An excellent chunky pasta sauce with beef, pork, lots of vegetables and tons of flavor. Freeze any unused portions for later use. If you have fresh herbs, you may substitute 2 teaspoons chopped fresh basil for the dried basil in this recipe.

2 tablespoons olive oil
4 slices bacon, cut into 1/2 inch pieces
1 large onion, minced
1 clove garlic, minced
1 pound lean ground beef
½ pound ground pork
½ pound fresh mushrooms, sliced
2 carrots, shredded
1 stalk celery, chopped
1 (28 ounce) can Italian plum tomatoes
6 ounces tomato sauce
½ cup dry white wine
½ cup chicken stock
½ teaspoon dried basil
½ teaspoon dried oregano
salt and pepper to taste
1 pound pasta

Steps:

  • In a large skillet, warm oil over medium heat and saute bacon, onion and garlic until bacon is browned and crisp; set aside.
  • In large saucepan, brown beef and pork. Drain off excess fat. Stir in bacon mixture, mushrooms, carrots, celery, tomatoes, tomato sauce, wine, stock, basil, oregano, salt and pepper to saucepan. Cover, reduce heat and simmer one hour, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Serve sauce over hot pasta.

1 tablespoon oil
2 onions, chopped
2 garlic cloves, crushed
1 (14 1/2 ounce) can crushed tomatoes
1 cup tomato puree, canned
1 teaspoon dried oregano leaves
1 teaspoon chili powder
1 teaspoon salt
1 (15 1/4 ounce) can red kidney beans, drained
1/4 lb mushroom, sliced
3/4 lb spaghetti noodles, cooked

Steps:

  • Heat oil in pan, add onions and garlic, cook, stirring until onions are soft.
  • Add ground beef, cook, stirring until well browned.
  • Add crushed tomatoes, tomato puree, oregano and chili powder, bring to a boil, reduce heat simmer uncovered 20 minutes or until sauce is thick.
  • Add beans and mushrooms, heat thoroughly: serve over hot spaghetti.

2 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
1 large carrot, finely chopped
1 onion, finely chopped
1 large celery stalk, finely chopped
2 dried chili peppers, crushed
Sprig fresh rosemary
1/2 pound ground beef
1/2 pound ground pork
1 cup white wine
3 cups tomato sauce or La Salsa di 5 Minuti, recipe follows
3 basil leaves, torn
Salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
1 clove garlic, finely chopped
Dried chili peppers, crushed
1 (28-ounce) can peeled plum tomatoes, pureed
Salt
3 fresh basil leaves, torn

Steps:

  • In a hot saucepan, melt the unsalted butter in the olive oil, and add the carrots, onion, celery, and chili peppers. Cook the ingredients over medium heat, until they are soft. Add a sprig of rosemary.
  • Add the ground beef and pork, and cook until golden brown. Remove the rosemary sprig, and add the white wine. Let the wine reduce.
  • Add the 'tomato sauce or La Salsa di 5 Minuti, and let simmer on low heat for 1 hour.
  • Before serving, add basil leaves and salt to season. Serve immediately.
  • Heat the olive oil in a saucepan and add the onion, garlic, and chili peppers. Gently fry ingredients together, about 5 minutes.
  • Add pureed plum tomatoes to saucepan. Simmer on low to medium heat for 10 minutes.
  • Season with salt, to taste. Add basil leaves at the very end.

I wanted a good meat sauce, but was having trouble finding that one recipe that knocked my socks off, so I altered a few and came up with my own. Of course, it goes well with all types of pasta and in the traditional Spaghetti ala Bolognese. But I also use this as my sauce in lasagna, baked ziti, pizza - you name it. It gives everything that extra oomph!

2 tablespoons olive oil
1 onion, finely chopped

  • Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion, carrot, celery, and garlic until the vegetables are soft and beginning to brown, about 8 minutes. Place the ground beef into the pan, and cook and stir, breaking the meat apart as it cooks, until well browned, about 10 more minutes. Pour in the red wine, bring to a boil, and cook until the liquid is almost absorbed, 10 to 15 minutes. Pour in the milk and nutmeg, and cook, stirring occasionally, until the milk is almost absorbed, 10 more minutes.
  • Stir in the crushed tomatoes, sugar, and oregano, bring to a simmer, and reduce heat to low. Simmer uncovered 1 hour, stirring occasionally. Season to taste with salt and pepper.

this is a bolognese sauce with a difference. easy to make and beautiful flavour off the tomato/sweet chilli sauce. i got the recipe in an old magazine i found but altered it a little to suit myself. i usually use it in lasagne ut its equally as nice with spaghetti or pasta shapes

500 g of mince meat (beef,chicken or pork)
1 (450 g) can of peeled tomatoes
1 garlic clove, crushed
1 red pepper, sliced into small pieces
6 -8 mushrooms, chopped
1 large onion, chopped
1 teaspoon parsley
1 teaspoon thyme
150 ml sweet chili sauce
1 tablespoon tomato puree

Steps:

  • Fry the meat in a large pan until brown, draining away excess fat.
  • Add the red pepper,mushrooms and onion and fry until meat is fully cooked.
  • Put the tomatoes, puree, garlic, sweet chili sauce, parsley and thyme into a blender and mix well.
  • Add sauce to the pan with the meat and mix well.
  • Serve in a lasagne or with spaghetti or pasta shapes.
