15 minutes or until bread is softened. , Pour into an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 325° for 35-40 minutes or until a knife inserted in the center comes out clean. Serve warm with whipped topping and caramel topping. Refrigerate leftovers.

2 eggs
1 egg white
⅓ cup white sugar
1 ½ cups 2% low-fat milk
½ cup maple syrup
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
6 tablespoons fat-free caramel sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut bread into 3/4 inch cubes. Arrange cubes in a 9x13-inch baking dish. Whisk together the eggs, egg white and sugar in a bowl. Stir in the milk, syrup, cinnamon, nutmeg, and salt. Pour mixture over bread.
  • Bake in preheated oven until lightly browned on top and middle is set, about 40 minutes.

Trust me, it will boil over in your stove in a 1 1/2-quart one. Oops! And don't worry, it will fall a little bit as it cools.

1 cup water, hot
1 cup brown sugar

1 teaspoon ground cinnamon
2 cups milk
2 eggs
2 tablespoons butter, softened, or more as needed
8 slices brioche bread
2 apples - peeled, cored, and shredded

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a glass, deep-dish pie dish.
  • Stir together sugar and cinnamon in a small bowl. Whisk milk and eggs together in a separate bowl.
  • Butter one side of each slice of bread, and cut into cubes. Spread 1/2 of the bread cubes into the prepared pie dish, sprinkle with 1/2 of the cinnamon-sugar mixture, and 1/2 of the shredded apples.
