BANOFFEE PIE
Banoffee Pie is a classic English dessert that is the perfect year-round treat to share with family and friends! It's made of 4 incredible layers: a buttery graham cracker crust, a toffee caramel, fresh bananas, and whipped cream to top it off. This make-ahead dessert is just what you need for all holidays. From the 4th of July to Christmas, it is perfect any time!

- Preheat oven to 350 degrees F.
- Crush the graham crackers into fine crumbs using a food processor or rolling pin and ziploc bag. Add the melted butter and granulated sugar, mixing until the crumbs are evenly moistened.
- Press the crust mixture into a 9-inch pie plate or springform pan using a flat-bottomed glass or measuring cup to help compact the crumbs on the bottom and up the sides. Bake for 10 minutes to set the crust, then remove from the oven and cool completely.
- While the crust bakes, prepare the caramel toffee filling by melting the butter and brown sugar in a medium saucepan over medium heat. Add the sweetened condensed milk, then bring the mixture to a boil for 3-4 minutes, stirring vigorously, until it thickens and darkens in color a bit to a lovely toffee shade that is close to the color of peanut buttr. Pour the warm toffee filling into the prepared crust, then let it cool completely and chill for 1-2 hours until firm.
- Beat the heavy cream, sugar, and vanilla on medium-high speed in a stand mixer fitted with the whisk attachment until medium peaks start to form, usually around 3-4 minutes. The whipped cream should be light, fluffy, and a good consistency for piping. Be careful not to overbeat to stiff peaks.
- Spread the caramel toffee filling on the crust, then arrange the sliced bananas in 1-2 layers on top. Cover completely with the whipped cream and sprinkle with chocolate shavings before serving.

- Heat oven to 200C/180C fan/gas 6. Roll out the pastry thinly on a lightly floured surface and use to line a 23cm round x 2.5cm deep loose-bottomed fluted tart tin. Lightly prick the pastry base with a fork, then line the pastry with foil and add baking beans. Sit the tin on a baking sheet and blind-bake for 15 mins to set the pastry, then remove the foil and beans. Bake for a further 5-6 mins until the pastry is cooked and pale golden all over. Leave to cool, then remove the tart tin and base, and sit the pastry case on a flat serving plate.
- For the toffee, put the sugar and butter in a medium heavy-based saucepan. Stir with a wooden spoon over a low-moderate heat for 2-3 mins until the butter has melted and the sugar is starting to dissolve. (The butter will have blended in and the mixture will be thick and fudgy.) Pour in the condensed milk and turn up the heat so that the mixture can start to bubble and come to a boil. Stir constantly as it bubbles away for 6-7 mins, until it thickens and turns a light caramel colour. It is important to stir constantly, gathering the mixture up from the bottom of the pan, or it may burn. Remove from the heat, stir until the bubbles subside, then beat in the crème fraîche. Pour into the pastry case and spread evenly. Chill until the toffee is cold and set, about 1 hr.
- For the topping, pour the whipping cream into a mixing bowl and sprinkle over the coffee and sugar. Leave for a few mins for the coffee granules to dissolve while you mix the yogurt and crème fraîche together in a small bowl. Whisk the cream quite stiffly without over-beating it, then fold in the yogurt and crème fraîche.
- Cut two-thirds of the banana into long, thin diagonal slices. Scatter them over the toffee layer. Thinly slice the rest of the banana diagonally and toss the slices in the lemon juice. Spoon the creamy topping over the toffee in big spoonfuls, spreading lightly and creating a few billowy swirls with the spoon. Stick the lemony banana slices into the creamy topping. Chill for 30 mins-1 hr, then serve sprinkled with a light dusting of sifted cocoa powder. Best eaten the same day.

Steps:
- Place a whisk and mixing bowl in the freezer to cool, 10 to 20 minutes.
- Place bananas in the bottom of the pie crust and drizzle 5 ounces caramel syrup over top. Reserve remaining caramel syrup for garnish.
- Remove whisk and mixing bowl from the freezer. Place whipping cream, confectioners' sugar, and vanilla in the chilled bowl. Mix rapidly with the whisk until peaks form leaving a stiff whipped cream; do not overmix.
- Spread whipped topping over the bananas and pie crust. Drizzle remaining caramel over top in a circular or zigzag motion for effect. Place in the refrigerator or freezer until whipped topping has firmed up, 15 to 30 minutes before serving.

- Preheat the oven to 425 degrees F (220 degrees C).
- Pour condensed milk into a pie pan and cover tightly with foil for the caramel. Place in a larger pan. Add hot water to the pan but keep it below the top of the pie pan; you don't want to get any water into the milk.
- Bake in the preheated oven until the caramel is thick and brown, about 1 hour.
- Remove from the oven and transfer caramel to a bowl. Beat with an electric mixer until smooth. Pour into the graham cracker crust, cover, and cool in the refrigerator for about 1 hour.
- Beat cream in a chilled glass or metal bowl with an electric mixer until frothy. Add sugar gradually, continuing to beat until stiff peaks form. Mix in vanilla.
- Remove pie crust and caramel from the refrigerator. Cover caramel completely with banana slices. Spread whipped cream over top and sprinkle lightly with cocoa powder. Cover and chill until ready to serve.
