CHILI LIME SCALLOPS
A nice spicy little asian style dish, that is easy and quick to prepare. I invented it for a dinner aboard a charter boat, but its a great dinner party dish too.

Steps:
- sauté the chilli, garlic, cumin and coriander in a hot skillet add the lemongrass and the spring onion until they have softened, but not browned.
- Add the scallops and sauté for one minute or until they turn from translucent to opaque.
- Place one cup of cooked basmati rice in the centre of a plate and arrange the scallops around it, deglaze the pan with the lime juice and drizzle over the scallops.
- Garnish with fresh coriander and serve.

Steps:
- Heat half of the oil in a wok and stir-fry the scallops in batches, until they just change in colour. Remove from wok.
- Heat remaining oil in wok, stir-fry garlic, ginger, chilies and onion until onion is soft.
- Stir in combined sauces, sugar and stock and bring to a boil. Return scallops to wok, stir until heated through.
- Serve scallops sprinkled with coriander.

- Remove the muscle from each scallop (if it hasn't already been removed). You'll recognize the muscle as a thicker portion of the flesh, running up the side of the scallop. It is slightly opaque compared to the rest of the scallop and the texture is firm. (This muscle is unpleasant to eat, and it should always be removed before cooking.) Simply grab the tab of the muscle firmly, and then gently pull it off the scallop.
