- Place cream cheese on a serving plate. In a small bowl, combine the preserves, horseradish, mustard and pepper; pour over cream cheese. Serve with crackers.

COUNTRY PEACH PRESERVES
Steps:
- Fill 2/3 of a large soup pot with water. Bring to a boil. Add peaches for 30 -45 seconds, then remove with slotted spoon and drain the pot. Remove peaches immediately to a large bowl of cold water.
- Peel the skin, cut the peaches into quarters and remove pits.
- Place all peeled peaches in a large soup pot and squeeze in juice of 1 lemon. Drizzle well with 2 cups sugar, toss and drizzle again with the remaining 1.5-2 cups so the sugar reaches all the peaches. If peaches are very sweet, you may only need 3 1/2 cups of sugar total. Add more sugar to taste while its cooking.
- Let peaches sit at room temp with the sugar for about 30 min -1 hour, or until sugar is dissolved.
- Place the pot over the stove uncovered and bring to a light boil, stirring to prevent scorching. Once the whole pot is at a light boil, simmer for 10 minutes and turn off the heat. Let the pot stand uncovered until it is just warm to the touch or reaches room temp.
- As soon as it cools, repeat step 3. You will bring it to a light boil a total of 5 times. Preserves have plenty of sugar so they won't spoil at room temp if you leave it on the counter overnight. If you want the preserves to have an even thicker consistency, you can boil it 6 times if you wish. (Note: the fifth time you boil, bring it to a boil over a little lower heat and stir a few extra times to prevent scorching. Also, it thickens more as it cools.)
- The last time you bring it to a boil you will want to transfer it to sterilized jars while it's boiling hot.
- Transfer your boiling hot preserves to the jars using a glass measuring cup and a funnel (least messy method) leaving about 1/2″ space.
- Screw the lids on enough to keep a tight seal in place but don't over-tighten them since air bubbles need to be able to escape.
- Place packed cans into the canning pot and cover with 1-2 inches of water. Bring to a boil and process 15 minutes. Remove from the pot with jar lifter and leave at room temperature undisturbed for 12-24 hours. You may hear a pop when the jars fully seal. After 24 hours, check that the seal has formed by pushing down on the center of the lid - it should not move at all. If the seal does not form, refrigerate preserves and enjoy within 3 months.

- 1. Drop peaches in boiling water for 1 min then dip in ice water.
- 2. Peel and chop peaches.
- 3. In a saucepan combine peaches, sugar, and lemon juice to a boil.
- 4. When peaches come to a boil reduce the heat and mash the peaches.
- 5. Simmer, uncovered for 5 minutes.
- 6. While peaches simmer, sprinkle gelatin over the 1/2 c. cold water in a small bowl; let it stand for 2 minutes.
- 7. Remove peaches from heat; stir in gelatin and mix until dissolved.
- 8. Cool for 10 minutes and pour into hot jars. Put lid and seal on. Can refrigerate up to 3 wks.

- Drop peaches in boiling water for 1 minutes or until peel has softened. Immediately dip fruit in ice water. Peel and chop peaches.
- In a lg saucepan, combine peaches, sugar and lemon juice. Bring to a boil. Mash peaches. Reduce heat; simmer, uncovered for 5 minutes.
- Meanwhile, in a small bowl, sprinkle gelatin over cold water, let stand for 2 minutes. Remove peach mixture from heat; stir in gelatin mixture until dissolved.
- Cool for 10 minutes, then pour into jars. Refrigerate for up to 3 weeks.

HOT PEPPER PEACH SPREAD
I love the combo of juicy summer peaches with zippy hot peppers. This spread is great on an English muffin with cream cheese as a sweet treat, but works equally well as a topping for grilled salmon. The jelly is quite colorful and also makes a nice holiday gift when the days of summer are long gone. Note: Adjust the amount and type of peppers to your own personal taste and desire for "heat."

- In a large stockpot or Dutch oven over medium-high heat, combine mashed peaches and tomatoes, fresh hot peppers, lime juice, onion, red bell pepper, red pepper flakes, and cayenne.
- Stir in the powdered pectin (a 1-3/4 oz. packet). Bring to a boil.
- Stir in the sugar and butter and return to a full rolling boil that can't be stirred down.
- Remove pot from heat and skim off foam with a metal spoon.
- Put a dried red chili in each of your sterilized, hot, half-pint canning jars. Ladle the spread immediately into jars, allowing 1/4 inch head-space at top.
- Be sure to wipe the jars and adjust the lids before you process them in a boiling-water canner for 10 minutes.
- Remove jars and cool on wire racks.

JALAPENO PEACH SPREAD
This recipe comes from a delightful book "Christmas Gifts of Good Taste." Originally posted to fill a request, I made this last year for the holidays and it was a big hit. This makes just a little over 4 cups of spread (kind of like a jelly sauce). Try this poured over cream cheese for a fast appetizer. Once opened, use up quickly - in about 1-2 weeks.

Steps:
- Place peaches and jalapenos in a food processor and pulse until finely chopped.
- Pour this mixture into a Dutch oven or large saucepan.
- Add sugar and allspice and combine well.
- Stirring constantly, bring to a boil over medium-high heat, then lower the heat to medium-low.
- Cook 20 minutes over medium-low, stirring often, or until thickened.
- It will be like a thick sauce.
- Ladle into clean,sterilized,heat-resistent jars.
- Cover with clean, sterilized lids and let cool to room temperature.
- Place in refrigerator and keep chilled.
- This is not shelf stable jam (it must be refrigerated even when sealed) as it has not been heat canned.
- Use up the spread within one month or two weeks after opening.
- Serve with cream cheese on crackers.
