Number Of Ingredients 26

3/4 cup all purpose flour
1/8 teaspoon baking soda
1/8 teaspoon salt
4 tablespoons (1/2 stick) unsalted butter, (melted)
1/4 cup packed brown sugar
2 tablespoons granulated white sugar
2 tablespoons milk
1 teaspoon vanilla extract
1/2 cup miniature chocolate chips
1 cup all purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated white sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup hot water
1/2 cup vegetable or canola oil
1 large egg
1½ teaspoons vanilla extract
3/4 cup (1½ sticks) salted butter
1¾ cups powdered sugar
1/3 cup packed brown sugar
1/2 cup all purpose flour
1½ tablespoons milk
1 teaspoon vanilla extract
additional miniature chocolate chips
12 mini Chips Ahoy (or another brand) cookies

Steps:

  • (see *NOTES below): In a small bowl, whisk together the flour, baking soda and salt. In a medium bowl, use an electric mixer to stir together the butter, sugars, milk and vanilla. Stir in the dry ingredients and the chocolate chips. Refrigerate for 15 to 30 minutes, or until the cookie dough is firm. Scoop out dough in 2 tablespoon scoops and place it on a cookie sheet. Freeze until firm, at least 30 minutes.
  • Preheat the oven to 375 degrees F. Line a cupcake pan with 12 liners. Place the flour, cocoa, sugar, baking soda and salt in a blender. Blend to combine. Add the water, oil, egg and vanilla. Blend to combine, scraping down the sides as needed a couple of times until all is well mixed. Divide the batter between the 12 cupcake liners. Drop a ball of frozen chocolate chip cookie dough into the center of each cupcake. If you would like the cookie dough to bake up slightly, keep the top visible as pictured in the post. If you'd like to keep the cookie dough somewhat raw, push it to the bottom of the cupcake wrapper, making sure that the batter comes up and over the dough.Bake the cupcakes for 20 to 25 minutes, or until a toothpick inserted into the cupcake portion of the cupcake (not tested through the center where the dough is), comes out fairly clean. Cool the cupcakes completely before adding the frosting.
  • In a medium bowl, use an electric mixer to combine the butter and sugars until smooth and creamy. Mix in the flour, milk and vanilla and continue to mix until all is well combined.
  • Frost cupcakes with a knife or scoop the frosting into a piping bag and pipe it on decoratively. Sprinkle mini chips on top and garnish with a small chocolate chip cookie.

Time 2h15m

Yield 48 mini cupcakes

Number Of Ingredients 23

1 cup all-purpose flour
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1 stick (4 ounces) unsalted butter, at room temperature
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 cup mini chocolate chips
1 cup all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 cup packed light brown sugar
6 tablespoons unsalted butter, melted
1 1/2 teaspoons pure vanilla extract
1/3 cup milk, at room temperature
2 tablespoons cocoa powder
1 tablespoon unsalted butter, melted
1/4 teaspoons pure vanilla extract
Pinch fine salt
3/4 cup confectioners' sugar
2 tablespoons milk

Steps:

  • Preheat the oven to 350 degrees F and position the oven rack to the middle. Line two 24-cup mini-muffin tins with cupcake liners.
  • For the cookie crust: Combine the flour, salt and baking soda in a small bowl and set aside. Beat the butter and both sugars together in the bowl of a stand mixer fitted with a paddle attachment on medium-high speed until creamy, about 4 minutes (or in a large bowl if using an electric mixer). Add the egg and vanilla and beat until incorporated, about 1 minute. Adjust the speed to low, add the flour mixture and beat until incorporated. Fold in the chocolate chips.
  • Drop 1 heaping teaspoon of cookie dough into each liner and press down firmly. Bake until slightly puffed and golden, 12 to 15 minutes. Cool until warm to the touch, and then press down the crust once more. Cool completely.
  • For the brown sugar cake: Whisk the flour, baking powder and salt together in a medium bowl. In the bowl of a stand mixer fitted with the paddle attachment, beat the eggs and light brown sugar together on medium-high speed until light and foamy, about 2 minutes (or in a large bowl if using a hand-held electric mixer). While beating, gradually pour in the butter and then the vanilla.
  • While mixing slowly, add half the dry ingredients, then add all the milk, and follow with the rest of the dry ingredients. Take care not to overmix the batter. Drop 1 heaping teaspoon of batter on top of each cookie crust.
  • Bake until a tester inserted in the center of the cakes comes out clean, rotating the tins about halfway through, 10 to 12 minutes.
  • Cool the cupcakes on a rack in the tins for 10 minutes, and then remove from the tins and cool on the rack completely.
  • For the chocolate frosting: Combine the cocoa powder and butter in the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl if using a hand-held electric mixer). Mix on low until combined. Add the vanilla and salt. Continue to mix on low speed and add the confectioners' sugar and milk in alternating batches. Increase the speed to medium-high and mix until fully incorporated and smooth.
  • Fill a pastry bag fitted with a round or star tip and pipe small chocolate drops on top of each cupcake.

  • Step 1. Whip Up The Batter You want to gather all of your ingredients. In a bowl, add and whisk baking soda, flour, and sea salt; set this mixture aside. Grab your butter, white sugar, and brown sugar and beat all of these ingredients into a large bowl with an electric mixer. Make sure you mix it until smooth. Add in an egg and vanilla extract until smooth before mixing it all together. Now you will want to mix in the flour mixture until it’s completely mixed together. No clumps! Make sure it’s as smooth as it can be. Next up, fold in the chocolate chips to the mixture until you have evenly combined them into the batter. Just throw them in and mix. From the dough batter you will want to form tablespoon-sized balls; place them onto a baking sheet, leaving space in between them, and freeze until solid which is generally about 2 hours.
  • Before you take your dough from the freezer, you want to make sure you preheat your oven to 350 degrees. Grab your muffin pan and line 24 muffin cups with paper liners.
  • Step 3: Mix It UpNow comes the fun and the part that really makes these cupcakes special. In a large bowl, you will add and beat in 3 eggs with an electric mixer to break up your eggs. Add the cake mix, canola oil and water into the mixture; keep beating for 2 minutes on medium speed or until smooth. Spoon into the cupcake liners you prepared, filling each ⅔ fil. Don’t forget to place a frozen cookie dough ball on the top center of each cupcake. It is the hidden secret to the best cupcake ever!
